  1. How do you make your chebe' bread as crust? I'm using the original mix b/c I didnt too much like the garlic mix. What cheese do you use?

    I've only ever used they're actual pizza crust mix, but I would follow the directions for making regular bread and roll out the dough thin, brush with olive oil, and bake for 20-30 mins, take it out and top it with cheese and sauce and put it back into the oven for 10 mins.

    I put parm in the crust, like the directions say, and it gives it a wonderful flavor. I use normal pizza cheeses because I'm a recent dx. and I refuse to give up dairy (yet). One of the best pizzas I ever had was with pesto sauce and grilled shrimp. Very decadent but oh so good.

    I also caramelize some thinly sliced onions to go on the crust before I add the sauce and cheese :lol:

  2. Does depend on the Dr. I would say that if you're celiac and your child has positive bloodwork, they'll probably forgo the endo.

    On the vomiting, horrible pain, big D and all, yes. I have that, they never could figure out why or what it was. I've always had a sensitive stomach, and I throw up over nothing.

    Even as a kid, I would wake up in the middle of the night about once a month, throw up, and go back to bed. Made no sense. Since being an adult, it's about the same, but with horrific pain.

    Since I haven't been off gluten very long, I don't know if it's due to glutening or not, but it would make sense. I generally have to take phenergan (not orally :o ) when it happens. It helps a lot.

  3. I have ridiculous pain, too. It feels like someone filled up my stomach like a balloon, and then it starts cramping horribly and I can't function without serious meds. I've gone to the ER several times for it and I leave with narcotics and a shrug.

    They did an upper GI, sonagram, endoscopy, and never really found anything. I think the GI doc said after the endo that my stomach lining looked irritated, and I had a tiny ulcer (from too much advil). He was looking for esophogeal damage, because he was sure I had reflux. I can't be sure what he said though, since I was still coming off the versed. I don't think I could pick that dr out of a lineup, that was the only time I saw him, otherwise it was his nurse.

    That time, it was a shrug and nexium. When the nexium didn't work, the GI doc ignored me.

    They still don't know what it is.

    I hope they figure out what's going on with you :unsure:

  4. Now that we're onto chicken fried stuff, any one ever try dredging your meat in the all purpose flour, and then in parmesian cheese, then fry?

    It is so good! The cheese gets real crispy and it has a grat flavor! It's good on eggplant, like for eggplant parm! Or on veggies like zuchini or mushrooms for an appetizer!

    And sometimes I'll through alittle ground up pecan into the mix!!!!

    I make chicken parmesan with gluten-free breadcrumbs, parm, italian seasoning, garlic salt, & lemon pepper.

    Dip the flattened chicken into beaten egg, dip in the breadcrumb mixture, and pan cook. Once done, cover with sauce and mozzarella and stick under broiler to melt the cheese

    YUM! :lol:

  7. If the window people are the ones who get the fries, then my first thought is YUCK! Do they put gloves on to get the fries? If not, you mean to tell me they are touching disgusting dirty money with germs all over it and then touching my fries? YUCK! :blink:

    Disgusting but true. Whether they have to wear gloves or not depends on city or county ordinance (in the states anyway).

    And you don't know if they were just emptying wastebaskets, mopping, doing dishes, blowing their nose...

    You're supposed to wash your hands between tasks, but, yeah, how often does that happen?

  8. Being new here I have to ask....What kind of pudding was that? I mean the brand name? I just noticed on a package of pudding here at the house that it had mod. starch and the dr. said that is a no no. I clicked onto a site I have ordered from and they only had this watery looking "custard". Do all puddings have starch in it?

    If it's from Kraft, the modified food starch is from corn unless otherwise specified. For example: Modified food starch (wheat)

    Most jello puddings are safe, just read the label. Kraft has said they always list allergen ingredients in the ingredient statement.

    And, all kozy shack puddings are gluten free, and say so on the label.

    Though I did find inulin on their sugar free pudding label....

  9. McDonald's stores are set up so that the nugget/chicken/fish fryer is on the opposite side of the store, because you need easy access to the window, not the grill. The people that take the orders generally fill them, so they have handled drinks, bags, burgers, etc before making the fries and adding to to the order. There isn't a lot of loose flour running around, but on the bottoms of the buns there is often extra flour. This gets on the grill person's hands, which get on the wrapper, which get on the server's hands when she touches it.

    The window people or runners make up the fry orders. The grill is generally too busy. Although, they will sometimes empty the bags of frozen fries into the hopper to be dumped into the baskets. CC is definitely a possibility.

    Also, the fry oil is in a dedicated fryer.

    Of course, these rules don't necessarily apply in stores that are in stores, truck stops, airports, etc. But that is how the freestanding stores are set up.

    I guess the two years of working at McDonald's was of some use after all :rolleyes:

  10. I love me a margarita, there is nothing better than a little salt and that cuervo-y goodness :D

    Just plain old tequila shots are excellent, too. I normally drink cheapo cuervo, but I have fancy stuff I save for special occasions...

    Although there are some days when I'd rather have my tequila intravenously :blink:

    I'm also a fan of Red Bull & vodka, and starburst shots (flavored vodka dropped into red bull and chugged) they're kind of like girly, gluten free irish car bombs :ph34r:

    I learned that shot from former sorority girls that have at least 5 years on me and drank my wimpy butt under the table... :blink:

  11. I work for a health insurance company, and I have to say that most people do not know the costs of health care. They did a study and asked people how much they think their doctors visit actually cost, and they said $10!!! They thought it was really the co-pay amount. Well needless to say I think there is going to be a huge change in the way health care is administered in the next 5 or so years.

    Anyways to agree with everyone here, I went to a nutrionalist as well, paid my $15 copay and what a waste, she gave me outdated sheets, and told me i had to eat more protein, blablabla. I knew way more than her going into the appt. I agree that this forum has been the most helpful and lifesaving thing. If I were you I would go out and buy a good book on celiac disease instead, much more informational and up to date!

    I have a feeling my insurance would cover a nuritionist if I fought for it, but I'm not officially diagnosed, I'm on a gluten-free challenge to see if that is what's wrong with me.

    My doctor wasn't really psyched about giving me a reccomendation. She basically said that I could see a nutritionist if I wanted to, but I was much more likely to find all the information I need on the internet. My doctor is a smart lady ;)

    About the insurance thing, I thought my doctor would charge $60-$70 for an office visit, but $90?!?! Dang!

    New York state is kind of sneaking socialized medicine through the back door. It started with Child Health Plus, which is state subsidized real insurance (United Heathcare), then they did family health plus, and a program for seniors that did the same thing. It has nothing to do with medicaid, it's for people who make too much for medicaid but don't have insurance. I had it when I was a teenager and it was great.

    I've always been really impressed with United, I have them now, and they're fantastic. My mom has it, too and she had a double knee replacement at a top hospital that specializes in joint replacements, and I think she had to pay $2000 for a $200,000 procedure :o . My boss' wife even had stem cell transplants (from her own marrow) covered!

  12. DH and I were planning on going to Six Flags Over Texas for our 1 year anniversary, though now with the whole celiac thing (if that's what I have :rolleyes: ) will pose a challenge. I'm writing them about it, but does anyone have experience with gluten free at Six Flags, not necessarily over Texas?

    We live within a 3 hour radius of 3 different six flags parks and we're considering getting season tickets... :D
