So far I have taken out gluten (of course), dairy (casein-so that means non-dairy as well), soy, corn (for now), eggs, coffee (even decaf), non-herbal tea, and now I'm thinking citrus fruits because of these stupid knee pains that won't go away. I also don't eat anything processed anymore, not even candy. Not for a while anyway. The gluten is obvious...
  2. Hi everyone! Well, when I was eating gluten, I was having HORRIBLE KNEE PAINS ALL DAY LONG. Well, now that I am gluten free, the pain has subsided, A LOT, but not completely. When I sit down for too long (which is what I do at work everyday), they hurt. Not as bad as before, and they don't hurt when I walk anymore, but it's this annoying lingering pain...
  3. Yeah, thanks Nancy! Even though I have known for a while how I feel off the gluten and on the gluten, and the ENORMOUS difference between each, I'm glad I got all of the tests done to know exactly where I stand. But like I said, even if I didn't get a clear diagnosis, I would have stayed away from that junk forever anyway. I've been waiting about 7 years...
  4. Hm....well, true about her being older and "living a little" with the gluten. Probably being off of it for a while, it would take a lot for the symptoms and all of the damage to come back again.

  6. Nancy, What is threelac? I think I may have a problem with yeast too because I get yeast infections often. Everytime I try to go on the diet though, I mess it up by eating peanuts or peanut butter. That's like chocolate to me these days because I can't have anything else with the taste and texture. It's what I run to when I have a craving for chocolate...

  10. I know that for Celiac disease, which is only a specific kind of gluten intolerance, you can never have it again. But what if I don't have the actual Celiac gene and I just have gluten sensitivity......does that mean that it's a whole different story and it will eventually go away?

  15. If you get a bread machine, which I think is worth it, the potato bread is the BEST! It comes out fluffier than rice, at least I think so. I would say homemade potato bread is the closest thing to real bread. My step-Mom made it the other day and EVERYONE was eating it, a lot of it, and not everyone is gluten intolerant!
  16. Thanks ladies, that's a good point. I guess Quakers is a no-no now, but not because of the corn, necessarily. It could have been contaminated......so now that my stomach has been better for about a week now, I will try plain old corn and see what happens.
