    ARCHIVED Saw Gi Doc Today...

Woo! Go your doctor! Sounds great! Good luck with the test. :-)
  2. It's my understanding that some PURE cocoa powder is soy free, and if that's the case, you can make lots of tasty things (including hot chocolate and the chocolate coconut pie recipe I posted). If you can't find any soy free cocoa powder (I thought Merika said that Scharfen-burger was, but I don't remember), you may be able to find cocoa nibs (just roasted...
  3. Are you still consuming dairy? Bloating and gas are also classic symptoms for lactose intolerance.
  4. If it bothers you, it bothers you. That's all the really matters. It doesn't bother me, as I don't think it's defining who I am by that, but rather part of who I am. I'm also "an artist", "an engineer", "an asthamtic", "a girl", "a wee bit silly". :-) Good for you for speaking up about it since you're not comfortable with being called "a celiac"...
  5. I'm a fan of San-J's Wheat Free Tamari. Not too pricey (though not cheap), and tastes WAAAAY better than La Choy's.
  6. Yes and no. It's not a fat thing, for me, 'cause if I'm not eating meat, my hypoglycemic tendencies have me eating plenty of fat. But sometimes, I'll just have very little meat and it works better. Varies on what my body needs. But some people do feel better sticking to a more vegetarian diet. It can also heavily depend on HOW you cook the meat you're...
  7. Nope, you don't grow out of it. As for the second question, I say one of the following, usually in decending order: "Well, first I feel dizzy and disoriented, then... then it's about a week of 'intestinal trouble', if you know what I mean." then "It damages the intestines. I feel pain in the abdomen, it makes a lot of noise, and I'll be hanging out...
  8. What if pumpkin puree is made on the same line as pumpkin pie filling, and the spices used in that pumpkin pie filling have wheat to prevent clumping? Voila - cross contamination risk. But we don't know that the pumpkin puree is made on the same line as the pumpkin pie filling, nor do we know that the hypothecial pumpkin pie filling spices have wheat in...
  9. When you do have time to cook, make sure to make enough to have at least one or two instances of leftovers. (This works great with soups, stews, stir-fries, casseroles, salads (that aren't leaf-based), etc.) And, when you have time, make sure to make a few "ready to go" items that can store for a while (like some salads, hummus, etc.). When you don't...
  10. You could also do an elimination diet to determine if casein is causing a problem. It bothers some people (celiac or not) but not others. It does *not*, however, trigger the same autoimmune reaction that gluten proteins do. (There is a rare condition where dairy can cause enteropathy, but it is rather rare.)
  11. What constitutes "actual cooking" to you? Does making rice count? Heating a bunch of ingredients in a pot? (Just looking for a reference point to see if I can be of any help.)
  12. In many areas, regardless of what is found at the time of the test, it is standard practice to wait for the official results (from the biopsy itself, in this case), so many doctors may recognize it and not say anything. (And, I'm sure, MANY don't recognize it.)
  13. Coconut Mango Rice Pudding Serves 6 Ingredients ----------- 3 cups coconut milk 3 mangos 1 cup sweet rice (white or brown) 3 tbsp sugar 1 vanilla bean 1/2 tsp salt Directions ---------- 1. In a medium sauce pan, combine the coconut milk, salt, and the rice. Bring to a simmer, stirring often. 2. Peel all three mangos. 3. Dice two of the...
  14. I have a couple of recipes in the recipes section under "As Promised, A Few Recipes" for smoothies, but I'll put some of the basics here: Standard Strawberry (2 cups frozen strawberries, 1 orange (or 1 cup orange juice), 1 cup soy milk, 1 banana, 1 svng rice protein powder) Tangy Tropical (2 bananas, 2 cups frozen pineapple, 3 oranges, 2 cups soy milk...
  15. * Smoothies (~10 minutes to make, then I stick it in a Nalgene bottle and drink it througout the morning) * Rice cakes w/ peanut butter (~10 minutes to make and eat) * Pancakes (make a big batch on a weekend, then put a bunch in the fridge. on a busy morning, take one out, spread some jam on it, fold in half, eat while heading out the door) * Hot cereal...
  16. All on it's own. (I make a small pot that I drink througout the day at work.) If you notice it every time you eat, I'd ask: 1. What is common about the foods you are eating? (For instance, is rice always a part of your meal, or some other thing.) 2. What is common about the way the food is prepared? 3. Is everything you are eating fresh and naturally...
  17. Ginger Chili Chicken Stir Fry Serves 4-6 Ingredients ----------- 3 chicken breasts (half breasts, really) 1 lb baby broccoli (or regular broccoli) 2 carrots 1/3 red onion 4 tbsp water 3 tbsp chili oil 2 tbsp soy sauce 2 tbsp lemon juice 1 tbsp grated ginger or ginger juice 1 tbsp honey (or agave) 1 tbsp sweet rice flour (or cornstarch) 1...
  18. The deal with lactose is the following: Humans produce lactase, and enzyme that breaks lactose (the milk sugar, which is a di-saccharide) into it's two simple sugars. It's produced at the tips of the villi in the intestines. The ability to produce significant quantities of lactase after the baby years is genetically determined, and varies from person...
  19. I was confused for a while about it, but I kept getting that feeling after drinking tea. I knew the tea was fine - it was plain green tea that was totally safe. It seems that the hot water does it to me. (So it happens if I make fresh ginger tea too.) For some reason, that change in temperature can cause that feeling for 10-15 minutes for me. Perhaps...
  20. I believe that there has been a reported connection between balance issues and the central nervous system manifestations of celiac disease in some people. Others on the board have discussed this before, and I'm sure they'll have some useful information for you soon! :-)
  21. Hmm... I don't worry about grain alcohol (too familiar with the process of distillation ;-) ). But the spices... I would definitely worry about the spices. If you can call the company, I would encourage that. Otherwise, I suppose it's one of those cases where you have to go by your reaction. Wishy-washy answer, I know. :-(
  22. Ginger Beet Salad Ingredients ----------- 4 firm, sweet apples (e.g. Gala or Cameo) 2 carrots 1 large beet fresh ginger 1 tbsp lemon juice Directions ---------- 1. Grate the first apples and carrots. Combine in a large bowl. 2. Peel the beet, then grate it. Combine with apples and carrots. 3. Add lemon juice. 4. Peel and grate roughly ...
  23. What are the ingredients?
  24. You say "when you go somewhere"; does that mean you eat out fairly often? Even if you are very specific, you may be getting cross-contamination. Do your symptoms coincide with eating out, or do you eat out (or anywhere where you have not prepared your own foods) too frequently to tell?
  25. Yep, I've done an elimination diet. At a dozen foods (pork, rice, olive oil, rice, and eight others) for two weeks and then tried one of each of the common allergens every few days... Or at least, that was the plan. The mental/emotional effort of doing that diet did me in. It was far too restrictive and drove me crazy. But I did a variation to learn that...
