I tend to go the other way (constipation), so often consider magnesium for that. But I too was going to suggest calcium (without magnesium). (BTW, if you're taking calcium for a health supplement (bone health), you DO want sufficient magnesium AND vit D along with it. CitriCal actually does not have enough magnesium! I can't tolerate hormonal BC either. (And I tend to be sensitive to adhesives - regardless of gluten content.) I had worse allergies and increased yeast infections while I was on the pill. I did the same thing - replaced the stuff that was pitted from tomato sauce, kept the rest.

Eh... the last sentence doesn't make sense to me, 'cause you'll still make yourself sick if you eat gluten even if you're "only" gluten-intolerant. If you take the hard stance that celiac only occurs when you've got distinct damage in the intestines, then all of us who eat gluten-free, eventually stop being celiac and just gluten-intolerant. Ha! I've asked for a gluten-free meal on airplanes twice, and the first time, I didn't get anything. The second time (today), I get a chicken salad sandwhich in pita bread and a wheat flour based cookie! I'll be writing American a letter explaining that gluten-free means gluten-free. (Not phrased that way, of course, but still...)

What about other kinds of beans? Bush's baked beans I've heard are gluten-free. Regular canned beans spiced however she likes... Looks like you're gluten intolerant (both tests for that came back positive), but haven't yet had enough damage to the intestines that you are having malabsorption problems. If going gluten-free made you feel better, that is yet one more positive test result to throw in the mix. I'd stay gluten-free, were it me. -

The problem with La Choy, to put it nicely, is that it sucks. I know I'm a food snob and all, but it's ... bleck! San-J makes a wheat free tamari that is gluten free (grey label) that is of good quality. It may be harder to find in regular markets than La Choy, but larger stores and health food stores (like Wild Oats/Whole Foods) carry it. -

As you move from learning all the things you CAN'T have, to all the things you CAN have (and get your house stocked on them) the diet becomes easier. Read around the message board for a while and you'll find a lot of useful advice. It does get easier!

The only caveat with that rule is that I believe they have different moisture contents, so if you're baking something REALLY finicky, in theory you might have to compensate for the difference. seitan is specifically made from wheat flour (and usually additional vital wheat gluten) so is DEFINITELY NOT gluten-free! :-) the thing with using substitute flours is that with the lower protein content, and the rinsing process you describe, you're unlikely to get much out. they contain so much starch that most everything will be washed away. the product...
