    Celiac.com 09/29/2016 - If you want a truly refreshing, satisfying salad, then this zesty combination of melon, avocado and lime is just for you.

    Ingredients:

    • Red and/or yellow seedless watermelon, cubed
    • Cantaloupe, cubed
    • Honeydew, cubed
    • 2 large avocados, cubed
    • 4 limes, juice

    Directions:
    Cube fresh melon and ripe avocado.
    Arrange on a plate or in a bowl.

    Top with squeezed lime.

    Serve with toothpicks or cocktail forks.

    In this recipe for potato leek soup, butter, chicken broth, leeks, cream and potatoes come together to yield a rich, luscious soup that goes great with your favorite toasted gluten-free bread.
    Ingredients:
    1 cup butter
    2 leeks, sliced
    2 bay leaves
    2 tablespoons chives, chopped
    4 sprigs fresh thyme
    10 black peppercorns
    1 quart gluten-free chicken broth
    1 cup dry white wine
    4 cups Yukon Gold potatoes, peeled and diced
    1½ cups heavy cream
    ½ tablespoon white pepper
    salt and pepper to taste

    Ingredients:
    ¼ cup gluten-free flour blend 2 cups chopped leeks ½ cup half and half 4 cups of clam juice 1 Tablespoon thyme 2 bay leaves 1 can of whole baby clams 2 cubed potatoes 2 slices bacon salt & pepper ½ cup diced celery tablespoon butter Directions:
    Dice the bacon, cube the potatoes, and chop the leeks and celery.

    Celiac.com 04/13/2016 - Fresh leek soup is a rich, creamy, velvety wonder to behold, and a delight to the taste buds. This recipe adds a dash of garlic to deliver a symphony of rich flavorful soup.
    Ingredients:
    2 whole leeks 2 whole garlic bulbs 1 quart chicken stock 4 medium Yukon gold potatoes 1 cup cream, plus more to garnish 1 tablespoon butter Olive oil Salt Directions:
    Heat oven to 400°F.
    Slice away the top of the bulbs of garlic so that the cloves inside are exposed.
    Drizzle with olive oil, wrap in aluminum foil and place in the oven for 30 minutes.
    Remove, allow to cool and, with a firm hold of the base of the bulb, squeeze the soft, caramelized garlic into a small bowl.
