  1. First: your doctor diagnosed you with celiac, you went gluten free for a few months and the biopsy was negative... and your doctor ignored the blood positive? If I were you, I'd get a new doctor! You ate gluten for almost a year and duh! You have damage to your small intestine. That just doesn't make any sense for a doctor to let you go through that. Rather...
  2. I also have LC and celiac. It's ridiculous. Most GI's will try to tell you that food has nothing to do with it, but I'm beginning to disagree after going off the steroids and having the symptoms all come back. If you want better advice about diet/etc beyond going gluten free, try this Open Original Shared Link.
  3. Welcome to the wonderful world of celiac disease! If you're feeling bloated, it might be the fruit you've been eating. Talk to your nutritionist about FODMAPs, eliminating them might help solve the bloating. Also - if the diet doesn't work for your symptoms, please have your GI test you for microscopic colitis. It's apparently quite common among celiacs...
  4. Some tea in Chinese restaurants contain barley!
  5. Unfortunately, the only way I've been able to make nice fluffy bread that stays together is to use the Expandex/modified tapoica starch. I've taken a few recipes from GFOAS Bakes Bread and skipped the ridiculous double rise that never works for me. I've made loaf after loaf of satisfying bread. It's not Wonder Bread light, but it's a reasonable facsimile...
  6. Well thanks for the support Gemini. Nothing like a little sympathy, whew! I feel so much better being told how incompetent I am. You've never been down the road that I have so what do you know what I'm doing or what opportunities I have to eat safely? Oh but I'm just a hypochondriac because of anxiety? Yes the Reese's wasn't great, but I was in a literal...
  7. I'll definitely keep that in mind if I ever get to the point where I can eat legumes again.
  8. Thanks for the tip on the altitude cooking, Beth. It came a little too late for my not-done pot of Bob's Red Mill cereal. I'm going to stick w/ the Chex, even though I can't find lactose-free milk anywhere. Take your pick - grumbling stomach from hunger or from the lactose intolerance I guess. Today I lost the big girl pants and my s$#&, because one of...
  9. Day one into my first on the road, hotels every day trip since the celiac diagnosis. I never realized how hard this would be! Camping was a breeze, and while a visit to the family was annoying (they all ordered pizza!) it was do-able. Strange restaurants every day? Not so fun. Last night had a place tell me they could totally do gluten free, but then...
  10. Hi there - I took Bentyl and it hardly touched my issues, and I had very negative side effects. It made me really loopy and gave me headaches. Did you GI do a colonoscopy to check for Crohn's? The reason I ask is mine suspected microscopic colitis, apparently this is far more common in celiacs than the general population. The biopsies (they need to take...
  11. MUCH LOVE goes out to you for taking this extraordinarily brave step! Please post here when you open up the shop - I will be sure to stop in if I get down that way! There are some great discussions/blogs out there on the web (look up gluten free ratio rally) for recipes/flour blends. Just a side note, there are three different people in my area doing...
  12. Millet can be gluten free. Some batches test a bit over the limit if they're not certified gluten-free, kind of like oats but not as bad. Congratulations user001 on getting through the days with the family. Condolences on your loss
  13. Oh that is awful! But all of us celiac people would love it if you'd quit your job and dedicate yourself to creating beautiful gluten-free baked goods just for us! The selfish part of me says quit! Seriously though, if you feel it is making you sick, then they may be legally obligated to help you avoid ingesting the flour - be it better ventilation, or...
  14. OK my recipe is working out pretty well, so here goes! I find using milk for part of the wet ingredients helps make a crispy, brown crust. If you want a softer/lighter loaf, just use water. You really do need that digital scale to measure because of varying degrees of humidity. Start with 250g of your favorite all-purpose gluten free flour mix with xantham...
  15. I have a rice cooker that is very similar to Open Original Shared Link and have been experimenting with using it for various meals. I can do a single-serving of rice, then put spinach in the steamer bin with some butter, crack an egg into the rice after it's done and mix in the spinach with some shredded cheese for an instant scramble. I've boiled eggs...
  16. Actually, from what I understand, during perimenopause estrogen levels can swing wildly up, really high, then crash down low. Mine were off the charts high in January when I missed a cycle - my doctor said it was because my ovaries were shooting blanks and it confuses things. Great. I, too, have had bizarre periods since going gluten free. Mine were always...
  17. The Kitchenaid is essential. I found one on craigslist for $70. I haven't found any store bought brands that I like at all. Udi's is like cellulose foam packing. I've been working on creating my own, and it's definitely worth the cost to have fresh bread, and it's so easy! It's way, way easier than wheat bread because you basically beat the crap out of...
  18. To start with, I am a complete and total skeptic when it comes to naturopaths. I have no belief in herbal treatments (mainly due to nightmarish lack of regulations in the USA and conflicting research), in accupuncture (?!) and all the rest, but I was left shaking my head in disbelief when I met an actual MD this weekend - one with 20 years of family medicine...
  19. It's so hard, isn't it!? I tried a new place this week, it's actually the restaurant of an acquaintance who professes to have a very careful kitchen. Even has a dedicated fryer - they only fry with rice flour. Anyhow... I picked a selection from the menu that was listed as gluten free, telling the waiter I had celiac disease and needed the dish 100% gluten...
  20. I had this glorious dream yesterday morning... I went into a pizzeria, the kind with the big wood-fired ovens and concrete floors (stems from a conversation I had w/ a local chef who is opening a wood-fired grill). I could smell the pizzas. A man came up and asked to take my order, I said, sadly, "I can't have pizza". He looked sad, and asked why, so I told...
  21. Talking to a neighbor, I said I had used my rice cooker a lot while renovating my kitchen. He says, "I hear they are the very best for making rice" - I replied "oh yes, very good". Then he says this which made me bite my tongue hard to not bust out laughing like an insane person: "We haven't been eating rice, we are trying to cut down on our glutens". ...
  22. I'm thankful that celiac disease has given me a new appreciation for food. I had gotten into a rut with cooking and my restaurant choices. Now I am far more creative, and eat better quality food.
  23. I've put on 4 pounds in a week, and am now paranoid I was glutened. I went to a July 4th cookout and the only things I ate were corn, which I grilled in the husk and ate straight off the grill, no butter or salt. I had some fruit salad and a special vegetable salad the host made specifically gluten free. The only problem was I got there a little late and...
  24. Sorry you are struggling to find foods that don't disagree with you. Sure, your diet was not so hot, but I'd agree with those who place the blame on the black beans. They're chock full of stuff that feeds bad bacteria. Your symptoms sound a whole lot like mine, before I was diagnosed with lymphocytic colitis. I was sure it was gallbladder pain - it was...
  25. 19 - that's high! - seriously, mine was down to 10. Even before I knew I had celiac disease I had better luck with GNC's Women's Iron Complete thank the SlowFE. The SlowFE gave me abdominal cramps, even though it's supposed to be gentler. The GNC stuff was way better. I tried about 4 brands before I settled on this one.
