Aged cheddar cheese shouldn't have much lactose in it to start with. If you can handle yogurt, you should be fine. -
Hmmm, rice or almond milk for the milk, but NOTHING is as yummy, rich, fatty or decadent as real whipped cream.

I'm not sure it would be possible to make dairy-free, soy-free, egg-free "egg"nog. I'm positive that flax seeds and Ener-G egg replacer wouldn't work for it.

I've only been a lurker on this thread, but had to come share your pain about no eggnog at Christmas. I haven't had eggnog for 10 Christmases and for some reason was just talking about it yesterday and feeling sorry for myself. Do you think there's any way to make "fakenog" with almond milk, thickener and spices?

Sorry I don't have an answer for you. But I wonder the same thing. I don't have the Celiac gene(s), but have had almost every symptom that would point to Celiac. I agree that you should continue to consult his pediatrician about this. I had horrible arthritis that went away when I eliminated several foods, not just gluten. Even now, almost 10 years after the worst of the joint pain stopped, I will get achy joints if I eat any significant amount of soy or dairy. I never cheat with gluten, so I don't know what would... -

Most flavors of Rice Dream (frozen) are okay. The Cookies n Dream is NOT - don't know why it's on their website as gluten-free. I've eaten all the ones that look okay from ingredients and the website and been fine. -

No, don't use additional baking soda. Just try adding the vinegar. I'm curious about your recipe though - all my muffin recipes call for baking powder rather than baking soda. -

You also might try adding a tsp. of vinegar and 1/2 tsp of baking soda. It helps make the bread/muffins lighter and therefore bake better. Also, what type of flour did you use? If there's a lot of bean flour they tend to be more gummy, in my experience. -

My 13 yo daughter is 5'7-1/2 and my 15 yo daughter, who put herself on gluten-free because she feels better sans gluten, is only 5'2, much shorter than the 5'6 - 5'8 that was predicted for her.
