I don't have an exact recipe, but it sounds like a roasted root vegetable dish would work with these specifications. You can add any veggies you like, sweet potatoes, parsnips, turnips, onions, carrots, zuchini, etc, cut into uniform 1 inch pieces, toss with olive oil, sea salt, and fresh herbs (or dried), then you just roast in the oven. I haven't tried whipping coconut milk, but I've thought about it! There's a special gadget advertised on tv that will whip air into any liquid and turn it into "whipped" whatever. I immediately thought of coconut milk when I saw this. I don't know if it will work with just a hand blender but it might be worth trying. -

From what Carla and rinne have repeatedly said, I understood lyme was also largely a clinical dx (am I remembering that right girls??). I guess I am thinking the LLMD would take into account your GI and iron issues and might help you with that as well, killing several birds with one stone so to speak. -

Carla, Is whey free of casein as well?? Kassandra, It takes so long to get into the LLMD, even if you don't have your Igenex test done yet it might be beneficial to go. I haven't used the Amaranth bread crumbs before, and haven't heard anybody's review of them, but...just a thought....sometimes the cooked finished product tastes great and nothing like eating them raw/plain/straight out of the package. Before you throw them away you might want to do a test run with something, it might surprise you! -

I don't know why I didn't think of a mix, DUH! Namaste has a great brownie mix also, you use oil as the fat. *Pamela's Brownie Mix and gluten-free Pantry Truffle Brownie Mix both have chocolate chunks added tot he batter so they are out if you are eliminating soy lecithin. -
