  1. Well that just sucks. I guess you've got yourself what my Mother used to call a "Fairweather Friend". When the going got tough, she left you out in the cold. I'm sorry you've been treated so poorly by her and I'm sorry she's revealed her true colours when you really could have used a friend. I liked what others suggested in finding a Celiac support...
  2. I realize we can live quite nicely without hot dogs. In fact we eat them only rarely. It's the principle of "may contain traces" that I am asking about. Would you treat something differently if it said "may have come into contact with XXX" or "produced in a facility that also handles XXX"? Where do you draw the line? Does it have to say "gluten free...
  3. I am on a quest to find weiners that are both gluten and soy free (two dd's, two intolerances!). I found President's Choice weiners and the basic ingredients are fine but there is bolded disclaimer at the end that says "may contain traces of wheat and soy" on it. I called the company and they say that the ingredients in the weiners do not contain wheat...
  4. Thanks! I've emailed them. I'll let you know what I find out - if anyone knows or a reseller of Authentic Foods in Canada, please let me know!
  5. I'd like to try a couple of the recipes in Annalise's book but she says you have to use the superfine brown rice flour or it turns out gritty (with regular brown rice flour - and she's right, I tried ). Does anyone know of any Canadian suppliers/resellers? TIA mamatide
  6. I made a birthday cake out of this (keep the cake small) and it was delicious!: I got the recipe from Canadian Living Magazine. Too-Good-To-Be-Gluten-Free Brownies Note: look for adzuki (or azuki) beans (small sweet red beans popular in Japaneze cooking) in health food stores, Asian markets and some supermarkets. If you can't find them (I couldn...
  7. Tell me about it - I was buying corn chips for nachos yesterday and almost picked up the NEW Tostitos whole grain nacho chips. Thank goodness they look different (speckled brown/beige rather than yellow). I'm miffed. Keeps us on our toes. Or toilets I guess
  8. We're gluten free but have friends who are gluten-free/CF and I made up a buttercream type of frosting with: CF margarine (if you're in Canada, President's Choice Celeb margarine is CF) coconut milk icing sugar (gluten-free) coconut extract Not sure of proportions, sorry if you really need them, but I creamed the margarine with a hand-mixer...
  9. Well, actually, I prefer to bring in my DD's meals at preschool - that way I know for sure that it's been prepared carefully (read: no cross-contamination) and all ingredients were inspected carefully. It's no picnic for them either. They had to be vigilant that the other kids weren't reaching in to Kate's lunch all the time (she was getting glutened by...
  10. I just came across another recipe at Living Without dot com: Open Original Shared Link Not sure if it's any good but thought I'd post it in case.
  11. Well, that's interesting. DD has been complaining a lot about sore legs - maybe she also has joint pain. So hard when they're only 5 years old...
  12. I brought DD in to the GP last week and while he is clearly thrilled to see the improvement in her skin tone and sub-cutaneous fat tissue (we went ahead with a gluten-free diet and are on week 9 with great improvement but no diagnosis), he said that he wanted to re-run blood work because he was concerned about her sedimentation rate in her pre-diet (pre-diagnosis...
  13. Hi all, I was making the Submarine Sandwich bread which I said was excellent - has good " bread " taste and texture, but when I'm making 2 loaves at once, am I supposed to double the yeast? I have the Fenster Gluten Free 101 book and when you double the bread recipe in that one you don't double the yeast (and some other ingredients are increased but not...
  14. This Submarine Bread is FANTASTIC!!! I made it in a baguette pan (longer, thinner) and it takes less time to bake (32 min approx). Our family ate the entire loaf made into bruchetta. This bread rivals any "regular" bread I've ever eaten and I'm so so so happy that I have this recipe! Thank you! Mamatide
  15. You have GOT to try this one - no funky flours at all! And they're delicious. Guaranteed. I got the recipe from Canadian Living Magazine. Too-Good-To-Be-Gluten-Free Brownies Note: look for adzuki (or azuki) beans (small sweet red beans popular in Japaneze cooking) in health food stores, Asian markets and some supermarkets. If you can't find them...
  16. Just wondering. I couldn't find anything online either way so thought I'd ask. Oh, and how about root beer?
  17. Well, less than 1 hour after consuming a cheeseburger, the burping has returned... I think I know my fate! Thanks for the reply.
  18. While I didn't take my temperature, I did have the chills all day yesterday, just couldn't get warm. Today I'm feeling great. Don't get me wrong, I'm still going to pursue the Celiac diagnosis because I think I do have it - I was just so puzzled that I was having such a crazy-bad reaction all of a sudden like that. I'm back on gluten today so we shall...
  19. Oops! I think I had the flu. Apparently it's going around. Colour me embarrassed!
  20. My DD, I'm fairly certain, has Celiac Disease. She had all of the classic symptoms and some "indicative" blood test numbers and was referred to a Ped Gastroenterologist but we still have no confirmation of an appt. So we went ahead and put her on gluten-free food as a trial (with a diary of her symptoms). She's improved noticeably and almost all of the...
  21. I could have written this post! Not that it's going to make you feel much better knowing that. I have an appt with my GP on Wednesday and I just *know* that it's going to take forever to get a biopsy scheduled = My dd is on a gluten-free diet because I couldn't wait for the delay in getting in to see a Ped.Gastro... and because I've been eating very little...
  22. You need to eat some meat to carry you longer. If you're not vegetarian. I'm hypoglycemic and eating a little something sweet just plain screws me up all morning - I get the shakes from the carb let-down (toast/jam etc.). If not you should eat toast laced with peanut butter or peabutter. And I'd be eating up until the moment I walked into class. Literally...
  23. Some substitutions from Carol Fenster's Gluten Free 101: Instead of almond meal use same amount of finely ground pecans, walnuts, cashews or pumpkin seeds (use a small coffee grinder) Instead of rice flour use same amount of sorghum, garbanzo/fava bean flour Instead of butter use same amount of margarine (not diet) or 1/4 less oil Instead of cornstarch...
  24. OK - I'm a little dense and I see I'm not alone in being unsure when making bread! In this recipe you DON'T have to mix the yeast with the water to let it foam up first? I ask because this is the first time I've see a recipe in this format. Also, is this the recipe you use to make hamburger buns? (I'm a little confused in this thread with the submarine...
  25. Well, my DD (just turned 5) is Celiac and the more I read about it (the first I ever even heard of Celiac Disease was February/March of this year), the more I think I have it (and have most of my life). The more my Mother reads about it, the more SHE think she has it (and had it all her life). And the more she reads about it the more she thinks HER mother...
