	This restaurant has made their entire facility gluten free - nothing containing gluten is used in the kitchen at all. Only one dish, the quesadilla, and the desserts (made off-site) have gluten. It also does analysis to try to correlate your symptoms to a specific food item. I think it's great, but it takes a lot of effort to put everything in.

It might be your celiac, but bloating is also a symptom of ovarian cysts and cancer.
