  1. I have used my blender for grinding poppy seeds, and it worked fine. Chia seeds aren't smaller than poppy seeds, I imagine. So, why not just use a blender, if you have one?
  2. Nobody is accusing you of advertising. It is likely that the major distributor who sells those seeds has tried to sell them here, maybe even saying they cure celiac disease (I am just guessing, those kinds of things happen here all the time).   5. Flaxseed meal becomes an egg replacer if you boil it with water. Dry flaxseed will need a little more moisture, I believe.
  6. I use light buckwheat flour. I find that my gravies turn out the same as with wheat flour, and everybody raves about them.
  7. I am afraid that 40 pound bag of flour has to go. And I mean, out of the house, given away.   8. Yes, I don't think you should do any kind of cleanse before you have been gluten-free for at least six months. It could make you really ill otherwise.

  10. If you really wouldn't be absorbing the water, you would run to the bathroom continuously, as well as having watery diarrhea. But just in case you are dehydrated, it is much better to drink small amounts all day rather than drinking large amounts. Your body can absorb only one large glass of water an hour, I believe.   11. Adrenal fatigue (or worse, adrenal exhaustion or Addison's disease) often is the culprit when somebody never has any energy at all. Longstanding celiac disease can cause adrenal fatigue. For somebody who is taking thyroid medications, they often do not work until the adrenal glands are looked after.
  12. It is simply NOT true that somebody without the 'official' celiac disease genes can't have celiac disease. There are people diagnosed with positive blood tests and positive biopsy, who recovered from being very ill on the gluten-free diet. As has been said before, in certain other countries they recognize many more genes as official celiac disease genes....
  13. Since your son isn't deathly ill (yet), waiting two more weeks should be okay. If you want him tested he needs to be eating gluten until the tests are done. Otherwise he is guaranteed false negatives. I would never advise anybody to put their children back on gluten for testing after they have been on the gluten-free diet and are doing better.   15. First of all I would like to mention that celiac testing in children under six is notoriously unreliable, and that goes for both the blood work and the biopsy. And it isn't all that much better in older kids and adults. There are virtually no false positives, but a negative test can NEVER rule out celiac disease. Both your sons sound typical for kids...
  16. The nightshade foods are potatoes, tomatoes, peppers, eggplant and tobacco. If you get reactions to those, you probably shouldn't eat them. Potatoes give me the same reaction as most other starches, diarrhea, gas, bloating and pains and aches in my back and my joints. Tomatoes cause migraines for me.   17. Scientists admit that they haven't found all the celiac disease genes yet. In other countries they consider certain genes official celiac disease genes that here they claim don't cause it. There are some people with celiac disease who don't have the two 'official' American celiac disease genes. I guess your son may be one of them. Good for you for keeping...

  20. Hi Peter! Well, we have El Peto products (located in Cambridge, Ontario) and Little Streams Bakery (Perth, Ontario). El Peto has just brought out a new bread, which is called 'Gourmet Bread' and it is delicious! It tastes just like light rye bread. Even my daughter, who hated all other gluten-free breads, will eat it.
  21. If I was you, I would call the pedi tomorrow morning, and tell them you will drop by at (whatever time you choose) to pick up the copies of the results. You have a right to your own copies, they can't refuse to give them to you. Once you've got it, post all the numbers here, and somebody will be able to tell you what it all means.
  22. Are you serious about wanting your daughter to eat gluten just to prove your point? It sounds like it could possibly kill her. If that was my kid, no way would I take the risk! Her reactions sound more like a severe allergic reaction, possibly as well as celiac disease.
