  1. I've only made Pamela's bread once, but it only came with one yeast packet. Consider it a bonus.
  2. Horrible dizziness was one of my symptoms when I was trying to add spelt into my diet (before I realized I was permanently gluten intolerant) a few years ago. I didn't realize it was related to gluten until I went totally gluten-free.
  3. Thanks to all of you veterans (and their families) who are reading this. We appreciate the freedom that you have helped us to keep!
  4. I think you made the right decision to pull her out. My 3 older children never went to preschool and had no problems with socialization. (My youngest is adopted and came from an orphanage with 55 other kids - he was negatively over-socialized.) I did make it a point to take them to Sunday School and get together with friends so they could play with other...
  5. My updated avatar didn't turn out as well as the original photo. Hopefully, you can still see that he's a cutie. We're still getting the, "Oh, is he a pit-bull?" comments, but I'm not so worried about it. I just tell people that he's a sweet dog and we're not concerned. A funny doggy story - Yesterday, when the kids and I came home from school the TV...

    ARCHIVED Eat Turkey

Maybe you could take your own little cornish game hen or your own food and just go for the social aspect. I wouldn't trust anyone to cook for me if they weren't completely experienced with gluten-free cooking.
  7. When I first started with my son, I gave him more sugar than usual. I think it made him feel less deprived. We've gotten back to a good balance now, which includes a little more sugar than I would like, but WAAAAAY less than the average kid. Instead of Panda Puffs, have you tried popcorn? Still something to snack on, but cheaper (if you pop it yourself...
  8. Soy can cause minor digestive upset like you described. Soy lecithin doesn't cause me trouble at all, and I react badly to soy. What this might be telling you is that large amounts of soy protein upset your stomach, but small amounts don't. Sorry I'm not much help - it's been a long day.
  9. Welcome! I'll just chime in with an agreement on the good advice you've gotten - especially that dairy might be causing you trouble too.
  10. My 11 year old son had similar issues last year. His teacher asked if I would consider having him tested for ADD. He is bright, but couldn't focus, was getting disruptive and his grades were slipping quite a bit. I had seen the same thing at home, and since I am gluten intolerant, decided to try the diet with him as well. His pediatrician agreed that...
  11. I make stuffing almost the same way as Juliem, but I use Ener-G bread, along with the corn bread, cubed and dried in the oven (250 degrees for about 20-30 minutes). I use a whole loaf of Ener-G Brown Rice Loaf and a whole recipe of cornbread. I use olive oil (about 1/3 C) instead of butter, but pretty much follow the same directions as juliem. I add raisins...
  12. Make up a batch of gluten-free Pantry Country French Bread in muffin tins - it will make 2 dozen. Time them so they come out of the oven just as you're sitting down to eat. Everyone will love them.
  13. Sorry you're having problems with your MIL, but glad you're doing what's right for your son. Have you sat down with your MIL and shown her the research on autistic kids and the gluten-free/Casein free diet? Could you turn this into a positive somehow by helping her to understand how much better he will be because of this way of eating? You think she'd...
  14. Welcome to the forum. It sounds like you've come to the right place. I don't know much about the itching, but all your other symptoms are pointing to Celiac/gluten intolerance. Please stick around and ask questions and let us know how your tests turn out.
  15. So glad to hear that Megan is doing well. I don't post often on this thread, but think of little Megan often and say a prayer.
  16. Patti - I've had the same thing and I think it's gas too. I assume "tuttle position" when this happens, to relieve the gas pressure/pain. Start on your hands and knees, then drop down so you're on your shoulders and knees ( with head turned to side) and your bottom sticking up. You'll want to do this when no one is at home or you'll be the butt (pardon...
  17. Welcome to the board! You've gotten some good advice. I wish that someone had discovered that I had a problem when I was 3 and apparently healthy. My health broke down completely at age 32 when I had 3 small children to care for. I wish I had known that one son and one daughter were gluten intolerant when they were 3. Maybe my 15 year old daughter...
  18. Welcome to the board. I'm so sorry you've had such a rough time of it. My health problems have been quite different, but I think others have had similar problems to yours. All of us have been miserable at one point or another, so you will have empathy here. I was once at the point where I hated food and was afraid to eat. It took time, but I got past...
  19. If it's called "Robin's" something, please don't waste your money. It's just as bad, if not worse, than the Ener-G. I think they substitute powdered rubber for the gluten and eggs.
  20. Try adding a tablespoon of coconut oil and a pinch of saffron to the water. When it's done cooking, stir in a finely grated carrot and a handful of raisins and let it sit for 5-6 minutes before serving. It has a kind of middle eastern flair.
  21. Oh, too bad you hadn't been warned about Ener-G breads. They are inedible unless toasted. Then they are edible with butter/margarine and jam. The other way to make it palatable is to pan-fry it with margarine/butter and a sprinkle of garlic powder. I don't know what this does to the bread, but it's the only way I can get my 11 year old to eat it....
  22. I have 4 kids who are now all older than your son. (My youngest is 9). I found that fighting over food never worked. I've realized that adapting what the kids are used to eating is the easiest way to make it work. I'll se cond the suggestions about meatballs - just follow the same recipe, minus the cheese, and use gluten-free breadcrumbs or even gluten...
  23. It's extra delicious with a few drops of peppermint extract. My kids all love it - even the 3 who have no problems with dairy.
  24. Hope it's okay if I cross-post this. All of these are gluten-free, egg, dairy and soy-free and no nuts or legumes. My 4 kids eat all of it. I'm sure you could substitute pork in several of the meat recipes. Breakfasts: Homemade pancakes made with egg replacer. Homemade waffles, made with egg replacer and coconut oil (prevents sticking) Trader...

    ARCHIVED Meals

Here are some ideas that I PM'd to a few folks who are also avoiding dairy, eggs and soy. If you can have the dairy, eggs and soy, you can still make them - and probably easier. Breakfasts: Homemade pancakes made with egg replacer. Homemade waffles, made with egg replacer and coconut oil (prevents sticking) Trader Joe's uncured turkey bacon...
