    Actually, while we're on the subject of dairy intolerances, I have a question to add to Janet's: Why is sensitivity/intolerance to gluten potentially life-threatening if not treated (cancers, malabsorption diseases, neurological affects), but lactose intolerance is not? I keep hearing how if one can toleratre the symptoms of LA, it's fine to consume dairy...

    Good luck today with the specialist, Janet. DS Jack told me shortly after he started gluten-free eating that it really wasn't a difficult way to eat. We were discussing other food intolerances and allergies, and his eyes suddenly widened in alarm as he said, "Oh! No WAY could I stop eating milky and creamy things!" Kids and milk....     My husband just got his official gluten intolerant diagnosis, so now there are three of us...DS is celiac, and DD chooses to believe her negative blood panel and continue to eat pizza and burgers--for now. I have never been a real beer drinker, so I didn't bother to search out gluten-free beer when I was diagnosed. However, my husband really enjoys a beer...
