  1. You're her mom - trust that "gut" feeling! The doctors are not the ones with your daughter day in and day out. You know her ten times better than they do. I recommend getting a new doctor for her (a "second opinion")....and if you feel better about keeping her gluten-free - then do it! It's not easy though... so be prepared to do it 100%. This website...
  2. I hope the project went well! I hope your son didn't get sick and managed to have a good time too! You sound like a great mom (like mine!) who would do anything to keep her child safe and healthy!
  3. I know you're really concerned for his safety doing this project - but please, don't make him wear a mask!! Let him stay home "sick" if necessary to get him out of the project making - but making him wear a mask that no one else is wearing will just bring on the tormentors!! It's only been 5 years since I graduated high school - and it's such a horrible...
  4. I don't know about stealing their toilet (then you'd have to go to a Stealers Annonymous meeting)....but I'd let you borrow my daughters "royal" potty if you're desperate! (She's not ready for it yet anyway!) Since when is maltodextrin okay?!?! I thought that was a no-no equal to regular Malt?
  5. "Hi. Take a seat. Welcome to the Gluten-Eaters Annonymous meeting. Let's all take a turn to introduce ourselves and tell our weakness that brought us to this GA meeting." "Hi. My name is Karleena and I'm a 'closet Celiac'. I don't like to be different. My biggest weakness is not eating a sandwich or a piece of pizza - it's the dreaded M word. Malt...
  6. I love these!!!! I happened to buy a bag of them yesterday (had a really bad day - needed a treat)...and they're probably about half gone now. I like them better then M&M's....but then again - I love Hershey's chocolate more than any kind of chocolate I've ever tried!! Yum Yum Yum!! I hope you enjoyed every bite!
  7. I'm with you on this one!! Though I only have about half of what you're doing right now. Fatigue is the number one listed "symptom" of Celiac. So, supposedly then, going gluten free should help fix that problem (along with making sure you have vitamins). I'm not very good at staying 100% gluten-free...and it's kicking me in the pants! I only work a...
  8. Unlike most of the people on this board - I am so glad to hear you went through with the biopsy!! Back in the day they didn't have all the blood tests to confirm Celiac - a biopsy was how it was done. So - if it worked back then - it still works now. Having a biopsy done when I was around 16-17 months old was what saved my life!! I was "knocking on death...
  9. I'm no expert on Outback, by any means (I've only worked there 7 months - and only at one outback that is new). But here are a few answers to some of your questions (not all outbacks are the same though - since they all have different propreitors). Tiff - There could be a number of reasons that you got sick - some of which have been mentioned numerous...

Exactly! The bread isn't the same piece of bread day after day. They toss the piece of bread after the day is over. I'm not sure if EVERY Outback does this - just mine. The brown sugar is the normal CH Brown Sugar in the resealable bag - but it's too much of a pain when things get busy to use it from the bag. So, they put it in a round container (slightly...
  11. My favorite is Zucchini Bread (I've posted it before - but here it is again). It's not exactly healthy - but oh so yummy!!! 1 c. sugar 1 c. brown sugar 1 c. oil 3 c. rice flour (leveled - don't heap) 1/4 tsp. baking powder 1 1/2 tsp xantham gum 1 tsp baking soda 2 tsp cinnamon 1 tsp salt 3 eggs 2 c. finely grated zucchini Combine all ingredients...

Just to let you know: If the Outback you eat at has Sweet Potatoes on their menu - be careful!! I realized at work last night as I was helping prepare some food going out to a table - that they put a piece of bread in the brown sugar to keep it soft! They prepare the sweet potatoes with a scoop of brown sugar, honey butter and a dash of cinnamon on them...
  13. I don't know where you're from or how people in your area seem to do wedding receptions - but where I'm from it's a lot simpler than most places. The majority of people don't seem to go "all out" (spending thousands and thousands of dollars on one day). The total cost of my entire wedding was just over $3,000 - and it was perfect!! So - saying this - I...
  14. Good luck, Sawyer!! I'm right there with you on struggling to consistently stay gluten free. (I'm sure I messed up today - eating at a buffet....hopefully I won't pay for it at work tomorrow.) I've had Celiac my whole life - so it shouldn't be so hard for me. However - I, too, hate to cook (I'd much rather eat out!)...and I'm such a picky eater! I've...
  15. I have loved this topic!! I've laughed and laughed and laughed at the stories!! I serve at Outback 3-4 nights/days a week - so I could easily be one of these ignorant servers. However - I'm not usually stupid about allergies - it's alcohol that gets me! I once had a table order - what I heard to be - Smirnoff ON ice - but they wanted Smirnoff Ice. So...
  16. I don't think that being 100% gluten free will keep the gas away. I'm not so good at being 100% right now...but back when I was in high school I was and I still remember being sooo uncomfortable in class trying to hold it in and having my stomach hurt from doing so. It sometimes came at the worst possible times - and completely un-related to anything I...
  17. I live in Vegas - but have only been here for about 9 months. I'm not too familiar with the restaurants on the main part of "The Strip" (las vegas blvd)....but I know a few restaurants that are talked about in the restaurant section of this website that are also in Vegas. Outback Steakhouse is a good option for you - as they have their own gluten-free...
  18. Hahaha! It's so nice to read these posts and know that I'm not alone!! I never knew problems such as this were related to celiac - so it's good to finally know! My hubby is worse than me - so that makes me feel better too! No cat for me to scare away - just my daughter!
  19. Gluten gave me the "whole foods shopping bug" yesterday and made me spend 68 dollars on food just for me!! Bad Gluten, Bad!!! (But oh, so yummy!)
  20. It definitely must have been gluten that caused it to be 15 degrees colder, windier and rainier than yesterday - spoiling all plans of planting Oleanders in our backyard!
  21. I had the worst weekend...and I need to vent about it. I had been doing so good (or so I thought) for a little while of not cheating. Then on Friday morning I started to feel sick....then it progressed into the horrible, gut-wrenching-wanna-curl-up-and-die PAIN! I don't have a clue what I ate to make me feel this way. I'm still baffled at what caused...
  22. I personally can't stand to eat yogurt (had it almost every day in high school - because I could eat it)...but my daughter loves the little Yoplait yogurts. They come in six packs - 3 of one flavor, 3 of another. And they're just the right size for little tummies. They have characters on them too - Blues Clues and Dora are the two I've seen. My daughter...
  23. Before discovering this website - I, too, would have never thought myself to be "lucky" to just have Celiac. Now, however, after reading many other's stories - I am lucky to have been diagnosed so early in life. I hope to avoid so many of the other life threatening troubles that can plague our unhealthy bodies.
  24. If you live in a larger city look for an Oriental market. They have the finest and most perfect rice flour you can find! I finally have a package of it that I can look at and give the info for. (I've talked about it in another thread before.) It's made in Thailand by a company called "Erawan Marketing Co., LTD" It comes in 1 lb bags...and though this...
  25. MMMMM.....Yummy!!! They have the best veggies of any restaurant I've ever been to!! (I prefer getting just the broccoli though!) What steak did you get? *mouth watering* I just might have to ignore my hubby about spending less money eating out and order dinner tonight!! The best steak is the Filet (it's the smallest though)... so tender. I never...
