  1. I added a prayer for Mark too. Elementary PE teachers are special people!
  2. I've been making meatloaf without eggs for over 10 years. I don't even bother to substitute anything for the eggs and I've never had one fall apart. I used to use the flax meal/water, but then ran out once and discovered it didn't need it. I leave out eggs for meatballs too and they've never fallen apart. I use ground turkey - maybe it works better than...
  3. Adding a little bit of coconut oil would work well too. It will harden with the chocolate and give it a nice texture.
  4. Good for you! If you do discover that you are gluten intolerant, which it sounds like, you'll be so happy by how well you feel that you won't mind the lifestyle change.
  5. Good point! I wonder too if people with DQ2 and DQ8 are more succeptible to intestinal damage, hence showing positive on the biopsies, while people with other gene patterns have different symptoms but still react to gluten just as badly, but in different areas of the body. It seems that people here could be put into categories like: A) Developing biopsy...
  6. Most Fred Meyer stores have gluten-free sections. If you're near the South End, there's a health food store in Kent called Nature's Market that has a lot of gluten-free stuff and there's another hfs called Marlene's in Federal Way. And if you look in the yellow pages for health food stores in your specific area you should be able to find something.

    ARCHIVED New Here!

Welcome! I'm sorry you've had such a rough time of it, but glad you found some answers. Please stick around and feel free to ask questions. As for cooking, there are lots of good cooks here, so maybe you'll be inspired.
  8. My favorite crockpot "recipes" are extremely simple. 1. Put chicken, boneless-skinless or pieces, or beef pot roast into the crockpot, add your favorite barbecue sauce, cook for several hours. Serve over rice or on gluten-free bread. 2. Put chicken or turkey - however much you want - into the crock pot. Cover with enchilada sauce and cook for several...
  9. I used Ener-G Light Tapioca and Trader Joe's Brown rice bread. I usually use Ener-G Brown Rice Loaf, but the store was out of it. I cubed it and dried it in the oven. I made homemade cornbread and dried that in cubes too. I mixed in onion, grated carrot, raisins, chopped apples, sage, salt, pepper and chicken broth and stuffed it into the turkey. I served...
  10. I tried a biscuit mix from a well-known manufacturer and was expecting delicious biscuits. The smell when they were baking was nauseating, but I decided to try one anyway. Half a little nibble was all I could get in - and it came out into the sink. We decided to give them to the dog. He ate one and threw it up about 10 seconds later. (I think that there...
  11. Wow! What a great article. Thanks for sharing it. I'm glad your daughter is doing well.
  12. Last year in my dh's extended family we bought 3 goats. We all found pictures of goats online, printed them out and put them in cards and tried to figure out who's goat was better looking. The kids all got way too much, something I'm trying to downplay, but at least the adults in my dh's family have decided that we all have enough. I told my kids and hubby...
  13. I can tell 30 minutes to an hour. The past two times (once in a restaurant, once at a relative's house) I felt sick before I got up from the table. But it can change. A few months ago I thought for sure I'd accidentally eaten something and was ready for a reaction - nothing happened. I've only been glutened a few times in the past year though. Each time...
  14. I had hyperemesis with both my daughters and was absolutely miserable both times. (During my first pregnancy I had actually lost 19 pounds at 20 weeks and lost 2 jean sizes ) My son wasn't as bad, I just felt nauseated without actually vomiting more than a few dozen times for the whole 9 months. I wish I had known about gluten and Celiac back then. ...
  15. Guhlia - you inspired me! I made onion rings tonight using Roben Ryberg's recipe. They turned out great and my kids all loved them. We'll be gong fat free for a few days though, not used to all that grease.
  16. I can totally relate. I was "diagnosed" with food allergies over 10 years ago and my in-laws were very skeptical and thought I was a huge hypochondriac. (We live within 5 miles of my dh's parents and 3 siblings and families.) After I recovered from the debilitating arthritis, they started being a little nicer, but there were still comments behind my back...
  17. I don't care for bean flours either. I can't stand the smell during baking or the taste of cookie dough with it. The most I've been able to tolerate is a bit of Bob's Red Mill G F Flour Mix added to the basic rice flour mix. (Bob's has a little bean flour in it.) I still don't have a really good bread recipe. It's harder without eggs My favorite...
  18. I hope it ended up working out, Judy! I've never used it, but the recipe looks like it has an awful lot of egg for a pie crust. I wonder if they had a typo on their package. Hope you had a wonderful Thanksgiving!
  19. We're very traditional with our menu too. Everything was gluten-free except for one pie that my mom brought. The funny thing was that everyone thought that her gluten-free crust was better and the whole pie was eaten. We had: Turkey Stuffing (in the bird) made with gluten-free bread, cornbread, apples and raisins, etc. Mashed potatoes-red potatoes...
  20. What are the ingredients?
  21. Whoops! That would make an interesting flour, wouldn't it? I make this ahead of time - I actually have a double batch chilling in my fridge right now. I'll be baking my pies later today and I know they'll be fine tomorrow. I wouldn't serve it to company on Friday though. I don't use eggs - just the egg replacer for a little better...
  22. I use 3 C Brown Rice Flour, 1 C Potato Starch, 1/2 C Tapioca Starch and 2-1/2 tsp. Xanthan Gum, sifted together 3 times. I actually have a double batch of pie crust chilling in the refrigerator right now made with this flour. Here's the recipe I used. 1 C Rice flour mix 1/2 tsp. Ener-G Egg Replacer (optional) 1/4 C Butter 1/4 C Spectrum Organic...
  23. Something even better than apple crisp is Raspberry Cran-Apple Crisp! Follow the same recipe, EXCEPT, leave out about 1/3 of the apples and substitute frozen raspberries (thaw before cooking) and half a package of cranberries. Guaranteed yummy!
  24. Interesting article. Thanks for posting the link. I wonder if it's only true for peanuts. I didn't know that people could outgrow an anaphylactic type peanut allergy. My nephew has almost died a couple of times by accidental exposure to peanuts - wonder if an allergy that serious could be outgrown.
  25. Hmmm, interesting. I was told by two different doctors that you tend to become sensitive (or allergic) to foods you eat the most. You've obviously had a different advice. If your body is reacting to a food, it seems like you just shouldn't eat it. You can supress a reaction by continuing to eat small amounts of a food, but that can also burn your immune...
