I actually had 2 that size. It's an 18" pan, so they were large pizzas. They actually served 7 (kids, hubby and me) with only 2 pieces left over.

Happy birthday a day early. Can you bake? There are great recipes on this sight for white and chocolate cakes. They were just as easy as gluten filled cakes and VERY tasty. I have served both to company. -
Most hotels either have small refrigerators or will let you rent/borrow one. It might be worth bringing some basics. Inside Disneyland there are lots of places to eat. Do a quick search on this sight and you'll get lots of info. Good luck at the 1/2 marathon. That's going to be my next challenge.

I've made blueberry muffins twice this week so far. Add the fresh blueberries right before you scoop the batter into the muffin tins. Just fold them right into the batter. They will be perfectly cooked when the muffins are done. Works great with pancakes too! -

It certainly sounds possible. I'd ask the pediatrician to do some tests while he's still on gluten and then try the gluten-free diet no matter how the results come back. My 11 year old son has had some behavioral issues that went away when he went off gluten. We're doing a challenge right now and some of those behaviors are slowly creeping back in. We... -
Hmmm, the guacamole was on the very end at this one, not even near the lettuce and just past the sour cream. I didn't eat anything else yesterday that it could have been. I'm REALLY careful and make almost everything from scratch. I felt great until halfway through my meal, so I know it was that. Oh well, cramps are starting to subside a little bit.

The frustrating thing is that I watched the whole process - clean gloves, only working with my food, only one person touching it. All I had on it was rice, black beans, chicken, mild tomato salsa and guacamole. No problem with the lettuce or cheese since I didn't eat any. Please pardon the ignorant question. I haven't had Chinese food in 10 years and this thread is making me hungry. Are any of their dishes also soy free? I know this is a stretch, since all Asian food is usually full of soy sauce.

Enjoy the butter, it's better for you than Crisco. Butter is full of saturated fat, but Crisco has hydrogenated or "trans" fat, which is very unhealthy. If in doubt, go for a natural product over a manmade one. -

I started eating Spelt a few years ago, thinking that because I was allergic to wheat and had avoided it for 7 years, I could add spelt and be okay. Looks like you have most of the info you'll need. Just wanted to add that there's a big health food co-op in Mt. Vernon, kind of on your way to the ferry in Anacortes. And there's a HFS on Orcas (in the town of Eastsound, I believe) that carries a lot of gluten-free stuff. We'll be in the San Juans in August too - it's so beautiful up there!

I mix: 3 C Br. Rice Flour 1 C Potato Starch 1/2 C Tapioca Starch 2-1/2 tsp. Xanthan gum Sometimes I will add 1 C Bob's Red Mill gluten-free flour, but not always. I can't figure out why people pay $7 a pound for other flours when this mix works great with almost everything. I just made blueberry muffins this morning for my kids a couple of girls... -

I use the Bette Hagman's basic gluten-free flour mixture and put in about 1/2 tsp. of xanthan gum per cup when I mix it up. If I'm making quick breads, cakes or cookies I don't add any more. If I'm making pizza crust or noodles I add a generous 1/2 tsp. per cup additional xanthan gum and it works well. -
I've posted about this before, but it's been a while and we have lots of new people. I'm wondering if anyone else has had problems with their kidneys, specifically Nephrotic Syndrome or Minimal Change Disease. I was diagnosed about 3 years ago with MCD and discovered that gluten-free made a huge difference and I have been in remission for almost 2-1/2 years...

Getting checked out by a rheumatologist would be a good idea to rule some things out. You might also consider that you have other food intolerances. I had horrible arthritis in my hands and most other body parts and it got better after I eliminated wheat/gluten, dairy, eggs, soy, peanuts, all meat except fish and sugar. I have used slivered almonds to replace oats in recipes with good success. I'm wondering if rice protein powder could be used in place of the powdered milk? Although I wouldn't put a whole cup of it in... It looks like it's in there for nutritional value, rather than for holding the bars together, so maybe some rice protein and ground flax seed would work...
