  1. We make a delicious salad with baby spinach leaves, grated carrots and cucumber, tomatoes hard boiled eggs and sprinkles of quinoa - rice mixture. All this tossed together with a vinaigrette. Delicious!! And the children love it too.
  2. No one in their right mind would want to feel as Ill as one does when glutened! Therefore it is extremely important to be diagnosed properly to be really disciplined with their gluten-free diet.
  3. I am currently on a 8 week gluten challenge after having been gluten-free for two months before and I can tell you the journey has not been fun at all.   4. I agree that a proper diagnosis is important in order to shut people up. I have a similar thing with my mother in law who keeps mentioning that fantastic plumb slice and what it pain it is because I am unable to eat it and she loves it. I always have to reply- I am not preventing you to make it, I just won't have any and this is not a problem at all. And...

    Day Thirty One

    I am also on a gluten challenge at the moment, I am on week 7 and I found that after week 4 my symptoms changed a bit. After the initial severe shock to the system after having been gluten free for two months prior to the challenge, I now have a constant tummy ache, joints on fire, constant tiredness, etc, etc and general desperation!! I am very grateful...
