ARCHIVED I've Decided What To Do..
lonewolf replied to JerryK's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I got mine done at my naturopath's office. It's just a blood test that they send to a lab. A few "regular" doctors do the testing too, but probably not in Kaiser. See if Kaiser will refer you to a naturopath (some HMO's will do this) to start. If not, call around and see who in your area does it. Keep eating "normally" until the test. I discovered... -
ARCHIVED Do I Belong Here?
lonewolf replied to a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Don't worry. I'm sure a moderator will take care of it for you. Welcome to the forum. I'm no expert and it's getting late, but I agree with tarnalberry that it's not outside the realm of possibilities. I didn't have "classic" Celiac symptoms either. -
ARCHIVED Has Anyone Experienced This?
lonewolf replied to Mime's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Welcome to the forum. You've come to the right place. Your daughter is so lucky to have such an on-the-ball mom! Way to go! It sounds like you've found the answer - hope the Enterolab results confirm it. I can't remember if I ever had pain where you describe - it's been over 10 years since cutting wheat and most gluten out of my diet. Hopefully someone... -
ARCHIVED Favorite gluten-free Thanksgiving Recipes
lonewolf posted a topic in Gluten-Free Recipes & Cooking Tips
I know there are several Thanksgiving threads going on, but I thought it would be fun to consolidate all the recipes in one thread. There are a lot of talented cooks/bakers on here, so please share your knowledge! I have several recipes that are gluten-free, dairy-free, egg-free and soy-free, so mine will mostly be simple and for those of us who have more... -
There are LOTS of people on here who are great cooks and have good ideas. I think I'll start yet another Thanksgiving thread for people to post their favorite recipes. I'll start with pumpkin pie.

Welcome! Sounds like you're on the right track. Good for you to take your health into your own hands! Please stick around and feel free to ask lots of questions.

I use rice milk - like jmengert - and use less. I was thinking about experimenting with Vanilla Almond Milk, since it's thicker. I thicken mine with unflavored gelatin, since I can't have eggs. It's like making pumpkin jello or pudding on the stove and then pouring it into a pre-baked crust. You have to learn to think outside the box! For stuffing...

You could try adding a tablespoon or so more flour and try chilling the dough for 15 minutes before baking. What flour are you using?

Thanks for the input everyone. Interesting to know that a boxer/lab/pointer could have a Pit Bull shaped head. That might be what we're seeing. We saw the two "parent" dogs, but as everyone knows, a female dog can have puppies with several different "fathers", so we can't know for sure that the male dog we saw was really the father. We're planning...

ajay, You've gotten some good advice. You can also buy (shudder) a premade pecan pie if you don't want to "make" them eat everything gluten-free. I like Patti's idea of using maple syrup and a gluten-free crust. For rolls, I've made a batch of gluten-free Pantry Country French bread and put it in muffin tins. Put them in the oven 20 minutes...

Oh no! You can still have a great meal. Can you eat Cornish Game Hen? If so, bake one for yourself. It will look like your own mini turkey. I'm allergic/sensitive/intolerant of gluten, eggs, dairy and soy and I still have pumpkin pie. Who told you you can't? You just have to make it homemade with a few "tricks". Mine is more like a pumpkin jello...

Slightly off topic for this thread, but I love my "Nourishing Traditions". It's changed the way I look at and think about food.

ARCHIVED As News Gets Out...i Have Celiac Disease
lonewolf replied to Lisa's topic in Coping with Celiac Disease
Kathy Ann, I PM'd you. I have another question though. Can you eat turkey, potatoes, rice, chicken broth, Ener-G brown rice loaf, pumpkin, gluten-free rice milk, Spectrum shortening, flax seed meal, yams, tapioca starch, maple syrup and most spices? If so, I can set you up with some pretty good recipes for Thanksgiving that are gluten-free, dairy... -
As you can see from my avatar, we have a cute little puppy. Actually, he's 3-1/2 months old now and not so little, but still cute. We were told he was a lab, pointer, boxer mix and saw his "parents" when we picked him up. The daddy dog looked black lab and pointer and the mother looked yellow lab and boxer. He was cute, the parents looked friendly and...

Sweet rice flour will say, "Sweet rice flour" on the label. I think they're ground from different varieties of rice. I have a gluten-free, dairy-free, egg-free gingerbread people/house recipe posted on this site. I think this is the link: Open Original Shared Link We've been making it for years and my kids love it.

ARCHIVED Baking For The Rest Of The Family..
lonewolf replied to a topic in Coping with Celiac Disease
I think I understand what you're asking. I do NOT bake anything in my home using gluten-containing flours. Three of us are gluten-free and the other three have no complaints. There's too much chance of cross-contamination with wheat flour in the kitchen. I do bake quite often. This morning we had pumpkin pancakes. Earlier this week made chocolate... -
When I first got sick I had Group Health, a big HMO like Kaiser. They were happy to send me to a specialist - with a 6 week wait and happy to give me all kinds of drugs. When I asked about changing my diet the doc. told me that diet changes were all "quackery". (This was a rheumatologist, not a GI.) Then they didn't want to help me any more. I went to...

ARCHIVED As News Gets Out...i Have Celiac Disease
lonewolf replied to Lisa's topic in Coping with Celiac Disease
I really do understand how hard this can be at first. When I found out that I couldn't have wheat, dairy, eggs, soy, beans and multiple other foods I literally cried. Now, over 10 years later, I can make most things that I ate before. The things that I can't make (cheesecake, quiche, etc), I grieved and have let go. I had debilitating arthritis, along... -
Yes, it could be soy - it could be several things. You need to stay ________-free for longer than a week to figure it out or just go get some testing. One way to home test is to eat nothing but rice, lamb, fish, carrots, lettuce, kiwi and sunflower seeds for a month. (Maybe add a few other low allergenic veggies and fruits.) Then add one new food each...

I have a good friend who had a similar experience and discovered that it was the peel of the apple. She can eat them if she peels them first.

ARCHIVED Liquid Immodium
lonewolf replied to lonewolf's topic in Gluten-Free Foods, Products, Shopping & Medications
That's what I was thinking too. But I didn't think of it until AFTER I'd downed the nasty tasting stuff and was on my way to work. I read every label on everything - I don't know why I didn't read this one. My stomach definitely has that yucky feeling. Good thing the bathroom is next to the auditorium where I teach! -
ARCHIVED Liquid Immodium
lonewolf posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I'm at work and don't have time to search any more for this answer, hopefully someone will just know. I'm having the big D, not necessarily related to a glutening. Out of desperation, I took some Immodium this morning, for the first time ever, because I have to be at work today. We had it in the house for some reason and I hate taking medication of any... -
ARCHIVED Soy Flour Substitution?
lonewolf replied to hineini's topic in Gluten-Free Recipes & Cooking Tips
Good luck! We just had Pelmini for dinner last night. I was out of br. rice flour and used white and it turned out okay, but the br. rice flour works better. -
ARCHIVED Positive Experience At Work
lonewolf replied to lonewolf's topic in Coping with Celiac Disease
I've also found that it really is that easy. I gave my SIL a big cannister of gluten-free flour mix and she's made cookies twice - she was so surprised that they turned out so well. She's a pediatric nurse and has given my flour mix recipe and cookie recipes to a few parents at the hospital where she works. I also gave my mom some flour and she was surprised... -
Could you put a fabric sleeve over it? That's what I have on my rolling pin. You can get them at kitchen shops.
