  1. I don't add any extra liquid. I just follow the basic recipe in my cookbook and go by "feel" too. Once the bread is dry, it seems to act just like other dry bread cubes. If you put too much liquid in it gets a little too mushy.
  2. Have you increased your sugar intake significantly? There is a definite correlation between sugar intake and trigliceride levels.
  3. Just a few suggestions. Use sweet rice flour to thicken the gravy and white sauce and no one will ever know. It doesn't lump like regular flour, so it's actually easier. For stuffing, try Ener-G Foods Light Tapioca bread. Cut into cubes and dry in the oven. Again, I bet no one will notice. I make stuffing from either the light tapioca or brown rice...
  4. I've taken my own food to other people's houses countless times. Are you going to your grandmother's house first? If so, make up a plate of leftovers that you can take to your in-laws'.   6. Have you tried eliminating soy? I know I wouldn't have gotten better if I had only eliminated gluten. For me it was (and still is) gluten, dairy and soy.

  8. A gluten-free crust is really easy. Use gluten-free ginger snaps (Mi-Del or Trader Joe's) or Pamela's ginger cookies (dried first) and make just like a graham cracker crust. Or make a nut crust. Really, it isn't that hard! (The hard part is not being able to eat the cheesecake because of the cheese... )

  11. Cyberprof - I think we've been to the same places. People rave about the food from them, but I thought everything tasted like the "flops" that I used to throw away.   13. I've had the best luck with baking by following "regular" recipes and using simple flour mixtures. I use Betty Crocker and all my old recipes for almost everything now.   22. I've been working on compiling some fairly easy and kid-friendly recipes that I can give to people who ask, "what can I eat that my family will like?".
