I went to M&M Meats today, the lovely lady there printed off what the head office calls a "gluten-free" list. Well, 95% of that list has gluten in it. They listed lasagne, cheese cake, battered, breaded, etc. I went through drawing lines through so much of it, I had to laugh. But then thinking what if I did not know what I was looking for and I was a brand new day or week old freshie who had never been here. If I had never been to the Celiac association and if I had never had a Celiac Dictionary, I would have been in very big trouble. So, I got some potatoes, vegetables and chicken kabobs. Some stuff they did not have on hand, seasonal, but there is not a lot. There are turkey steaks, don't use the sauce. There Are chicken cutlets but I highly suspect even their ice cream could be a problem.

Rusla, I am so sorry. I was the one that posted the letter. Is the phone number the same for US and Canada? Do they produce the same products in US and Canada? Were any of the ingredients suspect or was the gluten hidden?
Not your fault. The number for Canada and the US is different and they do not always carry the same things or made the same way, she told me. The gluten was definitely hidden in those because, I did compare the honey mustard chicken and the chicken a' la orange with my Celiac dictionary. I was very very careful. But she said the gluten was hidden. It makes it very difficult. I wish they would do everything the same no matter if it is here or in the US and I wish they would list everything.

Nicole, get over to the doctor and have him do a skin biopsy. It does not hurt all he has to do is scrape the skin around the rash. If not have him refer you to a dermatologist and tell him to do it at urgent. I am sure it hurts a lot (mine have) but I would embellish it to get the message home.

Hello everyone,
I bought some Pepito corn tortillas. I am not crazy about Mexican food or tacos but thought maybe I could use them as "wraps" Does anyone do this? Any recipes? Do you use them hot or warm them up? What do you think is the best brand that you find in the local store. Thanks Cindy
I sometimes heat them up in a fry pan with a bit of oil, or I heat them up in the toaster oven or microwave. I like the microwave it makes them moist and if you do a few min in a plastic bag for a about 30ish seconds then, it becomes soft and I can use it as a wrap or for enchiladas.

You are asking for a lot of problems if you don't completely cut gluten out. I mean you have to be careful not to stir gluten containing foods and gluten free foods with the same spoon...you have to be very very strict. There are no levels of celiac...you have it or you don't...you have to avoid it or you don't...there is no halfway point. Some people may not get symptoms but that doesn't mean they can eat it because it still does damage.
It's like being pregnant. You either are or you aren't, your not sort of pregnant and you are not sort of Celiac.
I would pay a lot of money for one of those!!!!!I can blow them up to poster size for blackmail reasons and sell the on Ebay.

Prednisone is the evilest drug of all. Every time I have a serious asthma attack they try to feed me the stuff, or a serious allergy reaction. I try to fight them tooth and nail because I will gain 5 lbs a day and have a face and a butt the size and same shape as the moon. It also makes me very psychotic.

I too eat the 70% dark chocolate and it does not contain barley malt.
With ya there Ursula...can't live without my piece of dark chocolate every day!!
I have not seen the dark chocolate or I would have ate them first.

Welcome to the board. I have been gluten-free since Nov 28,2005 and without this board I don't know how I would have ever survived. We are like one extended family, so like a family sometimes we debate things and have different opinions. However, we all basically get along and you can learn more here than anywhere else. There are no stupid questions here. Everyone has different lengths of time it takes them to get better. So although some things changed within the first week for me there are still things that are not all super duper. I certainly know when I have been glutened and I can tell within five minutes.

I'm one who reacts strongly to grain based alcohols. I can drink potato vodka with no problems but react strongly to grain vodka. I can drink white rums, most unflavored rums are okay but I would check the spiced to be sure. I can drink tequila of course, but it makes me very uninhibited so I stay away from it
Reactions to grain alcohols vary amongst us. I don't think it is due entirely to the length of time symptomatic but more to the particular genetic form of celiac that you have. Just as all of us don't have Dermatitis Herpeformis and not all of us have gall bladder problems or the neurological component some of us will react to grain alcohols and some will not. I found the most obvious reaction was the length of time it took to get intoxicated, I show extreme symptoms of drunkeness and get a real bad 'hangover' from grain alcohol after 2 drinks, grain free I can sip sensibly ( 1 drink an hour or less) all night with no aftereffects
I am the same way. If I was to have one drink of grain based alcohol now, I would not only be drunk out of my mind but sicker than a dog well into tomorrow. But if I was to drink say three four oz glasses straight of tequila I would be fine. I may be a little drunk because of our altitude but that would be it. I could drink many rums without much effect outside of a little drunk just not our wimpy rums but the 120% and 150% Jamaican rums and that is because of our altitude again. In Jamacia and Cuba I could drink most of the day there before even being drunk and no hangover. Going to Jamaica was the only drinking I have done in a year.

