ARCHIVED Bleu Cheese
eKatherine replied to Sweetfudge's topic in Gluten-Free Foods, Products, Shopping & Medications
Why do you think everyone should give up foods that disagree with you? If we only ate foods that nobody ever reacts to and contain no toxic substances whatever, none of us would have anything to eat. -
In retrospect, I think so, but of course he was never tested. He always had gas, diarrhea, and the bathroom smelled horrible. When he first moved into an assisted living facility, he improved a lot in some ways, which I attribute to the fact that he was eating a balanced diet instead of wheat and milk all the time. But since his last fall and subsequent...

My experience is that while I was still eating gluten, my hands and feet would swell up as if I was dehydrated, and I was thirsty all the time, though no amount of water seemed to make my thirst go away. After going gluten-free, I no longer am bothered by excessive thirst. I have no doubt that I was on the road to diabetes.

ARCHIVED Aaaaaaaaarrrrrrggggghhhh!
eKatherine replied to I'dratherbecycling's topic in Coping with Celiac Disease
This is absolutely true. People who tend to put on weight in times of plenty have undoubtedly been better able to survive through famines and continue to procreate, while people who started a long famine with no excess weight were undoubtedly likely to die off quicker. So plump people pass their genes on to their children, who also have the ability to withstand... -
ARCHIVED Article In 'good Housekeeping' About A Lady With celiac disease!
eKatherine replied to amber-rose's topic in Publications & Publicity
That is a great article. -
The issue is that all of the bad choices we can point to - lack of exercise, eating lots of snacks, etc., don't add up to that extra weight. Not exercising doesn't make someone put on 100 pounds, and starting an exercise program will only result in the loss of a few pounds. It's as though there is a trigger, as with celiac, and we don't know what it is that...

ARCHIVED Are These Foods Safe?
eKatherine replied to sore joints's topic in Gluten-Free Foods, Products, Shopping & Medications
That is not permitted here, and they end up in rendering plants or pet food. Ground meat is labeled with the cut of origin. You couldn't put very much intestine in ground meat, anyway, as it would affect both the appearance and the taste. -
Hardly any of us could reasonably consider this, which does not mean we cannot reasonably observe and make judgments. I'm not sure how you are defining "starvation diet", but the fact is that the body will interpret any extreme loss of weight as "starvation", not as "reaching goals" - goal you may have considered after doing research. One woman I know...

ARCHIVED Are These Foods Safe?
eKatherine replied to sore joints's topic in Gluten-Free Foods, Products, Shopping & Medications
Or they may have been putting stuffing on something, or marinating or breading something. Intestines are not popular around here as a food. -
ARCHIVED Jaegerbombs...
eKatherine replied to Guhlia's topic in Gluten-Free Foods, Products, Shopping & Medications
Jaegerbomb: pour half or a whole can of Red Bull into a glass. Drop in a shot of Jagermeister. Drink down. -
ARCHIVED Shocking Story #2
eKatherine replied to concerned-mom061's topic in Parents, Friends and Loved Ones of Celiacs
My concern is when I see "calls to prayer" when there is appropriate action that could still be taken. -
ARCHIVED Walmart Great Value Brands
eKatherine replied to ilmotherof2's topic in Gluten-Free Foods, Products, Shopping & Medications
I think that Walmart got tired of paying their office help to answer the same question over and over again when the phone rang, and decided it was more cost-effective to put it right on the label. I'm surprised that more companies haven't realized that until they do this, the questions will never end. -
ARCHIVED Barley Malt Extract
eKatherine replied to Nic's topic in Gluten-Free Foods, Products, Shopping & Medications
Here's why they call it an "extract": To make malted barley, they soak the grain and sprout it, just enough to turn some of the starch into sugar. Then they stop the growth of the barley sprouts by roasting them at a low temperature. At this point the barley has been 'malted'. You can buy malted barley at any beermaking supply store. They then crush the... -
ARCHIVED Alternative Cure? Or Am I Just Hopeful?
eKatherine replied to tailz's topic in Coping with Celiac Disease
I think you need to stop challenging your system with drugs and allow your body to heal in its own time. -
ARCHIVED Soy Icecream
eKatherine replied to celiackids's topic in Gluten-Free Foods, Products, Shopping & Medications
I tried Soy Dream, and it gave me diarrhea, which is unusual for me. Soy products don't generally bother me, so I'm guessing it had something to do with all those fats that were listed on the label. -
ARCHIVED Alternative Cure? Or Am I Just Hopeful?
eKatherine replied to tailz's topic in Coping with Celiac Disease
Seriously. You need to reconsider this. There are good reasons not to use colloidal silver. Open Original Shared Link Open Original Shared Link, or why silver is no longer in general use for the purposes you stated before. -
You are lumping all dietary and lifestyle changes in together as if they are all equal. They are not. To go on a celiac diet, replacing your favorite foods with others of equivalent nutritional value, is an order of magnitude easier than going on a diet, taking off weight, and keeping it off. Only 2% of the people who try to lose weight reach their goal and...

ARCHIVED Types Of Vitamins
eKatherine replied to barilla's topic in Gluten-Free Foods, Products, Shopping & Medications
If your "posture" has been bad for so many years, you might consider that you have either scoliosis or osteopenia. Have you been checked? -
ARCHIVED What Would You Have Done?
eKatherine replied to cmzirkelbach's topic in Parents, Friends and Loved Ones of Celiacs
Given the extent of undiagnosed celiac in the general public, I think it is highly unlikely that these people have considered it and legitimately ruled it out. -

I'm sorry if you were offended, but you brought up the topic. I was unaware it was off-limits. -

Why does the child cry or whine? Do you pester him to eat things that bother him? -
ARCHIVED Aaaaaaaaarrrrrrggggghhhh!
eKatherine replied to I'dratherbecycling's topic in Coping with Celiac Disease
I think it's a sad commentary on society that we value slenderness so much that people envy the seriously ill who are wasting away and risk death through anorexia. -
ARCHIVED Forgotten Cookies Recipe
eKatherine replied to a topic in Gluten-Free Recipes & Cooking Tips
Almond macaroons, amaretti in Italian. Those are also very good substituting pistachios or pecans for the almonds - grind in the blender with some of the sugar until quite fine. Traditional recipes may call for granulated sugar and a bit of flour, for which I would sub rice flour. -
ARCHIVED gluten-free Vegan
eKatherine replied to LonelyWolf307's topic in Gluten-Free Recipes & Cooking Tips
Pure olive oil is stable enough to fry in as long as you are able to control the temperature. You can reuse the oil, unlike most vegetable oils, that must be thrown out after one use - because they have broken down. Extra virgin is not as stable, and it is the impurities that cause it to break down. Either one can burn (break down) if you overheat it while... -

Those things weren't made with wheat flour, they were made with white.
