ARCHIVED Silly Milestone! My Daughter Felt Full!
mamatide replied to dandelionmom's topic in Parents, Friends and Loved Ones of Celiacs
About a month into being gluten free my daughter (previously so pale and with so little sub-cutaneous fat that you could see every single vein and artery under her skin) turned pink. She was pink from head to toe - it was wonderful to see colour on her face arms, legs. Even a kid from daycare noticed that she was pink! It was a milestone I won't forget... -
ARCHIVED Its My Party And I Will Eat Cake!
mamatide replied to loco-ladi's topic in Gluten-Free Recipes & Cooking Tips
I can attest that this is a great kind of cake - not sure about its claim to be better than sex but it sure is good! Around here where I live, it's served with Skor Bar bits sprinkled on top - just something to add! mamatide -
ARCHIVED Celiac Book Recommendations?
mamatide replied to lilgreen's topic in Gluten-Free Recipes & Cooking Tips
Incredible Edible Gluten-Free Food for Kids: 150 Family-Tested Recipes (Paperback) by Sheri L. Sanderson Incredible Edible Gluten Free for Kids is the best recipe book for kid-friendly recipes (and family friendly) - we make chicken balls (deep fried chicken nuggets), corn dogs, muffins, buttermilk pancakes on a regular basis out of this book. It doesn... -
ARCHIVED Calling All Bakers! I Need Your Input On The Best Flour Substitution
mamatide replied to mamatide's topic in Gluten-Free Recipes & Cooking Tips
Thank you all for your replies! I guess with such a little bit of flour in the recipe it mightn't be as crucial in terms of flavour and texture than something like, say, a cake. I am interested in the other recipe posted above but have always loved the one I posted because of the intense flavour and texture imparted by the corn and the bacon drippings... -
ARCHIVED Gluten Free Play-doh
mamatide replied to Guhlia's topic in Parents, Friends and Loved Ones of Celiacs

ARCHIVED Calling All Bakers! I Need Your Input On The Best Flour Substitution
mamatide posted a topic in Gluten-Free Recipes & Cooking Tips
I love this corn bread recipe. It is simply delicious and is great with chili. Now I want to convert it to gluten-free - since it has very little flour I imagine it should be doable. What would you suggest as a substitute for the all-purpose flour? Fresh Cornbread yield: 6 servings 5 ears fresh corn (raw) 3 eggs, beaten 3/4 cup milk 1/4 cup... -
ARCHIVED Anyone Know What Besan Flour Is?
mamatide posted a topic in Gluten-Free Recipes & Cooking Tips
I'm always open to new flours... just not sure what the heck this stuff is. It just says "flour" and "Besan" on it. -

ARCHIVED Is Being Angry My Only celiac disease Symptom?
mamatide replied to KerstinH's topic in Coping with Celiac Disease
Hello Kerstin I just wanted to chime in on the anger issue. My daughter is Celiac so we went gluten-free in our home. As a result I realized that I was sensitive to gluten, and my main and most prevalent symptom is anger. Like flick a switch and I am angry and yelling at anything and everything. Like someone mentioned above, that's how I can tell that... -
ARCHIVED I Ate A Sandwich!
mamatide replied to Mistilyn's topic in Gluten-Free Recipes & Cooking Tips
Great bread! We just ate sandwiches on it too - fresh loaf. I'll be anxious to see what the consistency is tomorrow. This makes a nice tall, fragrant and mild-tasting loaf of bread that turns out well when using the directions noted in the first post to this thread. It took a little while longer for mine to rise but only about 10 minutes more, and my... -
ARCHIVED Baking Question
mamatide replied to Gentleheart's topic in Gluten-Free Recipes & Cooking Tips
I would probably try to substitute almond flour (almond meal) for the cocoa and perhaps add a little bit of vanilla extract to the recipe for a different taste. Almond extract is another possibility but some people don't really care for the taste it conveys. Perhaps half a tsp of vanilla and a half a tsp of almond extract. Another substitute for the... -
ARCHIVED Gluten Free Oatmeal Cookies
mamatide replied to 2Boys4Me's topic in Gluten-Free Recipes & Cooking Tips
My extremely sensitive and symptomatic Celiac daughter can consume the Cream Hill Estates oats in the form of a bowl of oatmeal or oatmeal cookies without any difficulty. gluten-free oats provide a much needed form of fibre in a gluten free diet. BTW I use the oatmeal cookie recipe in Annalise Roberts' cookbook (gluten free classics I believe the name... -
ARCHIVED Food Ideas For 8 Month Old
mamatide replied to sjust's topic in Parents, Friends and Loved Ones of Celiacs
Hi Sarah, I went back to look at your signature and it says your DD appears to be allergic to all foods FFT. Sorry I don't know what the FFT means, so please omit from my list of suggestions those which might not suit. Finger foods CARBS - rice twice cereal (sweet tasting, easy to chew) - Glutino Honey Nut or Apple Cinnamon O cereals (not too... -
ARCHIVED Need White Or Yellow Cake Recipe
mamatide replied to Jo Ann's topic in Gluten-Free Recipes & Cooking Tips
Pick up a Glutino White Cake Mix (careful - the box only makes a one 9" layer). It is delicious, moist and the fact that it is gluten free is almost undetectable. Even better is the Glutino Chocolate Cake Mix. They have new packaging now - with a very enticing looking cake on the front of the glossy box. Not cheap but you will NOT be disappointed... -
Hi Jenny, Sorry you're having a tough time with this bread. I too have had trouble with it sinking in the middle and have found that reducing the amount of liquid in it has helped me. That said, when I first started baking gluten free just over a year ago, my initial try was Carol Fenster's bread. Her sandwich bread recipe can be found at: Open...

