  8. I disagree about the cut and dried part, but my point is that you didn't feel bad with that lifestyle change, why this one? It's no different. Both were undertaken for your health's sake.
  9. Boiling the bones releases collagen which adds some flavor and thickens the broth. Using just the meat is fine. If you brown it first in a skillet before boiling you'll get a richer flavor.

  14. Gluten is much less prevalent in Europe. Choose food without sauces and you should be fine. Here, wheat is used as a cheap filler. In Europe you pay for everything, so no point in adding hidden wheat. If it looks gluten-free, it probably is (excluding packaged things, which I don't eat anywhere).
  15. They transfer your checked bags. It doesn't matter how long the layover is. I've traveled all over Europe and have never had a problem finding food. Prosciutto wrapped around cheese is a fabulous dinner.
