I have used my blender for grinding poppy seeds, and it worked fine. Chia seeds aren't smaller than poppy seeds, I imagine. So, why not just use a blender, if you have one? -

Nobody is accusing you of advertising. It is likely that the major distributor who sells those seeds has tried to sell them here, maybe even saying they cure celiac disease (I am just guessing, those kinds of things happen here all the time). Flaxseed meal becomes an egg replacer if you boil it with water. Dry flaxseed will need a little more moisture, I believe. -

I use light buckwheat flour. I find that my gravies turn out the same as with wheat flour, and everybody raves about them. -
I am afraid that 40 pound bag of flour has to go. And I mean, out of the house, given away. Every time she bakes with it, the flour dust will be in the air for you to breathe in, and it will settle all over the kitchen, contaminating every surface. It will keep you sick. And as said before, ALL the cooking (if you are going to eat it) needs to be done...

Yes, I don't think you should do any kind of cleanse before you have been gluten-free for at least six months. It could make you really ill otherwise.

Jason, try not to panic here. Not everybody who swallows river water gets ill every time. Nobody would ever swim in a river or lake ever again if that was the case. If you really wouldn't be absorbing the water, you would run to the bathroom continuously, as well as having watery diarrhea. But just in case you are dehydrated, it is much better to drink small amounts all day rather than drinking large amounts. Your body can absorb only one large glass of water an hour, I believe. Adrenal fatigue (or worse, adrenal exhaustion or Addison's disease) often is the culprit when somebody never has any energy at all. Longstanding celiac disease can cause adrenal fatigue. For somebody who is taking thyroid medications, they often do not work until the adrenal glands are looked after.

It is simply NOT true that somebody without the 'official' celiac disease genes can't have celiac disease. There are people diagnosed with positive blood tests and positive biopsy, who recovered from being very ill on the gluten-free diet. As has been said before, in certain other countries they recognize many more genes as official celiac disease genes.... -

Since your son isn't deathly ill (yet), waiting two more weeks should be okay. If you want him tested he needs to be eating gluten until the tests are done. Otherwise he is guaranteed false negatives. I would never advise anybody to put their children back on gluten for testing after they have been on the gluten-free diet and are doing better. First of all I would like to mention that celiac testing in children under six is notoriously unreliable, and that goes for both the blood work and the biopsy. The nightshade foods are potatoes, tomatoes, peppers, eggplant and tobacco. If you get reactions to those, you probably shouldn't eat them. Scientists admit that they haven't found all the celiac disease genes yet. In other countries they consider certain genes official celiac disease genes that here they claim don't cause it. Do you have enough saturated fat in your diet? Fat and protein keep us satisfied, carbs do not. And yes, our bodies absolutely NEED saturated fat to be functioning properly. Hi Peter! Well, we have El Peto products (located in Cambridge, Ontario) and Little Streams Bakery (Perth, Ontario). El Peto has just brought out a new bread, which is called 'Gourmet Bread' and it is delicious! It tastes just like light rye bread.
