That sounds like a CYA to me. I use the dye free liqui-gels from Benedryl without a problem. (Ok, I do sleep through the rest of the night, but that's me and Benadryl for ya... Not a gluten thing. ;-) ) -

Yep, I've dealt with trying to lose weight or keep it off. Exercise and portion control. Even "eating normally" can be eating more calories than YOUR body needs if you're not very aware. Potatoes are part of the nightshade family, along with tomatoes and, I think, peppers, but I'm not sure about that one. Sometimes, if you're sensitive to one type of plant, you'll be sensitive to the whole family of plants. Welcome to the board. I'm sorry you need to be here, but glad you found us. As for how hard celiac disease is to cope with, it pretty much depends on how well you cope with the diet. And that varies widely. If it means that you have to greatly change your eating habits, and you also are very uncomfortable being "different" from the crowd, it'll be harder...

Actually, it sounds like it could be a latex allergy. You may want to talk to your doctor about that, as it can become serious. Does this happen if you wear, for instance, panties which have fabric entirely sewn around the elastic?

I was up there last weekend, and will live there soon, but while there, we went to PF Changs, Z'Tejas, and got some stuff from the Flying Apron Bakery. All are quite celiac friendly. There's also Kalli's Kitchen, but I didn't get a chance to stop there.

Nope. You can make some substitutes for some things using nuts (there are recipes in raw foods cookbooks and websites) or nutritional yeast, but there isn't any pre-made casein free and soy free "cheese". -

I start getting changed stools around day 2 after gluten, and that portion lasts another 3 days or so, on average, for me. Doesn't sound out of the normal for a gluten reaction at all. A piece of bread is a lot of gluten! -

I was posed a question on how to substitute for Jiffy Corn Muffin Mix and creamed corn in a casserole recipe? My idea would be to use a combination of corn meal and corn flour (perhaps 1:4?). I can't figure out if the leavening agent in the muffin mix would be needed or not. I know a casserole gets baked, but I don't know that it'd have any acid to activate... -

It's really good with regular pasta sauce too. I made up a big batch of a really hearty, meaty marinara sauce and poured it over spaghetti squash and brought it over to a friend's house for dinner once... everyone thought it was a very tasty dip for chips!! Lol! But they also loved it all the more when they found out it was healthy! :-) -

Yep, you need a dedicated toaster. An easy way to save money is to base the bulk of the calories in your diet on naturally gluten-free, inexpensive items. Beans/lentils/rice are cheap, easily rinsed before cooking, and naturally gluten-free. The first two, in particular, are nutritious as well.
