Thanks for posting this! I've been wanting to try coconut flour, but as I'm sure you know, it's pricey. Since I never liked soft biscuits (and now since dairy is a no-no), I'd leave that out if I ever get to try this. Can you describe the texture? Many times things like muscle weakness can be caused by a nutrient deficiency. For me it was B12 and magnesium. Have you ruled that out? Also, since dairy, eggs, soy, and other foods can become a problem after gluten-free, if you haven't already tried avoiding them for awhile, it might be a good idea. -

I had virtually no energy and couldn't stay awake until I started taking methylcobalamin (B12) and magnesium. My sleep cycles improved quite a lot too. And I agree that things like alcohol, sugar, processed foods, etc can drag you down. -

Well, I agree with the B12 part, but it does seem that many on this board who eat meat still find B12 supplementation essential. As for zinc, there are plenty of good vegetable sources for it, such as spinach, summer squash, asparagus, swiss chard, collard greens, broccoli, green peas, pumpkin seeds, sesame seeds, and mustard seeds, just to name a few. Well, there are mills that can do it, but they are expensive. Not to be discouraging, but I had looked into grinding my own flours, and unless I buy huge quantities of beans or grains, it turned out to be cheaper to buy the flour. I don't know about those specifically, but I recently heard vaccines have mercury, formaldehyde, and other nasty things. It might vary from year to year or brand to brand. I'd think Google might turn up something, or maybe the doctor knows? It wouldn't surprise me if they don't though.

Recovery times vary quite a lot from one person to the next. Diet does play a role, so as long as the diet is a healthy one, and he's not eating sugary things or other junk, I'd hope you'd start seeing improvement in maybe a week or two. Perhaps someone who's been through it will chime in. -

Well, some are lower than others, but you'll likely do better to make your own. I actually don't use all those starchy flours in my breads, because I like a more hearty bread, not "white bread". So it also depends on what you like. Though I haven't compared calories of different gluten-free breads on the market, one which I would think is lower is Open Original...
