When I was only lactose intolerant, the symptoms were bloating, gas, and diarrhea, but it wasn't too bad for me as long as I kept my consumption down and didn't consume milk on an empty stomach. After I became sensitive to casein, I started to get edema, and I just gave it up right then and there. No need to have old lady legs at my age. -

Even worse, at least in the classrooms I have been in, they are constantly eating cookies, crackers, and other gluten items in the classroom and spreading crumbs all over the tables, rugs, chairs, themselves, and each other. -

Do you always feel equally nauseated in the morning, or do you feel better on the mornings you skip eating completely? If you were to skip eating, would some beverages bother you more than others? If you feel better skipping breakfast, I'd say just skip it. You're better off eating nothing than eating something which makes you sick or is high in sugar... -

It's quite possible she is getting cross contamination every day at school. I have worked in kindergarden classes, and it's hard to imagine any class that contains kids eating gluten and using regular supplies that would be safe for a celiac kid. I don't know about where you are, but here they will make a special class for a child who is deathly allergic... -

Goya makes a product called Masarepa which is specially intended for making arepas. It comes in white or yellow - the yellow is a lot more flavorful - and there is a recipe on the package.

Red wine makes my feet swell up, but I don't have a problem with sulfites. I don't drink white wine, so I don't know if it would give me the same reaction. -

To some extent it depends on who's making the definitions, but according to the most common means of diagnosing, a person with celiac is a gluten-intolerant person who happens to have been diagnosed with intestinal villi atrophy. It doesn't have to do with an allergic type reaction. -

I developed a quick starterless sprouted sourdough rye bread that was incredibly tasty. I forget, are you allergic to tree nuts? I make nice rich cream sauces by whirling in the blender 1/4 cup of blanched almonds per cup of water (drizzle in the water to get a smooth "batter", don't add all at once). The almond milk makes it creamy and the finely pureed almond thickens the sauce. -

Have you been tested for deficiencies in B vitamins? If not, you should. It won't hurt you to get a good quality multi-B supplement and a sublingual B-12, regardless. -

Not only in this country is it very hard to get a diagnosis of celiac or gluten intolerance when a person truly has one or the other, but even without looking very hard it is really easy to find a second opinion that will tell you that regardless of what the tests show (even a biopsy!), you don't have it and/or it's ok to eat all the gluten you want. Is it just you that's poverty-stricken, or is it your whole family? Where do you live? Any Asian store should have white rice flour for less than a dollar a pound. Even if you had to pay two dollars a pound, it's cheaper than missing a day of work...but... If your dad wants you to make cookies for him, it's reasonable that he should be buying your ingredients... -

It complicates things greatly that many people who think they have allergies do not (studies show that in the public at large it is often true that people make the mistake of attributing a passing illness to something they just ate), while many people have lied about being allergic in order to avoid some food they don't like or don't want to try. -

Lots of them. It's also true that people who suspect they have a problem with wheat may test negative because they aren't yet seriously ill, and would never become so if the condition were caught early enough and treated. -

I know I have always eaten a lot of meat, fish, and dairy. If I cut back for a while and went semi-vegetarian, after a couple of weeks I would get irresistible cravings for meat and fish. This may have something to do with some sort of malabsorption, which may have been what showed up in the past as chronically low serum albumin levels. It is also true...
