ARCHIVED Alternative Cure? Or Am I Just Hopeful?
eKatherine replied to tailz's topic in Coping with Celiac Disease
Most Christian and Jewish scholars are not fundamentalist, therefore they take the Bible as historical/inspiratioanal literature, not literally true. So in that sense he is correct. I personally do not believe that tolerance is an acceptable substitute for human rights. Tolerance is something that is conditional. It can be rescinded. Look at how the word... -
ARCHIVED I Understand That "tailz" Has Been Banned From This Site.
eKatherine replied to Lymetoo's topic in Introduce Yourself / Share Stuff
I knew the two of them were both the same person when they both posted about being sensitive to "all pectins" within an hour. I was wondering if it was allowed for a person to have two membernames like that. -
"Celiac" is generally defined as "having intestinal damage". "Gluten intolerance" is "eating gluten bothers you with no intestinal involvement". These are not the definitions you are using, what are yours? Perhaps that is why we are having trouble communicating. My feeling is that if people who are gluten intolerant continue to eat gluten, their health...

ARCHIVED Alternative Cure? Or Am I Just Hopeful?
eKatherine replied to tailz's topic in Coping with Celiac Disease
There's a point I tried to make repeatedly. It was incompetent doctors who failed you, not "traditional medicine". The answers were there, but the doctors chose not to learn and diagnose properly. Would acupuncture have helped a celiac better than a competent doctor? The problem is that the experience of one person basically cannot be extrapolated to... -
ARCHIVED Beware Of Dasani Water On Your Flight
eKatherine replied to ms-sillyak-screwed's topic in Traveling with Celiac Disease
Well, it was and it wasn't intended to be an inconvenience. The purpose of it is to get people used to the idea of the government nibbling away at our freedoms. They have succeeded if there is public support for legally unsupportable government actions. -
ARCHIVED Alternative Cure? Or Am I Just Hopeful?
eKatherine replied to tailz's topic in Coping with Celiac Disease
Well, Gina, I agree with you wholeheartedly. This thread went the way of "wishful thinking is always better than demonstrable facts" almost at the beginning. -
ARCHIVED The Truth About Splenda
eKatherine replied to justjane's topic in Introduce Yourself / Share Stuff
It looks like any site member can post whatever they want on that site. My favorite is the doctor who has several articles objecting to the socialist practice of forced sharing of gluesticks in classrooms. Also, there's a book-length article on how MS is caused by barium poisoning (lyme proponents take note). -
ARCHIVED Secretiveness
eKatherine replied to BFreeman's topic in Parents, Friends and Loved Ones of Celiacs
I don't even go that far. I just say I can't eat it because it makes me sick. -

eKatherine replied to em2005's topic in Coping with Celiac Disease
Breasts are better if you pound them into cutlets, bread, and pan-fry in a mix of butter and olive oil, but that does sort of eliminate them from being a low fat food. I found if you skin and bone a thigh, you can pound it flat into a nice big cutlet, just like you can with a breast. I served them for my daughter and her boyfriend, and he was so impressed... -
Would we really be better off if there were lots of restaurants that think that they are capable of providing gluten-free food on request, but aren't? That's what would happen if we encourage restaurants to offer gluten-free meals but never give them any feedback as to how they are doing. It's a learning process for them, too. Is half an effort any better...

That wnho website has some mighty strange articles posted on it. You might want to browse through their authors and see what some of the others have to say. -
ARCHIVED Beware Of Dasani Water On Your Flight
eKatherine replied to ms-sillyak-screwed's topic in Traveling with Celiac Disease
It may not be spring water, but it's undoubtedly water. and at least as pure as tap water is. At least they are honest about it on the label. Many types of bottles water are just tap water, but do not label themselves as such. -

Regardless of what you do with them, they are drier than thighs, which is what I buy. And since I'm off dairy, there's no cream or cheese for me. -
ARCHIVED How Not Feel Guilty Going From Eating Strict Vegetarian Diet To Eating Some Meat...
eKatherine replied to em2005's topic in Coping with Celiac Disease
I think that Americans who travel abroad are not typical. They are the big spenders, and they expect to treat themselves to expensive (read: meat-heavy) meals all the time when abroad. I have never eaten much in expensive restaurants, but most of the price range I do go in rarely have even an 8 ounce steak on the menu, which cuts into your nourishment when... -

ARCHIVED How Not Feel Guilty Going From Eating Strict Vegetarian Diet To Eating Some Meat...
eKatherine replied to em2005's topic in Coping with Celiac Disease
I have seen it said here in this thread several times that Americans eat obscene amounts of meat or excessive amounts of meat, and I'd like to know what that is based on, besides the movie "Supersize me" or the generalization, oft-repeated on pro-vegan sites on the web, that "Americans eat 4 times as much meat as they should". I started keeping a food... -
ARCHIVED Help Finding Squash Recipe
eKatherine replied to linz7997's topic in Gluten-Free Recipes & Cooking Tips
The recipe sounds like some kind of gnocchi. I googled. Look what I found: Open Original Shared Link -
ARCHIVED Celiac And Other Autoimmune Diseases
eKatherine replied to a topic in Related Issues & Disorders
You and I are both in the same category, and I have never had any digestive problems, only swelling and pain in the feet and swelling of the hands. Maybe they would make more progress on the research if some of it was done by a linguist. -

When you do that cut and paste, you can put it between quote brackets:
insert text here
-
ARCHIVED What Is Almond Flour?
eKatherine replied to cycler's topic in Gluten-Free Recipes & Cooking Tips
I tried the Bob's but found it more chunky than flour-like. When I want ground almonds in a baking recipe, I put whole or blanced almonds in the blender with some of the liquid and blend til smooth. You have to play with it, but you see what I mean. -
ARCHIVED Bleu Cheese
eKatherine replied to Sweetfudge's topic in Gluten-Free Foods, Products, Shopping & Medications
I read a recipe for making blue cheese at home where you innoculated the cheese curds with a slurry of your favorite blue cheese before hooping them. -
ARCHIVED Easy Coconut Pie Crust
eKatherine replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
It will need to be the sweetened type. Unsweetened shredded coconut will just end up butter-toasted. -
ARCHIVED Testing Prices
