  1. Nancy Baker has just released a revised edition of Globally Gluten-Free (2006 edition). She is the wife of a diplomat and has recipes from around the world - french, spanish, greek to name a few. She and her son are Celiacs.   2. I do this too - but we buy the Kraft Dinner boxes and dump out the bad noodles but keep the sauce packet. I don't think they sell the sauce mix separtely in Canada... Does anyone know where to get it online? Until then, I watch for sales and throw out a lot of boxes and noodles! mamatide

I guess I would have brought a pasta salad made with Gluten-Free pasta and never said a peep - and then made sure that I was the first to serve myself at the buffet so that I'd have something safe for me to eat (that I knew was prepared with the utmost care). We tested for lactose intolerance when we were testing for Celiac disease and she is not lactose intolerant in the traditional sense.   13. When we were growing up, we'd eat a lot of minute rice. My step-mother would substitute clamato juice, V8, tomato juice or orange juice for the water (maybe half of the water replaced I'd say).   17. If it's only 3 weeks away I say wait and find out for certain. I had to wait 3 months just for bloodwork... consider yourself lucky it's so close. Gluten free for life is a big commitment and somewhere down the road (if you go gluten-free before biopsy and biopsy shows questionable results as a result) you may start to wonder if you really do have Celiac...
  18. I'll bet if you dropped some raw onion into a deep fryer they'd crisp up pretty quickly. If not you could coat them in cornstarch and try it that way. Good luck - I've never had a green bean casserole but have always wanted to try one! That and sweet potatoes with marshmallows on top - sounds so good! I guess it's not a Canadian tradition.
  19. I guess if I were to factor in the transition costs when our household went gluten free, our costs are/were very high. We tried all of the gluten-free substitutes out there and threw out a lot of them when we didn't like them, we purchased a few cookbooks, new flours, xantham gum etc., so that was expensive. But really we've been able to be gluten free...

  23. I haven't tried it but that makes sense - when I get too much gluten in my system (I'm not diagnosed yet but am undergoing tests & my 5yo DD is Celiac) I get foggy and absolutely CRAVE coffee (and what it does for me). I don't stock Red Bull normally but will try it next time. mamatide

  25. Carol Fenster's Gluten Free 101 books says that to substitute for Xantham Gum you can use 50% more of Guar Gum. If you've been using a 1:1 ratio substitution this could explain it. mamatide
