    Authentic Foods Gluten-Free

Reviewed and edited by a celiac disease expert.
    Authentic Foods Gluten-Free -

My name is Steven Rice and I am the President and Founder of Authentic Foods. I started Authentic Foods in 1993 when I heard about a group of people who had Celiac Disease and could not eat wheat or gluten. With a great deal of experience in the food industry and a background in biochemistry, I realized that I could develop baked goods that could help Celiacs get the proper nutrition in their diets with gluten-free baked goods that taste as close to, if not better than the same baked good with gluten.

Since starting the company in 1993, my daughter has joined me in expanding Authentic Foods. We work hard to make sure all of the Authentic Foods baking mixes and flours are not just like any gluten free baking mix or flour, but that they’re better. Our goal is to make baking mixes that will keep you from wishing you could eat gluten again. We want you to be able to enjoy your baked goods like anyone else who is not on a gluten-free diet.

Lifeway introduces real gluten-free kefir! Many celiacs have digestion problems that have been proven  to be alleviated with the aid of probiotic cultures. Did you know that Lifeway Kefir gives you 10 strains of live and active  probiotic cultures per cup?  I tried the strawberry flavor and it tasted like a strawberry milk-shake--thick, creamy and sweet.  You can really taste the difference with Lifeway Kefir, it didn't have the chalky after-taste that other kefirs can have. This is a healthy snack that even kids will love! Not only is Lifeway kefir delicious, but it can  help those with lactose intolerance's while also providing probiotics, calcium and vitamin D; the perfect supplement combination for celiacs.  And if that weren't enough, Lifeway also adds 3 grams of inulin per kefir servi...

Katz Gluten Free takes food sensitivities seriously. That's why allKatz products are certified gluten-free, are made in a dedicatedgluten, dairy and nut-free facility, and are also Kosher Parve certified. Katz has so many wonderful gluten-free products to choose from, it's hard to know where to begin. I started by sampling their award winning large gluten-free Challah Kaiser Rolls, and now I can see why Katz took the 2008 “Best Baked Goods Award” for their excellent gluten-free Challah Kaiser Rolls. Katz Challah Kaiser Rolls are as good as, or better, than any traditional rolls on the market, which makes them the perfect bread for any occasion. Katz gluten-free Challah Kaiser Rolls are so good that they can be eaten plain and don't need to be toasted.  The rolls are fluffy, slightly swee...

Celiac.com 09/15/2010 - I recently received a sample of Heinz BiAglut PastaMia Gluten-free Fusilli and I was curious as to how this Italian gluten-free pasta would compare to others that I have tried. I cooked them exactly as instructed on the bag and they came out beautifully.  The gluten free noodles held their shape and had a nice, firm "al dente" texture.
The taste reminds me of the pasta I grew up with prior to being gluten free, and it would be a great canvas for any sauce.  Heinz BiAglut's gluten-free pasta is going to be my family's new staple.

Celiac.com 10/21/2010 - Focaccia is a flat baked Italian bread that most of us on a gluten-free diet would never get the opportunity to enjoy...until now!
I recently came across a gluten-free focaccia bread by GlutenOut that is made in Italy--and their products can be shipped frozen right to your door.  I was pleasantly surprised with how well my order was packed, but honestly I did not have high expectations due to my past experience with gluten-free bread.
I put the gluten-free focaccia in the oven for about 7 minutes and at first glance I was very impressed with the presentation of the finished product.  I was trying to decide if I should slice the bread horizontally to make a pizza or perhaps to use it as a sandwich bread, but as soon as I tasted it there was no tur...
