ARCHIVED Pie Crust Recipes Please!
ryebaby0 replied to Twister2's topic in Gluten-Free Recipes & Cooking Tips
We use Roben Ryberg's recipe from The Gluten-Free Kitchen cookbook, but I've also used the Miss Roben's pie crust mix. You might look for a piecrust recipe at the Miss Roben's company website (it's all the same person)Both work well for me, and if I don't roll it tooo thin it's manageable. We make ham-cheese pockets and apple turnovers. I know lots of people... -
ARCHIVED Today Is My Anniversary!
ryebaby0 replied to angel-jd1's topic in Coping with Celiac Disease
Hey! My son's "anniversary" is also Dec. 31 (but of '03). In another month he will have his tTg repeated to see if it is within normal range (last May it was still positive) but after a year gluten-free he has normal zinc, iron, and folate levels, normal B12 and calcium density; his sed rate is back in normal range, grown 3.2 inches and he has gained (from... -
ARCHIVED How To Clean And Get Rid Of Gluten
ryebaby0 replied to SherriRoy's topic in Gluten-Free Restaurants
I gotta believe steam isn't going to remove gluten. You don't want to think of it as a "germ" that needs to be killed with heat/soap/scrubbing, try thinking as if it were paint that has to come off. What are the chances that you can get every single particle off of ALL the grill? (I know our grill is hopeless. We bought a new grid) If you really find... -
My DH has gone gluten-free (IgG positive, tTg borderline) and is doing well, but I wanted to try my hand at his favorite gluten food -- coffeecake. So far, none of the recipes have been moist enough (or they are tooo dense) or have enough actual flavor. If any of you have a favorite recipe, I'd surely appreciate it. An egg-free recipe would be a bonus, but...

ARCHIVED Unresponsive Celiac?
ryebaby0 replied to momof2's topic in Parents, Friends and Loved Ones of Celiacs
I agree with celiac3270, your GI is thinking of refractory sprue. My son was dx at one point w/ this, but as the articles will tell you, it is very rare. The specialist who did our workup at Johns Hopkins said she believes there is no such thing. (Turned out he had something even MORE rare, but that's another story) Practically speaking, has your daughter... -
ARCHIVED Seeing A Child With Symptoms
ryebaby0 replied to FreyaUSA's topic in Parents, Friends and Loved Ones of Celiacs
If she's starting someplace else in January, I don't see that you are going to have much impact. Would you or I rush to the doctor if an acquaintance casually dropped --in the midst of the holiday rush and moving to a new school -- that they thought our child had a little-publicized and hard to diagnose illness? I agree that she might already have something... -
ARCHIVED Help! Here We Go Again
ryebaby0 replied to emsmom's topic in Parents, Friends and Loved Ones of Celiacs
My son likes EnerG Wheat-free crackers, which we buy at Wegman's. You can also get them on-line thru Miss Roben's or the Gluten-Free mall. Rice crackers are in most grocery stores (look with the asian food) but be careful, not all of them are gluten free (barley malt or malt flavoring is the guilty party). I hate the taste but they make a good base for other... -
ARCHIVED Blood Tests
ryebaby0 replied to AMYGOS5970's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Amy- Richard is right, you need to ask for a copy of the test results so you can see what they ran and what the numbers were. Whether you have a 'scope or not is really up to you and how "definite" you need to feel in order to go gluten-free. If you respond to the diet favorably and have positive bloodwork, some people just don't want to undergo the biopsy... -
ARCHIVED Poops Of A 4yr After 1 Week Gf
ryebaby0 replied to CMWeaver's topic in Parents, Friends and Loved Ones of Celiacs
Hi Christine-- It could take a few weeks to see a big change in your twins --- if the diarrhea is a new symptom, I'd call your doctor. (Sometimes it's easy to forget that not everything is related to celiac!) Don't give them pepto or immodium unless the doctor okays it (which they probably won't). Give them gatorade, or plain water, or pedialyte... -
ARCHIVED Venting~no Dx Yet
ryebaby0 posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Grrrrrrrrrrr.....in late August, my husband went in for a celiac screen (my son was dx 12/03) and the tests came back "inconclusive". (Gliadin IgA negative--but present, IgG very postiive, and tTg "borderline" i.e between 20 and 24) Soo, the family doc wanted to scope him, I said how about we run EMA and the genetic DQ tests first? (This was in early November... -
Your friends (and many of your co-workers, I hope) invite you to Christmas parties because they want you to be there. Bring carrot sticks or cheese, pick up a buffet plate, and you're good to go. You can't spend your life avoiding places with lots of food. My husband has a "standard" reply to the question of "what can we make you" because that is something...

