Good gluten-free snacky things are popcorn (I prefer the old fashioned way of popping it on the stove, though plenty of the microwave stuff is gluten-free), gluten-free cereal (Barbara's Honey Rice puffins are good, Neopets Islandberry Crunch is mainstream and gluten-free), ice cream (many are gluten-free), baby carrots, apple slices, dried fruits... the possibilities are endless. Lays also has an extensive list of gluten-free items. All m&m's are gluten-free (except crispy, but I don't think they make those anymore. Plenty to snack on :)

    I think it's safe to say that all of us have bm problems in one way or another. I don't have the not going enough problem, so I'll let someone else speak to that...

  2. However, Starbucks no longer has UBB!! They now have something called CBB or Creme Beverage Base. This is no longer fat free (it is half-half) and I think they also changed other ingredients as well. The last time I was in Starbucks, I had the woman behind the counter read off the ingredients on the CBB and one of them was maltodextrin. Argh. I cannot even begin to tell you how disappointed I am...

    Maltodextrin is generally safe. :)

    It sounds like it has WRBO in it, but it doesn't. I believe it's derived from corn.

    First, I would sue your doctor! That's outrageous! You have a potentially life threatening (down the line), definitely quality of life diminishing disease and she didn't tell you for two years?!?!

    A good pre-workout snack is apples and peanut butter. Sticks to your ribs and has a fairly low glycemic index. Jif is gluten-free.

    I haven't gained or lost weight so far, but I'm only 3 months in.

  4. Once upon a time, there was a girl who was the best baker in all the land. And then an evil fairy laid a curse on her which made her beloved flour toxic. The only way to defeat the evil fairy was to make gluten-free cupcakes. Unfortunately, the evil Celiac fairy laid traps everywhere!     I'm in one of those moods where I want anything and everything baked. I found a recipe on allrecipes.com that looks promising and is highly rated: Open Original Shared Link

    A few questions -

    1: does anyone know if NOW foods xanthan gum is gluten-free? Pretty sure it is, just want to make sure. I don't think my delicate constitution could handle baking perfect cupcakes only to have them make me sick...

    2: Would adding a packet of jello-pudding powder add anything to this? Would I have to modify the recipe anywhere?

    3: Which Pillsbury frostings have people used without problems? I don't really like chocolate, so non-chocolate flavors are appreciated. I'm A-OK with dairy.

    Help is much appreciated! My kitchen is just too clean right now not to bake something!

    I did, however, find a well-rated recipe on allrecipes.com that matches my lazy mood today :) ....

    Basic Microwave Risotto

    INGREDIENTS:

    3 tablespoons butter

    1 clove garlic, minced

    1 onion, chopped

    1 1/2 cups vegetable broth

    1 cup uncooked Arborio rice

    3/4 cup white wine

    1/4 cup grated Parmesan cheese

    --------------------------------------------------------------------------------

    DIRECTIONS:

    In a 3 quart, microwave safe casserole dish combine butter, garlic and onion. Place dish in microwave and cook on high for 3 minutes.

    Place vegetable broth in a microwave safe dish. Heat on microwave until the broth is hot but not boiling (approximately 2 minutes).

    Stir the rice and broth into the casserole dish with the onion, butter and garlic mixture. Cover the dish tightly and cook on high for 6 minutes.

    Stir wine into the rice. Cook on high for 10 minutes more. Most of the liquid should boil off. Stir the cheese into the rice and serve.

  6. I've got some aborrio rice just sitting around, and I need a good recipe to use it. Last time I tried making it it took an hour and a half and came out too salty. It was a burn to my ego because I'm an excellent cook normally. I think my ego has healed enough to try again :P

  7. I rub some lemon across the top of the artichoke after cutting off the top. I also don't trim all the thorns unless someone is going to see them, because the thorns get soft after cooking, anyway.

    Oh, and I put lemon slices and a few cloves of garlic in the water, as well.

    Mayo is a popular dipping sauce as well, if that's your thing (yuck!)

  8. I think the pancake/baking mix made me sick too, though not in the same way. There are almonds in the flour, and while I'm not allergic to them, I am allergic to the pecans and walnuts they use in other things, I'm thinking they process all the nuts on the same machine. I got a rash in my mouth after eating some biscuits I made with the baking mix.

    I'm feeling better, somewhat. My stomach is starting to hurt...like clockwork, 3 days post glutening. At least I seem to know why I get those pains now :rolleyes:

    I'm putting Pamela's on the "not my friend" list. Back to Chebe for pizza, which tasted better anyway!

    Is Fleishman's rapid rise yeast ok?

  9. Having the gluten-free diet being trendy is like having a peanut allergy diet being trendy. It makes no sense!

    I'm afraid that if it becomes the next fad diet, restaurants and brands will become less careful about cc and whatnot. Most people aren't going to get sick from ingesting gluten. It'll be a lot harder to be taken seriously.

    Not to mention that the gluten-free replacement crap ISN'T HEALTHY! It's fattening as all get out and has a higher glycemic index to boot! :rolleyes:

    Funny story though: My boss was at lunch with a friend and the friend told him about the gluten-free bakehouse stuff at whole paycheck and how she ate gluten-free stuff to be "healthy". He bought me some of the bakehouse cookies and I asked why his friend ate them on purpose. When he said it was to be healthy, I laughed and told him about how full of bad crap gluten-free stuff was and he turned ashen white eating the cookie. He's on Weight Watchers...I'm sure one gluten-free cookie is about 3 days worth of points :P

  10. Uh-oh. I guess it's worth a phone call to Hershey's then to sort this out...

    Besides I don't like the big ones as much as I like the mini's. (I sure hope they are gluten free, ciz I've had, like, ten of them in the past few days)... :o

    Hershey plainly labels gluten-containing ingredents. If it doesn't say wheat, barley, rye, or oats, you're ok.

    As far as I knew, the only gluteny reese's things were the mini eggs that are shaped like cadbury eggs.

  11. OK, I tried a search but didn't find what I was looking for...

    I'm making potato skins tonight (my arteries are clogging already :P ) and I need a ranch dressing for dipping. I really dislike the Kraft ranch dressing, always have.

    Anyone know of a gluten-free ranch dressing that tastes close to Hidden Valley? They won't say their dressing is gluten-free and I don't want to risk it!

    Anyone know if the Marie's ranch (refridgerated with the salads) is gluten-free? Newman's Own? Ken's?

    Potato skins won't be the same without an excellent ranch dressing to dip it in!

  12. I've been wanting to order the gluten-free soy sauce packets from them... I already have the tabasco and A-1 Sauce from them... I can't really find anything to "fill in" my order to get the free shipping... I see they don't carry Annie's salad dressings and I'm not sure about the other salad dressings on the site... Some are Kraft but they have modified food starch in them and other stuff.... does anyone know which are gluten-free so I can fill in my order :blink:

    I know Kraft ranch is gluten-free, and as always, Kraft plainly labels gluten. Their modified food starch is corn unless stated otherwise. Enjoy! :P
