It does take some time to get used to gluten-free baking. Keep trying though, you'll get better with practice. I've been baking (or should I say trying to bake) gluten-free for 10 years, and I've only had success in the past 3. For me, it was finding a good flour mix - it all came together after that. Yes. It adds more fat, but also protein, so I don't worry too much. It also gives them a great texture. -

I use Ener-G Brown Rice Loaf and homemade cornbread for my stuffing. I take the whole loaf of bread, cut it into cubes and bake it in the oven until it is really dry. I make a batch of homemade cornbread, cool it, cut it into cubes and dry it too. Of course, I don't measure anything, but I put all the dry bread cubes in a big bowl, stir in a large chopped... -

This is SO GOOD! I can't eat soy, but the small amount of soy lecithin doesn't bother me at all. Our Trader Joe's has been out of it for a couple of weeks and I'm really hungry for it. Their website says they have 5 flavors, including chocolate chip mint, but I've only seen the vanilla and the carrot cake.

Oh, I just remembered one thing that I usually add to my chocolate chip cookies - 1/2 C peanut butter or 1/2 C almond butter. This makes them really extra yummy. (I usually do almond butter.) -

I do the same thing with waffles and pancakes too! My M-I-L was just asking me this morning for my waffle recipe and I told her it was from Betty Crocker, with just gluten-free flour and she was amazed. I still love a lot of the recipes in that cookbook and most of them are pretty easy to convert. -

Well, beyond the obvious, "stay gluten free", I don't have much advice. I do have a question though. Do you drink a lot of diet pop with nutrasweet or aspartame? I used to have a similar weird feeling in my brain, though maybe more like I felt my brain shook for just a second. I traced it back to Nutrasweet. Stopped drinking pop and the weird feeling... -

Sorry you're going through this. A lot of people on here seem to find out that they have other food intolerances after a month or two of gluten free. You could possibly be casein intolerant (not just lactose) and have problems with other foods too. I know for myself that I have to avoid gluten, dairy, eggs and soy. Just eating gluten-free wouldn't keep... -

I have a husband and 4 children ages 9, 11, 13 and 15. I only allow gluten-free flours in the house. I do allow "regular" bread, since it is cheaper and my husband and 2 kids have no problems with it. I make almost everything gluten-free. All cookies, cakes, brownies, muffins, pancakes, waffles, etc are for everyone. With practice you can make all those... -
I make up a modification of Bette Hagman's basic flour mix. I use 3 C Brown Rice flour, 1 C Potato Starch, 1/2 C Tapioca starch and 2-1/2 tsp xanthan gum, sifted 3 times. I store it in the refrigerator, since br. rice flour gets rancid more easily than white rice flour. I store my big container of br. rice flour in the freezer.

I'm in a hurry off to a doctor's appointment, but just want to mention that the content is great, but that you have several run-on sentences that need commas, and a couple that should be divided into 2 sentences. I used to teach English (to middle school students) and have an eye for editing punctuation. If you'd like, I could suggest a few minor punctuation...

I like Imagine Foods tomato soup in the aseptic package. It isn't condensed, but it's too strong to eat without diluting, so it might work. -

I technically don't have Celiac (don't have the main genes), but had horrible cavities as a child and into adulthood until I stopped eating wheat/gluten. So even if your daughter tests negative for Celiac, it might be good for her to be gluten free in case she has a different problem with gluten. -

Erewhon (sp?) and Barbara's both make gluten-free crispy rice cereals. They're easy to find in the Northwest, not sure where you are. -

I agree with Carla - it could be non-Celiac gluten sensitivity. I don't have the Celiac genes, but I do have the gluten sensitivity gene and I react to gluten very strongly. It would be a good idea to look into dairy, soy, corn and eggs too. All of these are common foods that can cause digestive problems. -

I've eaten it without problems. According to their website they only make gluten-free, dairy-free stuff, so I can't imagine how they could have CC.
