    Coffee Cake (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This recipe comes to us from Betty Doubravsky. My wife entered this in the Dolores County Fair here in Colorado and won three ribbons . - James

    ¼ cup salad oil ( I use olive oil )
    1 beaten egg
    ½ cup milk
    1 ½ cup gluten-free flour* plus 1 ½ teaspoon xanthan gum
    ¾ cup sugar
    2 teaspoon baking powder
    dash of salt

    Combine salad oil, egg, and milk. Sift dry ingredients and add, mixing will. Pour into greased 9x9x2 inch pan. Sprinkle with Spicy Topping* and bake at 375 for about 25 minutes.

    * Spicy Topping:

    Combine ½ cup gluten-free brown sugar, 2 tablespoons gluten-free flour, 2 teaspoon ground gluten-free cinnamon , 2 tablespoon melted butter, ¾ cup broken nuts (your choice ). This is best fresh, however if any of it does make it through the first day, it never makes it through the second.

    Very tasty and fit the craving of a 38-week pregnant woman and her celiac hubby. I woke up Sunday morning really really really wanting brown sugar and cinnamon baked goods...thank you so much for sharing! Now I just need to master the whole "baking at altitude" concept - previously I just did what Duncan Hines told me...now I have to...think for myself! Aack!

    Wow! This is an excellent coffee cake. My husband usually runs when I make gluten-free baked goods, but even he loved this coffee cake! It was fluffy and moist and absolutely yummy!! I will definitely make this again and again.

    Wow! This is an excellent coffee cake. My husband usually runs when I make gluten-free baked goods, but even he loved this coffee cake! It was fluffy and moist and absolutely yummy!! I will definitely make this again and again.

    I can't wait to try it. I suddenly craved coffee cake, Don't know why (definitely not pregnant!).

    But, keep working on the baked goods--my daughter and I make gluten free breads, cakes and cookies that "normals" gobble up! Vary the flours in your mixes and be sure to use enough flavor--spice, real butter, etc

    As far as I can remember I've never seen coffee in any coffee cake recipe - usually it's just a breakfast cake that goes well with a hot cup of Joe.

    My teenage girls are eating this! I substituted the sugar for xylitol, lo-han and a bit of stevia. Lovin', Lovin' Lovin' it!

    At the same time that I looked up your recipe, I was looking in a old better homes and gardens cook book and seen the exact same proportions.expect it wasn't gluten free. I didn't see your Gluten-Free flour recipe, so I used rice, tapioca and potato flours, also I used cold processed coffee for most of the liquid. it came out very good. thanks for showing its not that hard to have healthy snacks.

    Coffee Cake doesn't CONTAIN coffee, and it's not supposed to taste like coffee. It's a not-so-sweet cake to be enjoyed WITH coffee.

    Delicious! Thank you for this alternative. My daughter has never liked traditional birthday cake and has always requested coffee cake on her birthday. Now that she's gluten-free, I have a way to make her beloved coffee cake!

    Perhaps you should switch to decaf?

    Coffee cake does not have coffee in it - it is something you have with coffee!

    2 16-oz cans pear halves (in juice or light syrup), drained

    This recipe was created by Leslie Hammond.
    You can use this in place of shortcakes or pound cake. Make in a loaf pan for a pound cake, or two 8 inch cake pans. For best results line the pans with tin foil.
    1 ½ cups butter
    8 oz. cream cheese
    2 ½ cups sugar
    6 eggs
    2 teaspoon vanilla powder (Cooks)
    3 cups rice flour
    1 teaspoon salt
    In a mixer, with the paddle attachment beat the butter and cream cheese on low speed until smooth. Add the sugar and whip for 4 minutes. Add the eggs, vanilla, salt, and the flour. Beat on low until smooth. Pour into pan and bake 25-30 minutes at 350F.

    1 cup butter
    1 cup water
    2 cups gluten-free flour mix
    2 cups sugar
    2 eggs beaten
    ½ cup gluten-free sour cream
    1 teaspoon gluten-free almond extract
    1 teaspoon salt
    1 teaspoon baking soda
    ¼ teaspoon baking powder
    2 teaspoons xanthan gum
    Frosting:
    ½ cup butter
    ¼ cup milk
    4 ½ cups powered sugar
    ½ teaspoon almond extract
    Directions:
    In a large saucepan, bring butter and water to a boil. Remove from heat; whisk in remaining cake ingredients until smooth. Pour into greased 15 x 10 x 1 inch baking pan (jelly roll pan).
    Bake at 375F for 20-22 minutes or until cake is golden brown and tests done. Cool for 20 minutes.

    25% Asian white rice flour;
    25% Asian sweet rice flour;
    25% tapioca starch; and
    25% potato starch.
