  1. Hi and welcome I'm also a canadian gal so your name made me read your post. I'm by no means a wise source of information on Celiac disease, but one thing I do know is that if you are going to be having a small bowel biopsy you should REMAIN on a gluten diet. Don't stop eating it until after you've had the small bowel examination. Now a few days or a...
  2. My DD (5yo) has Celiac Disease (we're 99% sure) and has been having a sore belly without the associated glutening-type of symptoms. We're thinking maybe we should be cutting down on the dairy/milk for a while (she's been 3.5 mos gluten-free). My question is: is giving her Lacteez milk fine, or should I even be avoiding that? She eats cheese, yogurt...
  3. I think I'd probably replace the oats with either coconut (shredded) or " enjoy life" granola cereal. Sounds pretty good and nutritious for long trips. Might try them out too! Thank you.
  4. Is this it? (scroll down to the quinoa option)??? I'd give it a try myself if this were the one. Open Original Shared Link
  5. Back in Feb/March of this year, I brought then-4yo DD to our GP and told him that I needed to know what was causing her stomach pain and perpetually-bloated belly. She just didn't look right to me and the toddler tummy on an almost-five-year-old was beginning to worry me. He mentioned Celiac disease as a possibility and said we'd be running some blood...
  6. Like I was saying to a friend that we couldn't take DD to McDonald's because of her celiac disease. She said, "yeah... I guess you have to stick to Subway!" And she's a dentist... Guess people never really understand unless it directly affects them or someone they are responsible for. Chin up frenchie. At least we all have each other.
  7. This recipe sounds great. Do you use traditional or fast-acting yeast? I note no rising time nor warm liquids so was wondering. Thanks in advance... mamatide
  8. I have finally reached near perfection with Carol Fenster's basic bread. Leah - you'd love it. She offers several flour blends to choose from - I used the sorghum with the almond option instead of bean flour (I can give more details on that if you need but it's all in the book Gluten Free 101). I had posted a while back about gluten-free bread falling...
  9. The very first pizza crust that I cooked Gluten Free was Carol Fenster's. I bought the book Gluten Free 101 but her entire recipe and step by step picture-instructions are on her website at Open Original Shared Link. I have to say that I like this pizza crust every bit as much (and possibly more) than regular. We all love it and eat pizza every week...
  10. Maybe she's just (finally) getting some good sleep - good pain-free sleep without being wakened by cramps and BMs? My 5yo DD is sleeping so well - still getting 12 hours a night and is so so happy and energetic in the daytime. Quite a change from her gluten-eating (and writhing in pain) days only three months ago. I'm sure it'll level off in a...

    ARCHIVED Milk?

Can you use lacteez (or lactaid) milk? I thought those were milk with lactose removed. We use this for our celiac DD and it doesn't affect her stomach like regular milk does. Good luck
  12. Just so you know, I still make Kraft Dinner for us - just dump out the gluten noodles (it's about 1 and a half cups of raw noodles - I measured) and boil some corn or rice macaroni instead. Do the rest the same as always. The kids didn't even notice the switch and we can all still enjoy mac and cheese. I called Kraft to verify that the cheese packet...
  13. Well, as of today, we have only one Celiac in our family and that is our 5yo daughter. We've been about 90% gluten-free since she went gluten-free which essentially means the rest of the family gets hamburger and hot dog buns but she doesn't. The rest of our choices are naturally gluten free (barbecue season is great for that - grilled chicken, etc.) ...
  14. I suppose that could be the case (rising too much) but I'm not so sure. I let it rise to the top of the pan per the directions and it took 45 minutes (supposed to take 45-60+ and the ambient temperature was at the bottom of the stated range of 75-80F) so I tend to think the rising was ok. Now that I cut into this bread, it's a slightbit underdone at...
  15. I was making Carol Fenster's bread last night and cooked it the entire time, exactly according to directions and notice that when the bread's still in the oven, it's nice and big but when I take it out to cool it sags in the middle. Is this normal or am I undercooking? Should I expect a certain amount of droop upon cooling? I've noticed this with...
  16. Well I'd say that's definitely your problem - use the traditional active dry yeast instead. You'll still have to watch this bread though because I've had it collapse on me before because I left it too long - heating the oven while it's rising is important too because once I didn't preheat the oven in time and while waiting for it to heat the bread was overflowing...
  17. Hmmm - I'm probably not the best person to answer you. I am good in the kitchen but am a novice at gluten-free and breads in particular. That said, the only thing that made this bread a disaster was when I didn't have the right temperature for rising. The oven is too hot. Room temperature is about right. Sitting on top of the clothes dryer (while it...
  18. You can check out some of her recipes and information on her website. I actually printed off a couple and tried them before buying the cookbook she wrote. I have yet to be disappointed by her recipes to be quite honest. Open Original Shared Link Good Luck all, mamatide (ps the coconut cake isn't there but you should really try the submarine sandwich...
  19. Chapman's in a box is marked Gluten Free as well as Peanut/Nut free - all important in our family. The taste is great and lots of variety.
  20. Have you triedKinnikinnick's brown rice flour? Is it superfine? Authentic foods won't ship to Canada but Kinnikinnik will. Just wondering.
  21. Great! Thanks - I've seen these in the store - I'll give them a try. mamatide
  22. My DD (now on 13th week gluten-free) seemed to get worse during the first week trial. More pain in her belly, lots and lots of very loose pale poop, headaches and rolling-around-in-bed cramps. At about 12-13 days she improved almost overnite. Felt better, no pain, normal poop. So give it time! mamatide
  23. Unfortunately it's the Maple Leaf Top Dogs that bother my other (soy sensitive) dd. They drive her to the point of needing benadryl to stop the itchiness in her mouth/throat so that can't be good. So that's why we're trying to find something that we can all eat (no gluten, no soy). The President's Choice has no wheat (nor gluten) listed as an ingredient...
  24. And beware these new Tostitos: Open Original Shared Link that contain Wheat/Oats. Now why in the world would they do that? Here are the nutritional facts: Ingredients: Corn, Vegetable Oil (contains one or more of the following: corn oil, sunflower oil, and/or soybean oil), corn starch, sugar, whole oat flour, whole buckwheat flour...
