  1. We have traveled quite a bit with our 12 year-old celiac daughter. When we have access to a full kitchen, we do not bring our own pots and pans. I would find a good pan, and give it a few rounds of good washing, a lot of muscle power. This would be designated as her pan. I avoid any wood kitchen utensil. If they only have a wooden cutting board...
  2. I probably should leave your question to the experts, but I am going to answer it anyway... My understanding is that there are two genetic markers that can cause celiac disease in a person. They are DQ2 and DQ8. If you are not a carrier of DQ2 or DQ8, you will not develop celiac disease. If you do carry these genes, you still may not have celiac...
  3. My daughter also has type 1 diabetes. I was told that people with multiple autoimmune disease can have falsely elevated positive ttg. So, I got a recommendation to ask for this extra EMA test. This EMA was done in another lab. It finally gave us a normal ttg number, but a positive EMA. By the way, the same blood sample was also tested in...
  4. No number. Just positive. I didn't know you can get a number with the EMA. What does a positive EMA usually mean? I got different answers from two different GI specialist. One said positive EMA=bad. The other said ttg is normal, so it is all good, and to ignore the EMA.
  5. Anyone here knows how to interpret a negative tTg with a positive EMA ? My 12 year-old was diagnosed with celiac over 2 years ago via blood test and endoscopy. Our whole household went gluten free right away, and her ttg was coming down over the 2+ years, but never came into negative or normal range (Please just believe me that we are VERY careful...
  6. My 12 year-old was diagnosed with celiac 2 years ago. Her TTG is still not back down to normal. It did came down slowly, our TTG was over 100 when diagnosed, but our last TTG was 54, normal needs to be 20 or below. We too are a gluten-free household, so we don't contaminate her food. This has been a frustrating experience. We are scheduled for...
  7. I am also never offended by this question. I believe they ask this question to find out if they need to be careful with cross contamination. So I actually like it if my waiter asks this question. In fact, when the waiter does not ask, I volunteer the information that my daughter is allergic (she has celiac) to gluten, and to please tell the kitchen...
  8. Hello! My family is going to Whistler to snowboard for one week in February. This is our first time to Canada since my 12 year-old was diagnosed with celiac. Can our Canadian friends tell me if Canada is gluten-free friendly in general? Can I expect to find gluten-free menus in restaurants in the Whistler area? Are the food servers and chefs...
  9. Hi Josh, For traveling to China, you would need a restaurant card written in Simplified Chinese. Chinese cuisine is difficult for celiac people. There are 3 key ingredients you need to avoid while eating in China. 1) Soy sauce. This one is obvious. There are two types of soy sauce. A dark soy sauce, and a light soy sauce. The dark...
  10. Confused, I am actually on the same boat as you....confused (and frustrated) that my daughter's ttg is not normal after two years of eating a strict gluten free diet! My daughter was diagnosed in Feb of 2014 at the age of 10. She also has Hashimoto thyroid. At diagnosis, she was over 100. With our lab, our normal is under 20. Our...
  11. My 12 year-old has T1D and hashimoto's. When our endo informed us that her ttg was over 100 (under 20 being normal), she was willing to diagnosed her with celiac without the endoscopy. Our doctor said she has never seen anyone with TTG that high and not have celiac. We did not want to believe that our daughter has celiac, because she did not (still doesn...
  12. My daughter is a silent celiac, she has no symptoms. We also had a high ttg number from a blood test. We then met a GI doctor, and performed an Endoscopy, and the celiac was confirmed. We were very surprised. So, you should have an endoscopy done. It is only a 15 minute procedure, and they do put the patient to sleep for this procedure. I hope your...
  13. We went on a Norwegian cruise back on April. There were two major dining restaurants where we were able to order the day before. The cruise staff did tell us that we could eat at all restaurants (they can accommodate gluten-free dining) except the one Asian restaurant called Bamboo something. We did eat at a Japanese restaurant, and had sushi that was...
  14. If you have Celiac, you do have to worry about cross contamination. My 11 year-old was diagnosed with Celiac in Feb 2014. She does not have symptoms at all. However even without outward symptoms, the damage to her small intestine is the same. When we go out to eat, I always let the wait staff know that she has celiac disease, and that she gets...
  15. I agree with the other posters...I also thought that your daughter might have gotten contaminated in your own home, rather than at Starbucks. Our home went gluten free since my daughter was diagnosed too. The gluten-free standard for Celiacs are quite impossible!
  16. I am so sorry to hear that! We too struggle to bring our TTG number down. My daughter has been on strict gluten-free diet for over a year, and finally our TTG is 70. Which is a big improvement for us. My daughter has no symptoms, so I often don't know where the contamination might come from. I bought this gluten test kit, and we totally love it...
  17. My whole family eats gluten-free since my younger daughter was diagnosed with celiac. When we have guests staying with us, I provide them with their own toaster, and a container to keep their bread sealed tight. I gave them their own butter etc (Marked with their names with a sharpe). When we host dinners or BBQ etc. I just tell the guests that...
  18. I found this brand called spicely. They have a huge line of spices. They are organic, and certified gluten-free. I can buy them at a local market. Their website is simply spicely.com.
  19. Thanks for letting me know!! I did try baking it a second time with Active Dry yeast, and adjusted the baking time to 1.5 hours. It did come out nicely baked, but still dense. I was surprised, because I kept expecting a great loaf of bread from this recipe!! So, I am glad to know that perhaps it wasn't me doing something wrong. It is a bummer...
  20. Don't know anything about colonoscopy, but I was there for my then 10 year-old's endoscopy (almost exactly a year ago). It was pretty fast, and I believe it is considered a minor procedure. The whole process was explained to my husband and I, and our child. It was very reassuring and not at all stressful. The doctors asked me to stay in the...
  21. If you are planning to make gluten-free bread on a regular basis, you most definitly should get a bread machine with gluten-free settings on it. I have been making a loaf of bread for my daughter every week since I got this machine. It is so easy. All I have to do is to put the ingreidents (wet ingredients, then dry ingrdients on top), push a couple...
  22. My America's Test Kitchen white bread was a bust. Bummer! It came out of my bread maker dense, it appears to be not fully rised or baked. In fact, there were several purpleish colored wet spots inside the loaf when I sliced it. The flavor itself was quite good. I think I just don't know how to take this recipe to work in the bread maker. ...
  23. Thanks! That's good to know. I am an inexperienced baker, and I was worried that you can only use Active Dry Yeast in the bread machine, because all their gluten-free recipes in the book use Active Dry Yeast. I will use the Instant yeast tomorrow according to the American Test Kitchen recipe.
  24. Hello, I just bought a Zojirushi Bread Maker. The bread recipe it came with said to use Active Dry Yeast. I used that recipe last week, and we loved our first loaf of gluten-free bread. Tomorrow, I want to try a recipe from the American Test Kitchen, but that recipe is using Instant or Rapid rise yeast. Do I have have to use Active Dry Yeast...
  25. Our first homemade gluten-free bread was a big success. It came out of the machine looking beautiful. It has a nice fluff to it, not dense. We just had it for dinner. Fresh, warm gluten-free bread tasted so good. My celiac child is so grateful, and our whole family enjoyed it. This machine is easy to use, just follow the instructions, toss in the...
