ARCHIVED Chicken Salad Anyone?
happygirl replied to debbie-doodles's topic in Gluten-Free Recipes & Cooking Tips
My mom's secret is to put a dash or two of lemon juice in---makes it yummy! -
ARCHIVED Aching Bones
happygirl replied to swittenauer's topic in Parents, Friends and Loved Ones of Celiacs
The "aches and pains." Those were my absolute worst symptoms, and for me, tell-tale signs that I've been glutened. As bad as my weight loss, ibs/bathroom problems, fatigue, etc, all minored in comparison to the severe bone and muscle pain I had. I hurt to the touch, my skin hurt! When I went on the gluten free diet (luckily, I think I had only been sick for... -
Extremely sensitive to gluten, also. I went to a few places that I was interested in eating at, talked to managers/kitchen staff, so that there are places that I know I can go to. Of course, when I get there, I still grill them with questions But, this way, I have an idea of what to expect, what I know I can have, what my options are (i.e. substitute x for...

There is a "Chicken with Rice" made by Healthy Choice, as well as a Vegetable one (don't remember the name) that both happen to be safe.

ARCHIVED Recent Research . . .
happygirl replied to lbsteenwyk's topic in Related Issues & Disorders
Thank you for posting that abstract! Encouraging to know that if you are diagnosed, and presumably living gluten-free, that you are not at a particularly higher risk for complications. -
Looking forward to checking it out.

Just wanted to say thanks for posting that link.

ARCHIVED Boyfriend/ Fiance With Celiac
happygirl replied to fuzzelfluff-04's topic in Parents, Friends and Loved Ones of Celiacs
I would LOVE that recipe! -
I started seeing results in the first week, but it took me a solid 3-4 months to feel "normal" again. Like Carrie said, I think it varies a lot from person to person.

ARCHIVED Gluten Free Market Goes Mainstream
happygirl replied to KaitiUSA's topic in Publications & Publicity
The best example I tell people in explaining the variance in symptoms of Celiac, etc., is the analogy of pregnancy. You are either pregnant or you are not-there is not just a little bit pregnant, nor is there just a little bit Celiac. Like others have said, there can be variations in how sick you can get after being glutened (like some women have easy pregnancies... -
ARCHIVED M&m's
happygirl replied to melhopkins02's topic in Gluten-Free Foods, Products, Shopping & Medications
melhopkins02, I have celiac disease and am not lactose intolerant either, but I found that I don't react well to eating M&M's either (plain that is....I am just fine with the peanut ones)! I know they are gluten free, so I'm not sure what the problem is!! Its not nearly as bad as getting glutened, but there is something about M&M's that don't like... -
ARCHIVED Greetings From Scotland
happygirl replied to Evonneda's topic in Coping with Celiac Disease
Whenever I am tempted to eat something (although I think I am starting to forget what wheat tasted like!) I think to myself something along the lines of "Is it more important for me to eat this cake/cookie/bread/pasta/possible gluten food, or is it more important for me to have a happy, healthy life." It puts it in perspective for me real fast! I also have... -
Yes, this website is so helpful. It's great because new people learn things, old people can share what they've gone through, and even people who are experts still learn things! I don't know the answer to your question about beef chop suey. I've heard a lot of Thai places use gluten free sauces. Yes, some brands of soy sauce have wheat in them and some do...

I've eaten at PF Chang's at every chance I get and have been told that their rice is gluten free!!! I have luckily never gotten sick there. Hope that you are feeling ok....

ARCHIVED Boyfriend/ Fiance With Celiac
happygirl replied to fuzzelfluff-04's topic in Parents, Friends and Loved Ones of Celiacs
I think it varies for everyone if the house is 'gluten free' or not. We do not have a gluten free house. But, he eats things that I make that are gluten free, of course! I am EXTREMELY sensitive to gluten so it is definitely possible to make it work even with having gluten in the house. -
ARCHIVED Skinny Guy Losing Weight On Gf Diet
happygirl replied to steve-o's topic in Related Issues & Disorders
I lost a fair amount of weight before I was diagnosed with celiac disease. It took me awhile to return to my normal size (definitely more than a month) as I think I had a lot of damage. I am still smaller than I was originally, and it is a constant challenge for me to make sure I am eating enough. I try to add extra calories to my meals. If you are eating... -
ARCHIVED Gf Story On Yahoo Front Page

I just saw this, too! Happy that someone posted it. Every little bit of attention helps.... -
ARCHIVED Book On Gulten
happygirl replied to 11111's topic in Parents, Friends and Loved Ones of Celiacs
Something that was helpful to me was going through lots of old posts-especially ones about foods that are safe/aren't safe. It saved me a lot of time and I learned a lot in one place! Then, I could go to the internet, books, etc. from there. Some of the best information I have received has been on this board-much more trustworthy and knowledgable than the... -
ARCHIVED Top Three Worst Gf Products
happygirl replied to anerissara's topic in Gluten-Free Foods, Products, Shopping & Medications
I must add to the list of hating corn pastas. I tried making macaroni and cheese with it.... it was so awful. Luckily there is tinkyada!!! I also dislike Amy's frozen pizza-but love her enchiladas!!! Some of the gluten free crackers (various brands are awful) but I love the ener-g pretzels! -
I'll be thinking of you and hoping you feel better. Two weeks after my diagnosis, I thought it would be smart to see if this was really "it" and ate a brownie. Well, it is definitely gluten that hates me. I know its not necessarily the smartest thing to do, but it did teach me a valuable lesson and I have never been tempted to cheat again. Sometimes its important...

ARCHIVED Do You Think Of Yourself As A "sick" Person?
happygirl replied to frenchiemama's topic in Coping with Celiac Disease
When people make comments about my being "sick," I am so proud to say, "I used to be very sick before I was diagnosed, but now, I am just as healthy (as long as I eat carefully) as you and anyone else." -
ARCHIVED I'm Craving A Bagel...
happygirl replied to carriecraig's topic in Coping with Celiac Disease
I completely understand! Before celiac disease, bagels were truly my favorite food. I think out of everything else, I miss popping in to a bakery on my way to class and picking up a fresh-baked bagel. I've been gluten-free for almost a year now (Aug. 23rd) and I still wish I could have bagels. However, the craving is not nearly as bad as it was last year... -
I hope that your test results provide you with some answers. I know that everyone's experiences are different, but once I went on a strict gluten free diet, my fatigue problem has diminished greatly. Took a couple months to heal, but now I am back to "normal" unless I get gluten in my system. ALL of my many, many symptoms disappeared once I cut gluten out...

ARCHIVED Do You Ever Have Weird Dreams
happygirl replied to frenchiemama's topic in Related Issues & Disorders
Having gluten-filled dreams is what led me to this website orginally, and I read a post about gluten/nightmares. It made me feel so much better to know that I wasn't crazy. My dreams are filled with bagels, Papa John's Pizza, and Chocolate cake....I only wish I could enjoy it! I usually freak out in my dreams and then wake up in a panic! Luckily, they are...