There used to be a very nice doctor on the board. She would post recipes. However, people attacked her also and she left. So not the first dr, just the first doctor that has stayed .

That is too bad. I guess that was definitely before my time on the board. As Vincent said many times people tend to forget that everyone is a real person on a forum with real feelings. Just because they are doctors doesn't mean they don't have feelings. I guess society as a whole makes them seem like they are not real people.
I have had a few good doctors in my time and the first two doctors to clue into this years ago, like thirty years ago would have been the Alergist and Gynecologist I had then. The Alergist found the wheat etc. allergy and said there was more underlying problems with that but he could not do those tests. The Gynecologist also said the same things. Like I said at one point I had to see an Oncologist who was also great. My dentist was the one in the last year who said it was more than a tooth issue.
I will correct and say the worst doctor problems I have had have been with GP's, GI's, and Endocrinologists and almost all of those have been definitely in the last 20-25 years. It easy for us all to feel so beaten down and it is sad that the ones that are bad or don't seem to care ruin it for others in the medical field.
We all just have to remember that when a doctor is here it is because they either want to find out more or they have this disease (or both), just like us.
So now that we have let Radman know it is not him we are mad at, we are just generally angry over having had this drag about without knowing for such a long time. It isn't his fault it is the fault of those who would not help us originally. These are the things we have to keep in mind.

I hope nothing else does that, would be terrible. I have so many intolerances it would be a real ordeal to find out which did what.

We could sell T-shirts that say, "#5, with added attractions...." and donate profits to celiac research!
And everybody would wan't to know what the "added attractions" are and those will be a big secret. I think those would be great t-shirts.

I haven't been on in a while and first saw these posts and was somewhat surprised to see so much anger directed at another person coming to us for help.
Glad to see you worked it all out!
I think perhaps a lot of us did not realize how angry we all were with doctors. Unfortunately the first doctor on the board got jumped. Now, we are just trying to get him drunk and get him to dance on the table so I can get some pictures.

so this is interesting
Skoki's sister can drink scotch (grain based) without a problem despite gluten sensitivity,
but Rusla can only drink non-grain based alcohol (tequila, vodka, wine, rum).
Could it be that there are minute amounts of small protein fragments (peptides) in the grain distillations that only the very sensitive would react to?
This would relate to the threshold level of gluten that we all may have, and it may be somewhat difference for each of us.
I myself have strong gut reactions to beer, but minimal to scotch and bourbon. I suspect lots more gluten in the beer.
Others want to weigh in on there alcoholic beverage tolerances?
You may be on to something. I could never understand why if I even smelled beer why I would vomit. Also when my shampoos were heavy with wheat, my scalp would break out. Now, if I even get a few crumbs into anything I get violently ill.

well, Vingar is the same deal (execpting if you have a YEAST problme..) and neither my son nor I react to products with vingar in them. Thats as close as I get, I just not what you call a drinker
I am not much of a drinker either. I still have Cuban rum celebrating it's almost third anniversary of arriving to Canada and living in my house in it's virgin state.
Also Heinz white vinigar is gluten-free.

Who drinks what and gets away with it? (celiac wise)
I used to get sick on everything except; rum, vodka and tequila. Now I know why because they are not grain based. Also on occasion I drink white wine and champagne.

I cant stand the taste of soy, I have tried a few now.

May I suggest Toffutti Marry Me bars or fudge bars they are dairy/gluten-free and taste just like ice cream. They are the only of their ice cream type line that are GFDF. Also many of the Rice Dream ice creams are GFDF, I think Soy Delicious is as GFDF. No dairy sucks but I know where you are coming from. Philly Swirls are great.

So Vincent, how do you know that the gluten is removed in the distilling (though it makes sense)?
If this is the case, then I agree with the Makers Mark on the rocks. Of course a margarita or tequila shot on a more festive occasion is perfectly safe irregardless, which is nice to know.
But still, sometimes there's just no substitute for a cold beer, and I am fairly certain my local club would laugh heartily if I inquire about gluten free beer. Besides, most of the time the beer socials are around the neighborhood at friends houses, porches, or barbeques. I guess I could drink wine like the ladies and let them think I'm too snooty too drink beer anymore. I think snooty is better than panzie. I think.
I think you should be that uppity snooty wine drinker, who dabbles in tequila.

Ha! I do not like talking on the phone. Now my older brother would spend and still does spend hours on the phone.
