I used to buy corn flakes and grind them up.......then I came across this product in my regular grocery store and I couldn't believe it. It says Gluten Free right smack on the front. Its called Southern Homestyle Corn Flake Crumbs; and it comes in a can shaped like Pringles Potato Chips. It was only 2.49 for a 12 oz can, which is really cheap for a gluten...

My granddaughter is celiac and a vegetarian and I know what you mean. Most vegeterian foods contain gluten. One product that she has used and really likes is called Quorn turkey roast. Namaste really is flat, but its amazing when you add 2 or 3 teaspoons of yeast to it how it improves, This mix is yeast free and thats why it doesn't have that really nice fluffy and chewy texture that you are looking for. Unfortunately, the only one I know of with a gluten-free setting is the Welbilt ABM-150R and they don't make it anymore. It has a program on the front face called "multilogic program", but it has to be that model. (Welbilt also private labeled some for Sears called "The Kenmore Choice" and its the same thing if it has the 'multilogic program' on the front...

I think we can all relate to the storage problems for various flours, mixes, etc. I finally had my husband take one of our closets and build floor to ceiling shelves in it for a pantry. As to Pizza. I have been cooking gluten free for many years and we think the very very best pizza crust is Kinnikinnick Pizza Mix. You are right, its sticky. The secret is, after its mixed, use a ice cream scoop with a lever to deposit dough onto greased pie pans. I just use the foil pie pans. Then spray the oil liberally directly on your hands.
