  1. You make me want to travel back to Europe again. I too found that in alot of European countries it was easy to find gluten free foods. Like in spain all of their packaging labels had 'Sans Gluten' if it was gluten free. Many of the restaurants will also have a gluten free symbol in their window by the door. It's a tiny wheat stalk with a line crossing...
  2. ... they turned out great. I didn't add any nuts, but I did add some chocolate chips! Thanks for the recipe. My husband thanks you too.
  3. While spending my year in Korea, I created a blog to document my experiences. It was soo much fun. Now that I'm no longer in Korea, I miss creating blog entries. I decided to write about food. Since I love food and love to cook, why not help other people. Obviously, all my recipes are gluten free. Some people think that eating gluten free has to be...
  4. My mouth is watering. I love brownies. Believe it or not, but I'm going to the store now so that I can make these tonight! Thank you for the brownie inspiration. Open Original Shared Link
  5. I have Celiac, so I eat and cook completely gluten-free. My husband does not have Celiac, but is basically on a gluten-free diet by association. When he does go out and eat pizza or sandwiches with his friends he always gets heartburn and feels sluggish. He never has the serious reactions that most Celiacs experience, but he definitely has a detectable...
  6. I actually lived in Korea for a year and I can tell you that most all the Korean sauces contain gluten. They use red pepper paste and bean paste in almost everything, both of which contain gluten. Bipimbap is fabulous but just have it served w/o red pepper paste. The Korean BBQs are just plain old meat grilled, usually with kimchi (which is gluten-free...
  7. Cabell Huntington Hospital will host a Celiac Conference on Saturday, July 31, in the hospital's main auditorium located on the hospital's campus at 1340 Hal Greer Blvd., Huntington, WV. Speakers will include Connie Sarros, Dr. Yoram...
  8. I'm from Huntington, WV. I read in one of the responses someone talking about Drug Emporium... they do still have meetings, but their next one isn't going to be until Nov. On July 31st Cabell Huntington Hospital is having the WV Celiac Conference. I couldn't find much information about it online but I'm going to be going. Also, the Celiac Walk...
  9. Foods containing gluten: anything with red pepper paste anything with bean paste anything with soy sauce (none of the korean soy sauces are gluten-free) These limitations caused a serious problem finding gluten-free Korean food. Bipimbap is gluten-free, only if you don't put the red pepper paste on it, but then it's just plain rice with veggies...
  10. Wow, so I was just re-reading my old entries... boy have I changed. I no longer give a crap if people around me eat pizza because I don't want to feel bad anymore. If I do have these cravings for certain foods, I have learned to make them myself. Even my husband loves my gluten-free pizza! My changed attitude over the years is attributed to learning...
  11. is loving my thrifty cooking. :-)

  12. I have been in Korea for 9 days now and I haven't been this sick in years. I have done research for months now before I moved, but being here it's sooo difficult. If I never left my apartment to eat, I'd be fine. I love cooking and even experimenting with new dishes... that's great! But we don't know anyone here... and my husband wants to go out with...
  13. Thank you, I hadn't even thought about missions or anything like that. Thank goodness I enjoy cooking.
  14. My husband and I are moving to South Korea for a year to teach english. I've been doing some research and it is very discouraging. Most everything I find is made of soy sauce, bean paste... and even most of their rice noodles contain wheat. Anyone have any advice... suggestions?
  15. Yes! and this is something that I've experienced as a child. My doctors told my parents that I'd have to "get used to" and to "be careful not to get up too fast..." because they said nothing was wrong with me. Since I've gone gluten free my dizziness has seriously reduced, and I no longer get car sick like i used to do.
  16. Well I hadn't had any problems either... but it never hurts to ask. Thanx
  17. Thanx, I've been meaning to try quinoa... never had it (and I even have a box in my cabinet waiting to fix)
  18. I'm from Huntington... and I totally understand the part about no one knowing what I'm talking about half the time. I have friends in Shepherds Town and visit up there in your neck of the woods all the time. It's good to see a fellow West Virginian on here. Take care.
  19. Does anyone know about perfumes? Since they are alcohol, does that mean I'd have to find out what type of alcohol, or how it's made... or are all/most perfumes gluten-free? Hmm.. I just read someone's post about beauty products, and this is something that I've never even thought about before.
  20. I'm always confused about the modified food starch too... unless it specifically says modified corn starch or potato starch, I usually call the company to find out for sure. As for the caramel... they say it's gluten free if it's made in the USA, but to avoid it when it's made elsewhere because they can't guarantee that it hasn't been contaminated.
  21. I do eat more simple starches now... because I used to eat 'whole grain' and supposedly good for me wheats, where as now all I tend to eat is rice and potatoes. I guess I've still got a ton of learning to do.
  22. This happens usually late in the evening. I really don't eat alot of protein unless I'm at home because at work the only thing I can eat is a baked potato or salad, unless I bring something from home. Could this be from not enough protein in my diet? I will most certainly start packing my lunch everyday if this is the case.
  23. I've been gluten free for nearly 8 months now and on two occasions now my blood sugar levels have dropped soo much that I passed out once, and almost passed out another. My eating habits haven't changed... but I randomly check my sugar levels and they are relatively low. (ex: I had a Red Bull and an hour later my glucose level was only 74) I had read...
  24. I made a fabulous BBQ last night. My dad was sent to the hospital (turns out he's fine) but when I'm nervous I tend to cook. At work the other day they made BBQ sandwiches in the cafeteria, and of course I can't eat them... so I had been craving them. I found a recipe by Emeril and then improvised and modified to make it my own yummy creation.
