  1. I'm at work, but I'm pretty sure I printed off the whole book and have it at home. If you want to email me your address, I would be happy to copy it mail it to you. Its wkcrow@mchsi.com. Kay
  2. I've always wondered if the Psoriais in celiacs is often just misdiagnosed DH that can accompany celiac disease. Don't they look and act a lot alike? My hubby was diagnosed with Psoriais many years before being diagnosed with Celiac (although he did have all the celiac symptoms) and nothing seemed to help. But strangely, after going gluten free, it...
  3. OK all you bread makers out there- I made this bread last night and it turned out really great. I've been cooking gluten free for my husbnd for 18 years and still have my share of flops when it comes to bread; mostly because I still insist on trying to improve it. But after last night, I'm ready to quit experimenting because this is about as good as it...
  4. This Homemade Chicken Noodle Soup is one of my favorites....and if you use chicken in the pouch or can, its really fast. Two or three cans Chicken Broth Equal amount of water 1 heaping T gluten-free Chicken Base (I use either Gluten Free Pantry or Watkins) 1 bag frozen California Blend Veggies 1 package Glutano Noodles (Tagliatelle) 1 pouch or can...

    ARCHIVED "the Trigger"

This was a great idea to see such a variety of triggers. Has anyone's symptoms ever cycled. My husbands did. He would only get sick about every 4 to 6 weeks, regardless of what he ate. His symptoms never became constant until after his trigger His trigger was being alone with my mother when she passed away. They were very close; and after that,...
  6. How about Mini Creampuffs filled with plain or flavored non dairy whipped cream and dusted with powdered sugar. I recently took these to a fancy affair set on paper lace doilies on a silver tray and they looked absolutely gorgeous; and they were also delicious.
  7. WOW- I can't believe the first post I read today was about gluten free gift baskets. I have been pondering the idea for the last several weeks. I don't expect to get rich or anything; but I love to bake and I absolutely love to make gift baskets. What gave me the idea was that whenever I hear of someone who is newly diagnosed I fill a huge gift basket...
  8. Hi to all you Iowa Folks. My name is Kay and my husband, Wayne, is the celiac in our family. We live in Des Moines and have a very active support group here. We meet every 2 months for a Celiac Potluck. We have table after table of some of the best tasting gluten free food around. Our support group has some pretty good cooks Unfortunately...
  9. Snapple - I don't think a lot of folks understand the 'cycle' thing. After all, it does stand to reason that if you can't eat gluten on Monday, you shouldn't be able to eat it on Friday...Right? But that is exactly how it happened with my husband; and that is what makes it so hard to pin down. He loved to have a beer and a pizza. One time it would tie...
  10. I totally agree with spreading the word. My husband is celiac. In the course of conversation with a coworker, she asked what his symptoms were. When I told her, she asked if I would talk to her sister who had GI symtoms and constant D. Her GI was treating her for diverticulitus and C-diff (sp). When she related all of her symptoms to me, I suggested...
  11. I, too, was a miserable failure at biscuits. No matter what recipe I used, they turned out like hockey pucks. Then I stumbled upon 123 Gluten Free Biscuits. I absolutely could not believe how wonderful these biscuits are. I bake something everyday for my gluten free husband so I'm no stranger to the kitchen; but there is no way I will ever go back to...
  12. I make gluten free flour tortillas quite often and they turn out wonderful. I use Kinnikinnick Pizza Crust Mix and use exactly the same recipe on the package for pizza EXCEPT I omit the yeast. The dough is extremely sticky, so I use a greased scoop with a lever on it to make the balls; deposit the balls on a greased cookie sheet, cover with greased plastic...
  13. Oh yes! I get so very very sad when I think about my husband's mother's life. She was always so sickly. So much so, that the first thing everyone always asked her was 'How do you feel today?" My husband, my daughter and granddaughter all have celiac, as well as my husband's sister. It wasn't until his mother was terminally ill with a heart condition...
  14. Just thought I'd jump in here and add a little something; I've never found that shaping buns by hand works well as our doughs are too soft and sticky and want to spread: Try using any of these methods: 1-English Muffin Rings available at most kitchen stores. You just place the rings on a sheet and spray; and then spoon the dough into the rings. ...
  15. Hi there to all you pastry chefs: This looks like the perfect place to ask my question. I have been trying for some time, unsucessfully I might add, to make puff pastry...you know, the kind that has flaky layers -like in a turnover, etc.. I make a pretty good piecrust, very flaky, tender and all; but I just cannot master the puff pastry. I spent...
  16. My husband has been gluten free for about 17 years and this still happens to him. He is retired and loves to have breakfast with his friends every morning at the diner. He knows the owner well and she really tries hard by cleaning a special spot on the grill, using clean utensils, etc. But he still got zapped once in a while...sometimes every week. We...
  17. I have also read that MSG is supposed to be gluten free if its made in the US. However, my husband, who is the celiace in our family, absolutely cannot tollerate it. This caused me to do a poll at our support group potluck we have every eight weeks. Out of the 100 or so attending that day, at least 75% could not handle MSG. This leads me to believe that...
  18. Hi Chrissy--Katydid here Not sure why sweet flour works better for frozen foods. I just remembered reading that hint in one of my gluten free cook books; so I tried it, and it really works. I freeze a ton of stuff, but one of my favorites is pizza crust and my pizza toppings. I use Kinnikinnick pizza crust mix and bake them in a pie tin. (oil your...
  19. Use Sweet Rice Flour for gravies and thickenings you are going to freeze or refrigerate to prevent the separation.
  20. The best granola we've tried is Energy brand " Trail Mix". Frankly, I'm not too keen on a lot of Energy's prepared items....mostly I just use their flours; but this granola is really great. Now they have granola bars too-but that's not what we buy. The Trail Mix is in a box about the same size as their flours come in and its really great to sprinkle on...
  21. I agree with Nini that about the best purchased bread around is Kinnikinnick's Italian Tapioca. We keep a loaf in the freezer all the time for toast, french toast, grilled cheese, croutons, whatever. I don 't make the usual sandwich bread on a regular basis. I make hamburger buns and ziplock them individually in the freezer. Then 30 sec in the microwave...
  22. I think this one is the strangest I've seen in a while- If you order an Omelette at IHOP, you will get glutened even if you have it specially prepared in a clean separate pan. They add pancake batter to their omelettes - they say it makes them fluffier
  23. Hi Sheila: I am probably the one who responded to the pizza crust disaster and said I really love Kinnikinnick. I'm glad you are ordering it because you will love it. I follow the recipe on the package except I always double the yeast and add some gluten-free Italian Seasoning (about 1+ t) to give it a little zip. Following is my method and it works...
  24. I couldn't agree more with the previous post...You definitely need a good stand mixer for all your baking. I have a Kitchen Aid from Walmart = $169. No bells and whistles, just a nice sturdy machine. I use it for everything; mixing bread dough, pizza dough, cakes, cookies, etc. I even use it for cutting the shortening into flour for pie crust. I really...
