  1. You might also try "Good Karma" brand Rice Cream. I think their website is www.goodkarmafoods.com. Their carrot cake flavor is really good.
  2. You bring up a good point about the "gritty" factor. I get Lundberg Farms brown rice flour and it isn't nearly as gritty as other br. rice flours I've had. So my mix isn't usually gritty, but I've made it with different brands and it has been.
  3. I don't buy the pre-mixed gluten-free flour mixes either. They are way too expensive. I use a modification of Bette Hagman's basic mix. It works for everything I make. (Sometimes a little bean flour is good for some "spring" in certain baked goods, but this will work.) I buy the flours in bulk, so it costs just over $1 a pound. 3 C Br. Rice Flour...
  4. Hmmm, interesting. The only thing that has damaged the finish on my waffle iron is scraping the waffle off when I haven't used NS spray. I only use the olive oil spray from Trader Joe's.

    ARCHIVED Hello

Welcome! I'm from a bit south of you, in Federal Way, but nice to see another Washintonian on the board.
  6. I agree that a regular waffle recipe, using a gluten-free flour blend, should work. I make the recipe out of Betty Crocker, with gluten-free flour and egg substitute and it works great. I do add an extra 1-2 tsp. of oil though. The biggest problem I had at first was that they stuck, so I make sure to heat the waffle iron thoroughly before spraying on the...
  7. This is kind of interesting to read about everyone elses' hair. Add me to the club of people who don't like their heads touched. I had perfectly straight, white blond hair as a child. It started getting darker at about age 6-7 and when I hit puberty got curly. Now it's REALLY curly (think Shirley Temple), fairly thin and getting a few gray hairs around...
  8. Sorry you're feeling so yucky. I thought for sure my Celiac gene test would turn out that I had at least one of the main Celiac genes. I had ALL the symptoms and looking back on my life could see evidence from childhood. So, imagine my surprise when the tests showed I didn't have either Celiac gene. My doctor told me that this ruled out Celiac completely...
  9. I was supposed to have relatively minor surgery to repair a hernia. (Note - I'm too old to do flips and toe touches on the trampoline .) When the doctor got in there it was "more extensive" than she had thought, so it was a 2 hour surgery, a 3-1/2 inch incision and major PAIN. I'll be missing two weeks of work rather than one, since I'm not quite up to...
  10. I'm a little delayed on trying the cookies - having surgery has set me back and I'm still nowhere near recovered. I'll be trying your recipe first, Jen, since I have all those ingredients on hand.
  11. I have to second the motion for the Good Karma Rice Cream. The vanilla is pretty good - better than Rice Dream and the Carrot Cake is absolutely DELICIOUS! I just found it at Trader Joe's a few weeks ago for the first time. It might not be soy, but it's worth trying. I'm hoping TJ's starts carrying the other flavors.
  12. This reminds me of when I went dairy-free and got WAAAY worse. I discovered the problem pretty quickly though - I substituted soy milk for all the regular milk I'd been drinking. The trouble was that I discovered that I'm more allergic/sensitive to soy than to dairy. So, I say this because I wonder if you've substituted something for the wheat/gluten...
  13. It's not quite like excema. I don't think the doctors/dermatologists quite kow what it is. It's small - like the head of a small pin and some of them are separate and some group together. They are bumpy and sometimes itchy. When they itch, sometimes there is a very small amount of fluid inside when I scratch, but it usually seems dry. It doesn't go away...
  14. I have psoriasis. I know I don't have DH. Every doctor I've ever seen has told me that my psoriasis is "very unusual". One said that it's actually excema along with the p. Over the past few days, as I've eaten very little because of having surgery, I discovered that it got better with partial fasting (already knew this) and then got worse when I ate a...
  15. I use rice flour, cornmeal, paprika, garlic and salt, after dipping the chicken pieces in some olive oil since I can't do eggs or milk. I've also used crushed up crispy rice cereal or Corn Crunch 'Ems cereal to give it a crispier crust.
  16. My son, adopted from Russia, came to us with latent TB. He was on the INH for 9 months, had no side-effects and all is well now. I did give him his vitamins regularly and tried to keep him on low sugar and probiotics while he was on the medication. It's really nothing to worry about - just sounds awful when you first hear about it.
  17. I've tried searching for a recipe for quinoa flake cookies and can't find one. We're hungry for oatmeal cookies here and I think this is the closest I'll get. I'm home recovering from surgery and a little loopy on codeine, but want to try baking when my mom gets here in a little while. Anyone have a good recipe? I smelled the flakes and they have a...
  18. Like I said, the nurses were very nice and helpful. They did their jobs well. But I still think that it is inexcusable for someone to go to college to become a nurse and NOT know that saltine crackers are made with wheat flour or that pudding contains milk. I took nutrition alongside all the nursing students when I was in college. We learned things like...
  19. I had day surgery on Tuesday and made sure (thanks to Debmidge) to tell them that I needed everything to be wheat/gluten free in the recovery room. (The anasthesiologist was great about all my allergies/sensitivities and chose appropriate medication.) The two main nurses I talked to were a little clueless about food though. When I explained my dietary...
  20. Thanks for your responses. I should have given more information. I make everything gluten-free in our house except for sandwich bread for my hubby and kids who aren't gluten-free. This son is the one that has horrible gas, gets constipated regularly, is a bedwetter, has eye twitches that are not Tourettes and was referred for testing for ADD last year...
  21. Here are my son's results. Gluten Sensitivity Stool Test Fecal Antigliadin IgA 9 (Normal Range <10 Units) Gluten Sensitivity Gene Test HLA-DQB1 Molecular analysis, Allele 1 0301 HLA-DQB1 Molecular analysis, Allele 2 0301 Serologic equivalent: HLA-DQ 3,3 (Subtype 7,7) A lot of you know a lot more than I do, although...
  22. Glad you got your results. It's really not so bad being gluten-free, dairy-free and soy-free. I've been doing it for over 10 years and wouldn't trade my good health for a few good tasting foods. I have question for you though. How long did it take to get your results back? We've been waiting almost 3 weeks for my son's results. The info said we'd...
  23. My xanthan gum doesn't really have an odor at all. Are you sure yours isn't past the pull-date? Hopefully that isn't why you got it so cheap.
  24. Blackberries can do it too!
