  5. I make Pelmini, which is basically the same as Pierogi. I use brown rice flour, potato starch, tapioca starch and xanthan gum. It always turns out great. If you do a search for "pelmini" on here, my recipe for the dough will come up.

Nine of those I was wheat, egg, dairy and soy-free, with not much gluten to speak of, and this will be my 2nd fanatically gluten-free Thanksgiving (still no eggs, dairy or soy either).   10. I agree with pretty much everything that others have said. It really doesn't have to be that hard. I am off gluten, milk, soy and eggs and one daughter is off gluten and one son is off gluten and milk. I have two other kids and a husband who can eat anything. We make it work and everyone eats the same food. You really should try keeping a gluten-free...
  11. If you're really worried, or if they're going to stuff it with gluten-filled stuffing, you could always bake a cornish game hen to take with you.
  12. Fiddle-Faddle - Thanks for this link! (I know I'm not Carla, but I wanted the music.) My son and I have been practicing it on our little recorder flutes so he can do something in our church talent show. It was the perfect song. It actually sounds good on my wooden recorder!

  14. I've had good luck finding tapioca starch and white rice flour in the Asian sections of local stores, but haven't seen brown rice flour. Have you seen the brown rice flour anywhere but in health food stores or online? I don't usually use the white flour for anything other than gravies and sauces.   15. My "recipe" is similar to Laura J's, but I use 1 loaf of Ener-G Brown Rice Loaf and 1 batch of homemade cornbread. I cube and dry all the bread (I always make a 22-24 lb turkey, so we use a lot of stuffing).   18. I use a similar recipe to Triticus Toxicum, but use brown rice flour and add xanthan gum. All my cookies turn out great and not too flat. 3 C Brown Rice Flour 1 C Potato starch 1/2 C Tapioca starch 2-1/2 tsp. xanthan gum Sift together 3 times to make sure the xanthan gum is evenly distributed.   23. I make pasta once in a while for a ravioli-type dish. I have cut the leftover dough into noodle strips and everyone in my house has liked them. They are a bit thicker than commercial noodles, but I think that all homemade pasta is.
