  1. Welcome Jen, to the forums! -Julie
  2. Certainly Not!! My failed attempt at shell pasta is does not apply to the overall gluten-free population! Try and try again. If it fails the first time, don't give up! As soon as my tastebuds recover, I'm jumping right back in there to try again! Good luck to you and your son! No doubt you'll do just fine.
  3. I think it's doable. I'm not sure if you want the (delicious) chocalate icing on top. I would have no idea how to do that. But I just made Gluten Free Pantry's vanilla cake mix and it was SO good. I don't know that I would add the filling when the cupcakes are hot...perhaps out of the oven awhile and still warm. And then add your filling (you wouldn...
  4. Welcome everyone Many of you have read my thread in "Coping With Celiac" that states that I can't find any of my cookbooks since I have moved. I need a recipe please...I simply can't stand being without Carol Fenster's cookbook any longer. Would someone mind posting her Pizza Crust recipe (the yeast free version) out of her Special Diet Solutions...
  5. What a good idea about Pamela's bread! Hadn't thought about it...great idea though. I use Carol Fenster's recipe (and I add like an 1/8 of a cup extra bananas until the moisture content feels right). Normally, I would post the recipe for you, but I'm unpacking at our new home and still looking for certain gluten-free items. Everyone has...
  6. Thanks for the input everyone! I just wasn't prepared for the way the slime slipped through the colander. Or the way that the shell shaped pasta stuck in the holes of the colander. Nor did I realize that I would have to beat the mush out of the colander by repeatedly hitting the handle on the counter. And then PLOP! It was one big disgusting...
  7. Colleen, Thank you for the extra tips. We also have an inter-library network. By gosh, by the end of this week, I'm having meals again! -Julie
  8. Oh, Locolady I feel your pain! I also have other small objects that I haven't found, but I know they are packed in the endless boxes labled "living room decor." My cookbook box was very clearly labled (on multiple sides) GLUTEN FREE COOKBOOKS...I thought that would be obvious enough. (silly me)! Hey, I still haven't found my second...
  9. Well Collette, Respira, and Bobohead, I, too, am a sniffer and memory-eater. If I smell something long enough, I often feel full. The same thing happens if I'm cooking a big dinner. Once I've been in the kitchen cooking for awhile, sometimes I no longer want what I made. Just standing over the smell of the food has changed my appetite. Bizzare...
  10. Thank you Colleen! Actually, I hadn't even considered the library, which seems like such a basic idea, but it never occured to me. I never thought they would have gluten-free cookbooks, but yours does? I'll definitely see if I can get the hubby to ride with me into town one day this week! Thanks again! -Julie
  11. Hi there Jodi, Gosh knows we have all been tempted. It is not easy to stick to being gluten-free, especially in the beginning. But over time, you learn your own coping techniques and the lifestyle isn't near as difficult as it is in the beginning. I can honestly say that this becomes a way of life and you seldom notice that your diet is modified....
  12. Janet, Yeah...I think I'd have had to give it up with that four year old skirt. But at least you found it. Did you know that you could have made a pillow out of it? (sorry...been watching the Home, Sewing, and Painting Channel since I can't cook) God knows, I need to get back in the kitchen. Collette, No, I haven't found them. I...
  13. Seriously, This is the most ridiculous thread I've ever written. Here goes: I CAN'T FIND MY COOKBOOKS. AGGGGGGGHHHHH! We moved about three months ago, and we're still not done unpacking. My cookbooks were in a box labled "GLUTEN FREE COOKBOOKS." I have searched the two rooms we are still unpacking with no luck. I know they are here somewhere...
  14. You made a statement that makes me think you'll hang through this: "Im the sort of person who will stick to something when really put my mind to it and because i want to get rid of all my symptoms i will definately stick to it." You will get the hang of being gluten-free, and it won't happen overnight. Don't be too hard on yourself. We all slip...
  15. Wow, at the responses! You guys are great, and as always, it is a comfort to know that I'm not the only one who has made something absolutely disgusting (despite the seemingly easy idea of boiling noodles). However, I think I've lost my appetite for green beans in the near future. Feels kind of like I went to a pasta therapy support group. ...

Hi there! I don't think this has been listed, but I also like gluten-free french toast...covers up the taste of the bread too! I eat cereal for breakfast. Keep some fruit/veggies around (and chocolate) to snack on. Lunch I usually eat a pizza or tortilla wrap of some kind, etc. Dinner, I eat whatever we make gluten-free. Spaghetti...
  17. Yesterday, I made a potluck lunch...meaning I put whatever gluten-free ingredients I had in it. (Obviously, I need to go to the store). I boiled some rice shell pasta (yep, stove-top Tiffany...I learned my lesson with the oatmeal) Added in some cheese and green beans (once the pasta was drained)...and whala!!! I had slime with green beans in...
  18. Ener-G has GFDF chocolate chips. I used them all the time and really couldn't tell the difference. There are many ways to substitute ingredients. This is a broad reply, but I've found answers to the "substitution" question in most gluten-free cookbooks. I'm sure there are multiple websites as well. Good luck as you practice and learn what works...
  19. Hi there! My response is almost always the same to this question (not that I'm a great chef or anything). -Start small. Try mini loaves of bread, muffins, etc. They sell a mini loaf pan for bread in many stores. After you have a few successes, your bread self-esteem will improve. -Add some clear gelatin (sold near Jello). (I add two teaspoons...
  20. Violet, Sorry I can't answer your question, but where do you buy your rice papers? Does anyone happen to know a gluten-free replica of the sauce that you dip them in? I only lived "in the city" for about two years while I finished college, but I fell in love with certain ethnic foods while there. Normally, I live in a rural area, and our one...
  21. Collette, Would I have to go to Whole Foods to get lemon grass? I've heard of it (and no doubt eaten it in some of the dishes I've tried), but I have never tried to buy it. Ideas? Think a local grocery would sell it? Thanks -Julie
  22. Wow! You all know your stuff! I've never tried to make spring rolls at home, but I LOVE them. I'm a border-line vegetarian. I mainly eat veggie dishes. When I used to get my cashew nut dish, I actually ordered cashew nut shrimp...most people haven't heard of it. It's nice to see others out there who enjoy Thai as much as I do. I also like...
  23. Wow, I really appreciate all the suggestions. I see what you all mean about the different types of oats...I had no idea. that's why I asked... I knew that I'd get some helpful answers. Thanks everyone! -Julie
  24. I completely agree Tiffany; My first thought...and I continue to think...undercooked. I will try stove top. I have microwaved them for as short as 2 minutes (which BRM recommends) in increments up to as long as 10 minutes with very poor results. Maybe stove top will make a difference...I just despise being wasteful. -Julie (If stovetop doesn't work...
  25. Sometimes the simplist things are the best... Icing Ingredients: 1 pk. softened cream cheese 1 container softened Cool Whip Directions: Beat together on low/medium until well blended. (Both ingredients must be soft enough to blend easily for icing consistency). Whaa laa...icing! *You can top cake or cupcakes with coconut, chocolate...
