  1. So anyway, I don't actually need to use your applesauce, but I do have questions. I know that I can substitute applesauce to add moisture...but how much? What does it replace? Sugar, milk, butter? Is there a ratio/percentage formula that I should use? I don't know for sure what I'm baking, but I'm going to a cookout this weekend and thought...
  2. Don't panic too much... I kept most of my pots and pans...only getting rid of the teflon/nonstick kind and other pans with "burnt stuff" on them. (Nonstick cookware, if scratched, is notorious for adding unwanted "bits" of things to your food). Most other kitchen items, I bleached and kept. Just look for obvious cracks/scratches that might hold...
  3. Thank you Rachel, Patti, Sandi, and Worriedtodeath (sorry I'm not sure of your name). Patti, I didn't know citrus was a common intolerance. As soon as I realized it was OJ giving Eli the tummy trouble in the morning, I stopped giving it to him. You made a good point about the acids too. Rachel, he does seem to be fine with apple juice. I am...
  4. You're kidding me! So if a child has a peanut allergy...would they treat it the same? Probably not. All you have to do is say "nut allergy" and people go crazy trying to accommodate. Granted Celiac is not an "allergy," but the idea of a special diet being needed to maintain health is the same. Perhaps your doctor could write a note with a statement...
  5. I hadn't even considered taking him off gluten yet. The medical community is so critical about "over mothering" or being a hypochondriac if you try to take action yourself. Some of you do a lot of research, maybe you could help me. Orange juice goes through Eli within five minutes...the results are dramatic. Yet he can eat peaches and have just...
  6. Thank you for the link! -Julie
  7. Hi Jessica and welcome! 1) Briefly, Gluten free means avoiding wheat, barley, rye, and (for most) oats. It is a learning process due to the sheer number of ingredients in any food (prepackaged or not). I am not going into more detail b/c I don't want to overwhelm you. I'll be glad to post more details if you would like. 2) Once you learn about...
  8. Just wondering if anyone besides me has tried the new gluten-free Chex cereal. There may be a post about it already...I couldn't find one. I haven't had a problem eating it...it's a nice, inexpensive change from eating the same old thing. The company discloses what they use in place of barley. Thoughts? Just Curious. -Julie
  9. O.k. I know I have a lot of incredibly useful ideas to add to this site And I love reading the very useful and enlightening thoughts posted by others. Too bad I can't do that easily anymore. My computer screen has shrunk or something. I don't know what the heck happened. Now, when I log on, I have to scroll back and forth across...
  10. Hey everyone, My two year old, Eli, is going back to the Gastro. He went as a small baby (about 10 months) and tested negative for celiac, but the dr. told me it is often inaccurate in babies (which I knew) and to bring him back at a minimum of every two years for testing. At this point, I just want to know what is wrong! He is so very thin. And...
  11. Oh, that sounds good! My mother makes almost the same thing...and sprinkles pecans or walnuts across the top....yummmy!
  12. Hey there- You guys are cracking me up -LOL Oh man! I don't get to wear my hardhat? Bummer. Thank you SO much for all the tips, and I'm actually glad to know I'm not the only one scared of a mixer. (Although I was the first one to admit it) I may be PM'ing some of you with more questions if I have trouble. Happy baking...
  13. Good luck to you! I think it's kind of funny...all of the above suggestions describe last week's dinners at my house. Crockpot chicken Taco salad Tuna salad and, I'm embarrassed to say, we ate cereal one night. It was SO hot, and the hubby had worked in the heat all day. So he just wanted something quick and cool to eat. I gotta confess...
  14. Rebecca, Thanks so much for the info. and letting me know that you were a bit intimidated too. That machine just looks huge and complicated. I've been taking the manual to bed with me and reading it at night. Now that is a sad statement, some people have sex at night, not me...I'm reading a mixer manual. Anyway, would you care if I PM'd you...
  15. Ahhh, the frankness of my gluten free friends (nothing like a good kick-in-the-butt Sandi) I've thought to myself numerous times...just take the plunge...use it. When I told the dh I wanted a nice mixer, I was thinking more along the lines of a basic Kitchenaid mixer. A very nice mixer that doesn't involve a Masters in Engineering to operate....
  16. Hey everyone! Help! I was given this fancy new mixer for mother's day, and I've yet to use it. I asked for a nice new mixer and the hubby purchased a KitchenAid Pro. It is their largest mixer right under the commercial grade. I must admit, it is beautiful, but it scares the heck out of me! The bowl lifts up to mix, there are multiple beaters...
  17. Thanks everyone I sure have missed cooking...even with the flops (dare I remind any of you of my flying pretzel incident?). It was like Christmas w/o the expense! ...to replace the cookbooks would have cost over $100 (and one of them is out of print). I am the one who packed the box I don't know what I was thinking! Of course, I may have...
  18. Hey everyone, The saga of the missing cookbooks is finally over! I haven't posted much in the last few months because, well, I didn't have much to talk about since I wasn't cooking. After the move, it didn't matter what boxes I unpacked, I COULD NOT find ANY of my gluten-free cookbooks. Today, in my toddler's room, I was unpacking...
  19. Hi there! I'm a southern gal...born and raised in Georgia. I really miss my mom and grandma's biscuits...yummmm! Always a favorite: especially when eaten with fried fatback, or tomato's and rice, or gravy... When I started making them gluten-free, I had to alter a few things (and I am still tweeking my biscuit recipe everytime I make them...
  20. Hey everyone, I need suggestions. I've started buying the boxed Thai food and powdered mixes, but I need help adding in variety to the stir fry. I've used broccoli, carrots, bean sprouts, cashews, peanuts, celery, onion, bell pepper, eggs, and mushrooms in different combinations. Any other suggestions? Also, I like my Thai food to have that...
  21. I have no clue how to make gluten-free Jerky. But, I wanted to drop by this thread to say hi and welcome to the forums! And comment on what a cool screen name I think you have. Seems like we both came this site the same way...hungry! Happy Baking. -Julie
  22. I'm afraid I can't be much help, but others will reply with good ideas I'm sure. I know I cannot make homemade pasta...good grief, I'm doing good to boil the prepackaged kind correctly. Speaking of which, I've always eaten the rice pasta up until recently....never really loved it. I wanted to try the corn pasta, but I was hesitant because I...
  23. My 2 Cents worth... I'm not a big fan of Syesha, Kristy, or the guy with the long hair (I can never remember that guy's name to save me). I like Carly's voice, but honestly, her mannerisms and expressions make her seem like she would be a b*tch to know. Don't hate me people...just my 2 cents. On voice-talent alone, I would probably buy music...
  24. How beautiful! What a little blessing. I'm sitting here smiling just looking at him...there is something about a baby that just makes my heart happy. Blessings to your whole family. -Julie
