  4. I have heard of peripheral neuropathy that did not start until after the person went gluten-free. Research shows that neurological symptoms may or may not improve, but if not, eventually they will stabilize.

  6. Yes, the window was 4 to 6 months, so you missed it. I wouldn't worry about it. I think it had a small effect, but as long as you missed it, and you are better off avoiding the cross-contamination that a baby spreading around gluten can bring, why not the both of you just stay gluten-free?
  7. I boil diced daikon, but the result is more like turnip than like potatoes in texture. When I want something Central or South American, I steam semi ripe ripe plantains, but you do have to be in the mood for something banana-like. Yuca can also be boiled or fried.

In my opinion, the conclusion of the paper should not be that we will soon be able to treat peanut allergies medically, but that now that we know what causes them, we can prevent them by not using topically-applied peanut products and not feeding soy formula to infants where there are other options.

  14. I would think that if you've been hanging out on this board for a while, you already know more than a typical doctor about celiac and real life. Just don't let the doctor decide to run more tests to see if the initial diagnosis was "incorrect", and don't let him get away with telling you to eat gluten again.
  15. I found it described on the web as a "commercial wheat starch gluten-free flour". I didn't find any information on the exact formulation of it. Information that I did find indicated that they change the formulation often. Perhaps that is the legal standard in Ireland, where they make it? I seriously doubt you should eat this.

  20. Raw animal products are easier to digest (I find fried eggs indigestible, but boiled ones are fine) than cooked. Cooked plant products are easier to digest than, as the human body, not being herbivorean, is not designed to digest cellulose, which can be broken down by cooking.

  23. They are trying to broaden the appeal of the product. It has nothing to do with taste. They did marketing research that showed them that the number of celiacs who were no longer able to buy the product is smaller than the number of people who will be sucked in by the bogus claim of "multi-grian" because they added wheat starch.
