    Chocolate Pudding Mix (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    2 ½ cups nonfat dry milk
    5 cups sugar
    3 cups cornstarch
    1 teaspoon salt
    2 ½ cups unsweetened cocoa

    Mix and store in airtight container. To prepare, add 2/3 cup mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then serve.

    Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014.     This recipe comes to us from Ann Sokolowski.
    Grease a glass 9 x 13 Pyrex dish with solid shortening.
    Preheat oven to 300F.
    ½ cup long grain white rice
    ½ cup sugar
    1 can evaporated milk, diluted to make one qt [must use evaporated milk]
    1 cup raisins
    1 teaspoon vanilla extract
    ¼ teaspoon salt
    Cinnamon to taste
    Place all ingredients except cinnamon in pan. Generously sprinkle top with cinnamon . At least once during the baking, stir cinnamon crust into the rice and sprinkle top again with cinnamon. Let bake until rice is tender, or approximately 1 ½ hours. Let cool and serve either warm or cold.

    After making too many gluten-free angel food cakes and being leftwith more egg yolks than I knew what to do with, I decided to make thislemon pudding.
    Lemon Pudding Parfait
    12 egg yolks
    ¼ cup agave nectar
    ¼ cup lemon juice
    pinch celtic sea salt
    ½ cup heavy cream

    Place egg yolks, agave and salt in a medium sauce pan While heating over very low flame, whip with a hand mixer for 6-8 minutes, then whip in lemon juice Chill for a half an hour If pudding separates, whip with hand mixer for 1-2 minutes, until fluffy again Whip cream in a separate bowl Serve in small glasses, alternating layers of pudding and whipped cream Garnish with berries Serves 8

    Having a restricted diet can be expensive. I spent $6.00 on a vegan, gluten-free, sugar-free ice cream bar because I was so happy to actually find ice-cream I could eat. Ice-cream  doesn't need to be that expensive, after all it's not expensive to make. This is a recipe that is going to be my summertime treat staple. Finally, a dairy-free, sugar-free, soy-free and gluten-free fudgsicle that is delicious, extremely easy to make, and because of the avocado it's also healthy! You will need 12 Popsicle molds for this recipe.