ARCHIVED Traveling And Ff Restraunts
ryebaby0 replied to whitelacegal's topic in Gluten-Free Restaurants
With the caveat that every fast food meal is subject to how closely any franchise follows corporate --- my son eats very often at McDonalds--the burgers are easily ordered without the bun (but they call it a muffin, for some weird reason) and come garnished and in a salad container (or sometimes in a whopper box). The sausage patty, plain and hash browns... -
ARCHIVED Children's Vitamins?

ARCHIVED Can She Have Water?
ryebaby0 replied to momof2's topic in Parents, Friends and Loved Ones of Celiacs
Hey, you want funny -- our peds GI asked , when I mentioned my son had passed the dairy challenge his nutritionist set up. "So where do you get your milk? Is it special? Is milk gluten free?" We decided later that she must have misunderstood something I said, or I wasn't understanding her Eastern asia accent...... -
My son reports that sometimes his feet -- often just one of them -- feels numb, as if it is asleep; sometimes it's "tingly" like pins and needles. Is this a celiac disease symptom? Or shall I check on his many other meds? Thanks

ARCHIVED Help And Advice Needed
ryebaby0 replied to BamBam's topic in Parents, Friends and Loved Ones of Celiacs
Good for the two of you to get her some help in feeling better! Depression is such a misunderstood problem; hopefully she will feel better soon. When my son "glutenates" himself, within an hour or so he starts to feel sick -- as in carsick. Eventually he will throw up a few times, and then he feels peachy. (Then we search for "what the heck did you eat... -
My family is English (like, the Mayflower), Canadian (orginal Acadians) and the usual American hodge-podge of bits of other things down through the years. My husband's family is German, German, German, and oh yeah, Austrian. My son is celiac, hubby is being re-tested, probably positive, my other son and I and so far all my relations are negative...

ARCHIVED Gluten Free Mac N' Cheese
ryebaby0 replied to a topic in Gluten-Free Recipes & Cooking Tips
There's a place called americanspice.com that has powdered cheese of many kinds. You'd need to check about the "modified food starch" listed as an ingredient, though. I used to buy stuff here; the prices are good and the quality is too.... -
Have you tried (you must be sooo tired of sentences that start that way) a simple diet of rice, then rice/chicken.... ? To isolate what food bothers you? Have you been tested for eosinophilic enteritis and/or have your doctors discussed autoimmune enteropathy? Both of those latter conditions are not going to reverse themselves or respond to diet. (My son...

My son has something called a RoadID, which has 5 whole lines for information. The company started making them for runners, kayakers, etc. His dob, ph#, md ph#, etc. and "celiac -- no gluten" on it. It straps on his shoe with a velcro band, is stainless steel and cost $20...they also make dog-tag style ones, with various logos on the front (his has a gecko...

3 of 4 kids? Good lord, you should be proud of yourself for getting through the day! Seriously, it does take a long time to get the hang of this, and there are always going to be mistakes. Just last week I stirred the gluten-free pasta with the spoon I had just taken out of the mainstream. (Stood there muttering profanities, then poured it down the sink...

ARCHIVED Birthday Cakes
ryebaby0 replied to JANELOVESGRAINS's topic in Gluten-Free Recipes & Cooking Tips
My son's first gluten-free birthday was this fall. The brownie suggestion was a good one, and Duncan Hines frostings are gluten-free if they don't have cookie bits, etc. or obviously gluten ingredients added in. Anyhow, we found Gluten Free Pantry's Danielle's Chocolate Cake mix at our Wegman's. He's allergic to eggs, and was dairy free, so we made it with... -
I'm lazy -- we buy a "cakelike donut mix" from Miss Roben's and whip those up in my gluten-free Fry Daddy. One package costs about $5 and makes about 4 dozen little donut holes. Which last, at my house, approximately 36 hours...... joanna

ARCHIVED Kraft Mac And Cheese
ryebaby0 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
(No, I'm not about to eat the macaroni....) I know the cheese sauce packet is reputedly gluten-free -- but has anybody out there actually tried mixing it up for gluten-free pasta? I would love to feed this to my boys, but I really want to avoid a glutenation episode......any potential for x-contam from the pasta in the box? -
(you mentioned mouth ulcers -- folic acid tabs might help that. My son takes them bc his meds tend to do that, and it really helps) I think no matter what our lot in life, there are times when it is all just too much. Venting and crying are good for you, just like being thankful and all that. (But sometimes you just need to have a pity-party without...
