The nightshade foods are potatoes, tomatoes, peppers, eggplant. Tobacco is a nightshade as well. I think a better suggestion would be to do a true elimination diet. Meaning cutting out all the most likely culprits at the same time, and then, after at least a week, trying them one at a time, a few days apart. Most people need to eliminate dairy as well for at least the first few months in order to heal. And many here can't tolerate soy, either. Corn and eggs are other likely culprits. So, what I am saying is, that other intolerances could be hindering your progress on the gluten-free diet. -

Yes, I am an extreme protein type. I react badly to any carbs at all (including what is in vegetables). Right now I am on a mostly meat and fat diet with minimal carbs (pretty much just onions and herbs), and I am finally losing some weight and am starting to have a little more energy. -
It could be all lectins. Meat protein is NOT the same thing, so you might want to cut out all the lectin foods (which you have pretty much done except for legumes and rice) and put the meat back in! It sounds like another intolerance to me. I feel exactly like that when eating rice, eggs, dairy or nightshades (all lectin foods). All my joints and my back will ache terribly by the next day when eating those (plus gluten, of course). And my knees and ankles buckle on the stairs and give out on me.

The endoscopy and biopsy are a good idea if they can be done quite soon, as you can't start a gluten-free diet before the biopsy, because that would guarantee a negative biopsy, even if it would have been positive before. I am not sure what would be the best substitute for that particular cake. Maybe a mixture of light buckwheat flour, rice flour and xanthan gum? Or corn starch instead of the rice flour. Some people just do terrible with beans. I have never been able to eat them without getting terribly bloated and gassy (much more so than most people). If you find that something is bothering you, it would be wise to not have it for a while before trying to reintroduce it. -

If you just use normal eggs you KNOW that they are okay! I wouldn't trust egg beaters. The Carlson's cod liver oil doesn't taste fishy and is the best there is. There are a few people here who were infertile, and finally got pregnant after following the gluten-free diet for a few months. If things were out of whack for a while, don't expect an immediate fix. Has appendicitis been ruled out? If you tested allergic to wheat and gluten, you absolutely need to eliminate those! If your pain is as bad as you describe it, why haven't you tried that already? There is no easy fix for food intolerances, other than to stop eating those foods. Start the gluten-free diet today, and hopefully your pain will subside...
