ARCHIVED Specific Carbohydrate Diet?
shimma replied to PreOptMegs's topic in Related Issues & Disorders
I have found the diet very time-consuming - I spend many hours prepping food. But I've been on it for three weeks and I'm willing to stick it out because I think that even if I don't feel 100% better at the end, at least it can't hurt. At this point I'm willing to try anything! I've been gluten-free for two years and I don't feel significantly better. -
Speaking of grapes....sort of.....are there any wine drinkers here? The book specifies "dry wine only", and I think this is in contrast to a fortified wine like sherry. Is that your understanding as well? Aren't most red or white wines, at least the kind that go with dinner, "dry"?

My husband has expressed concern about the amount of high saturated fat and cholesterol foods I now consume, especially eggs and cheese. I would gladly cut back on those, but I hesitate to limit myself even more. Is anyone else concerned about this diet raising their cholesterol?

Several years ago, back in college, I developed this condition where virtually any contact with my skin caused itchy red marks to appear. By running my fingernails lightly along my arms, I could write words and then watch them appear a minute later. The doctor told me I had Dermographia, and said no one knew what caused it or how to cure it. It stopped...

ARCHIVED Warning: The Gluten-free Bible
shimma replied to celiac3270's topic in Publications & Publicity
I haven't read either of those books, but after reading this post at work and then spending most of my drive home thinking about it, I had to post my two cents. I ENTIRELY disagree with the attitude that "everyone cheats, it's inevitable." The doctor who diagnosed my celiac disease told me something similar. He said, "In six months, you'll feel better... -
I just started the SCD diet last week, so it's really too soon to tell for sure. But I have felt better so far, and hopefully it should only improve from here, assuming I stick to it!...... I figured, what can it possibly hurt? What I was doing before (just gluten-free) obviously wasn't working.
-
Just curious - If you wouldn't mind, can you summarize where you were (health-wise) before beginning the diet, and how you're feeling now? How did you come to hear of SCD? It seems like most celiacs have never heard of it.

I was intimidated by the spaghetti squash, but it was actually pretty easy. I just baked it for about an hour and then opened it up. The hard part is separating the seeds from the strands. It all tends to stick together. Gravy was a cinch because I cooked the turkey in a crock pot with some onions and celery. By the time the turkey was cooked, there...

Check out the Vegetarian Diet section of www.diet-portal.com. They have very interesting arguments regarding The Protein Myth.

Thanks for the suggestion. I'm sure everything will work out, considering that I've managed to start and maintain this diet even while having the craziest couple of weeks.... Do you have any recipes to swap? I made a pretty interesting casserole this week. I was really craving some comfort food, and had a lot of extra turkey around. I was thinking...

My doctor diagnosed me with IBS in addition to Celiac disease. I think it was his way of saying, "I have no idea why you still have symptoms even though you're on a gluten-free diet." (I've been gluten-free for two years now). I occasionally have pain after having a BM - I almost passed out at work one day in the bathroom after going! Luckily it's not...

Enjoy your orange! I think I'm allergic to them. I mean, I tested positive for a bunch of food allergies last year, but I think it was a leaky gut problem. But oranges have always made my stomach hurt (could be the acidity, I guess). I have a wedding to attend in three weeks which will involve travelling. I don't know how I'm going to maintain this...

Not a huge canned fish fan, but I love fresh tuna! Haven't had it in forever. I've been having just plain chicken and turkey breasts (a 6 pounder...meat for weeks!) If there's anything added, it's not on the label. Can you add something to plain cuts of meat? I'm sure they brine them to make them juicier, but as far as I know, it's just salt water...

I really need help with the meat part. I wasn't a big meat eater before this diet, and when I go to the supermarket, I stare at the meat aisle and just draw a blank. What do I DO with all those different kinds of beef? I don't know which ones to buy, or how to prepare them - it's overwhelming! So far I've been sticking to chicken, turkey, and salmon,...

I feel kind of silly now - I guess I need to go back and look more closely at BTVC. I thought you did the intro diet for a few days and then launched into the full thing. It's a good thing you guys set me straight.... cynicaltomorrow - what are you eating right now?

The muffins were straight out of Breaking the Vicious Cycle. Very simple, just ground almonds, eggs, melted butter, honey, baking soda, and salt. They're surprisingly good (although a little chunky, as I didn't grind my almonds enough!) I felt better today than yesterday, so I'm keeping my hopes up. I hope I'm not egg-sensitive, because it's one of...

ARCHIVED Feeling Sick And Bloated From Rice!
shimma replied to mela14's topic in Coping with Celiac Disease
Mel, You might be sensitive to the sulfites in dried fruit. I absolutely LOVE dried apricots, but I get sick a couple hours after eating them. Or, if you ate a lot of them, your body might be overreacting to a whole lot of fiber all at once. -
ARCHIVED Feeling Sick And Bloated From Rice!
shimma replied to mela14's topic in Coping with Celiac Disease
Hi Mel, I noticed that the things you mentioned that give you problems are starchy, like rice, or probably coated with starch, like roasted nuts. I've been gluten-free for two years but still get sick a lot, so I started looking into other alternatives. There is a lot of research out there to support the theory that most types of carbohydrates (including... -
My mother-in-law had a yogurt maker leftover from the 70's, so I've been using that. It makes five 6-oz cups. I tried making yogurt in the oven before, but it didn't turn out well - I don't think my oven can be set to a low enough temperature. I started the diet on Monday after a weekend of food prep. I did the intro diet only for a day, which I'm starting...

I'm going to start the diet this weekend. I know it will be hard, but I've been through so many allergy elimination diets, and of course the gluten-free diet itself is hard to get used to. I know the main thing that I'll need to be careful about is to always have food around - because when I get hungry, the urge to cheat is unbearable. I was reading...

I've been reading about the Specific Carbohydrate Diet on the web. I've been gluten-free for almost two years, but still struggle a lot with symptoms. I wondered if anyone has tried this diet, and if so, any advice? Thanks.

ARCHIVED Levsin (hyoscyamine)
shimma replied to dbuhl79's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi, After a bunch more tests and still no relief from my GI symptoms, my doctor decided that I have IBS in addition to Celiac Disease and prescribed LevBid (also a hyoscyamine). I felt so terrible on it (my symptoms were even worse, and the dry mouth drove me crazy) that I went off it after a few days. Now I don't know what to do with myself -- I've... -
Hi debmidge, I'm sorry to hear about your husband's troubles. Is the gluten-free diet making him feel any better physically? I know that I still had a lot of bowel troubles even after going gluten-free, and my social anxiety didn't get any better either. After reading a lot of the posts on this board, I wonder if the anxiety is a product of two things...

Hi, I wanted to update anyone who was still interested in this topic. When I wrote that first post, I had been unemployed for quite some time. I was dreading having to work because of all my anxiety and recurrent bowel problems. In fact, the thought of starting a job made me incredibly nervous. But I knew I needed to find a job because there was no...

ARCHIVED Seasonal Allergies Better After Gf
shimma replied to LisaP's topic in Related Issues & Disorders
I just went to the doctor last week because of nausea, and he said I have post-nasal drip which may or may not be an allergic reaction to something (I'll see the allergist in a few weeks). This just happened a few months ago, after being gluten-free for several months. I've never had problems with allergies, although they do run in my family. I'm hoping...
