  2. Oh wow Sweetzucchini thanks I didn't know about the hotline! Yes I am a gluten-free kitchen (household), I only thought about a shared kitchen for maybe 10 minutes. I am going to learnt o gluten-free bake. It is just a thing I adore. I see this as a major challenge to learn to bake great things gluten-free. I already made my first rice flour and almond...

  4. Thank you! This is one reason the gluten-free is so hard for me. I bake and make cakes. Both girls have always wanted me to make their wedding cakes. I just have to figure it out.

  6. I am newly gluten free. My second daughter (My daughter's Bestie from 6th grade) is getting married in september. Before diagnosis we decided to hold the wedding in my back yard. Since then, being the amazing daughter that she is, she has said well my wedding will be gluten-free. She wants A. for me to feel comfortable at her wedding. B. she doesn't want...
  7. I make my own gluten-free bread and it doesn't seem to bother me at all. I think the most important thing is to STAY gluten-free. If that means you need to eat a bit of gluten-free bread here and there, I think that is far better than falling off the wagon so to speak. Maybe just keep the harsher things to a minimum and see how they effect you. That is just...
  8. Dear Friends, Please stop saying that changing my diet will be easy. It is not. Please stop saying "at least its not....... that is really hard to deal with." Seriously? The constant stabbing pains that double me over in my stomach are not hard to deal with? How about the Migraines? the massive muscle cramps? The fact that everything you bring...
  9. "3. Folate Folate, a B vitamin, is absorbed in the last part of the small intestine, an area that’s often damaged by celiac disease. Folate helps produce new cells, and is particularly important in pregnancy and early childhood. Deficiencies can cause folate deficiency anemia (which is different from iron deficiency anemia), along with serious birth defects s...
  10. thank you karen.
  11. "Will high heat such as a deep fryer render gluten safe? The quick answer is "no". Here's why. Heat can easily denature or unravel some of the 3D structure of the gluten protein. Your digestive process does that too. The problem is the small peptide chains that trigger the immune response. Those won't be changed by the heat. These have to be altered by chemical...
  12. I have heard so many things about the pots and pans thing. I have anondized pans. I washed, put in the oven on 525 for 30 min and then washed again. I hope I am safe. I can't afford to replace more things. We already had to replace our rustic cupboard and butcher block counter. Just not cleanable . If glass and stainless steal are ok, why does everyone keep...
  13. Can I use liners for my crock pots? I am assuming that they hold gluten too. Also is it possible to get my kitchen aide clean enough to use again? Will I have to replace the stainless steal bowl and attachments? This is getting really hard.
  14. hmmm, I wonder if that was my problem today. I started cleaning my Kitchen aide, but I just broke down into a major panic/crying fit. I was going to have to get rid of it. It wasn't going to get clean. Wait what about dinner? How was I going to cook anything bla bla. I wonder if I wasn't careful enough and glutened myself while cleaning. I know nothing...
  15. Thank you ravenwood.  There is no flour at my house, but the grocery, stores, the gluten flour right next to the wheat flour on the shelf. I keep asking myself " Am I bringing "flour" dust into the house and putting it in the cupboard!   I thought I could bake for the family with wheat flour for all of 5 minutes. Then I looked stuff up...
  16. Quick recap--- 4/5 years ago my doctor had me stop eating gluten. I felt great 3 months later. This is when we did my gluten tests. all came back high normal, but normal. So my doc said that I had a sensitivity. I took this to mean that I could just eat less gluten or stop when I felt bad etc... Well I have been having some very major symptoms lately; ...
  17. I am glad to see things are better! I understand that there is a lot of negative connotation with the LDS church, but they have a great food bank and help ANYONE who needs it. You do not have to be LDS. Please if you are still hurting sstop at the nearest church and ask to speak with a Bishop. They will help you PRONTO and have tons of fresh fruits, veggies...
  18. Oh dear... I am not certain I could do gluten-free and vegetarian, but I know that I have looked at a lot of things I do eat and decided to get a lot more healthy. I must say I am absolutely terrified of eating anything I have not prepared. It is sad for me since I love to cook and bake and can. I just do not even want anyone else in my kitchen. I am glad...
  19. I have gotten severe migraines since I was a teenager. We could never figure out what caused them. They would last days at a time. Now that is one of the things that happens when I have been glutened. I think those were my first signs of celiacs. Just my opinion.
  20. I hope my story helps a bit.. 4 years ago I went to the doc in a lot of pain. We tried going gluten-free for 12 weeks. Went back had no pain.. Did Test.. Came back normal.. off and on for four years I have gone in and out of gluten-free depending on the severity of my symptoms. ( I do not recommend this).. Recently no amount of gluten-free was...
