I think that Enterolab fills a need for a lot of people who have run out of options. If you have biopsy-positive, or even blood positive celiac, all that it took for you to get an answer was those tests. Mind you, it probably took years or even decades. Not a dumb question at all. The thing is that it takes a very, very small amount of gluten to get a reaction. Enterolab does gene testing by cheek swab, and will test for the gluten intolerant genes as well as the celiac ones. Most people will have either two celiac genes, two gluten intolerant genes or one of each. The genes are found in most people, but not everyone develops problems with gluten. The gene test is $150. That is really horrible that the Celiac Foundation said that. It is controversial because they haven't published their work yet, but a SCAM??? That's a horrible thing to say. I'm stunned. Yea, they're a real mess in that regard. I have learned not to tell them anything personal and keep things as "surface" as I can. The really good part about them is that they're really wonderful about me and the kids being gluten-free, and have me verify ingredients and read labels to make sure our food is safe. A couple months ago my husband brought up some valid points when it comes to whether or not our daughter needs to be gluten-free. Long story short is that I agreed to do a gluten challenge on her before she starts kindergarten. We use Heinz all the time. I guess from the standpoint of doctors and nutritionists, it's better to tell you that too many things need to be avoided than to leave something off the list. You don't have to avoid vinegar for the most part. That's old information, but there are some vinegars you do have to avoid. Apple cider flavored vineger can have gluten (regular apple cider vinegar should not). Malt vinegar is not gluten-free, malt is barley.