Sipahhs are candy-filled straws through which you sip milk to make it flavoured - we've tried chocolate, strawberry, caramel, cookies-and-cream and vanilla. Really cool, really good, and gluten-free (says so right on the box). www.sipahh.com Enjoy!

ARCHIVED Mcintosh's Toffee

On paper the ingredients are gluten-free, but I sure felt glutened after eating it.... Keep meaning to call the company but haven't yet. YMMV... mamatide -
ARCHIVED La Messagere Beer
mamatide posted a topic in Gluten-Free Foods, Products, Shopping & Medications
What a great beer - it's been several months since I've tasted a beer and the hot summer weather we've been having made me finally try La Message beer and it's very very good. Even my gluten-eating husband says it's great and he's a bit of an afficionado. So if you're wondering whether the price tag warrants a taste - you've got my recommendation. ... -
ARCHIVED Mcdonald Fries Are Not Gluten Free
mamatide replied to lob6796's topic in Gluten-Free Foods, Products, Shopping & Medications
McDonald's CANADA Food Facts (updated May 2007): Open Original Shared Link says no Wheat. No problems for my extremely sensitive Celiac DD and me. In Canada at least. FWIW -
ARCHIVED I Need This Answered, Majorly Much
mamatide replied to Liz92's topic in Introduce Yourself / Share Stuff
If you're anything like my daughter, she has varying degrees of symptoms of being glutened. A few crumbs/cross contamination leads to 6+hours of wet farts and urgency. Actually eating gluten leads to 3 days of diarrhea, bad mood, and lots of pain. Intolerances are unpredictable - the next exposure could be really violent. Not worth it, as Geoff said... -
ARCHIVED Glutino Frozen Cheese Duo Pizza
mamatide posted a topic in Gluten-Free Foods, Products, Shopping & Medications
We finally tried the Glutino brand pizzas - just a 9" pizza with cheese and sauce, frozen - baked as directed directly on the rack and then under the broiler and they're DELICIOUS. You could probably add veggies or pepperoni if you liked but it's the texture that's exactly like a regular (good quality) frozen pizza. A little pricey but good enough to... -
I just tuned in at the halfway point but they just put some mini brownies into the oven (cupcake kind) and are going to make some sort of cinnamon cake later). Martha keeps going on (and on) about people being allergic to weird things... anyone allergic to salt? anyone allergic to coffee? exactly where does canola come from? The poor girl doing the...

ARCHIVED Is Burnt Gluten Still Harmful?
mamatide replied to chick2ba's topic in Gluten-Free Recipes & Cooking Tips
You can't burn off gluten. It's still there... Same deal for deep fryers - it stays even in boiling oil. I'd take the grill off and give it a soapy soak and a scrub. Or you can buy disposable foil that has holes perforated in it on the grill to keep your food away from the gluten that's already on the grill. Sorry. -
My 8yo DD has a lot of headaches and belly aches. My 6yo is Celiac. I'm gluten intolerant (no intestinal damage but definite mood-related symptoms and gastro stuff when I eat it). Back to my 8yo. She had headaches every day for about a month. I thought maybe her glasses, school, whatever. But then we went gluten-free for a week and the headaches went...

ARCHIVED I Invented A New Sandwich - And You're Going To Thank Me For This One!
mamatide replied to mamatide's topic in Gluten-Free Recipes & Cooking Tips
Hi KarenDiane, First of all, I'm so sorry you're frustrated with the diet. My daughter has been gluten-free for a year now, and it took her 8 or 9 months before she could tolerate lactose (secondary lactose intolerance is common in Celiac patients because the same part of the intestine that processes lactose is the part that is commonly damaged by the...
